This is an elegant and quick romantic dinner for two. Wonderful served with steamed asparagus and baby red potatoes.

- Sprinkle freshly ground pepper over both sides of each steak, and sprinkle with salt to taste.
- Heat a nonstick skillet over medium-high heat. Place steaks in hot pan, and cook for 1 minute on each side, or until browned. Reduce heat to medium-low, and add balsamic vinegar and red wine. Cover, and cook for 4 minutes on each side, basting with sauce when you turn the meat over.
- Remove steaks to two warmed plates, spoon one tablespoon of glaze over each, and serve immediately.

BLACKBERRY AND HERB FILET MIGNON
Steps:
- In large zip-top bag, combine all ingredients, except butter and fresh blackberries. Squeeze out air and seal bag. Massage bag until well combined and marinade mix is dissolved. Marinate in refrigerator 6 to 8 hours. Remove filets from refrigerator 30 minutes before cooking.
- Melt butter in heavy-bottomed, or cast iron, skillet over medium-high heat.
- Remove steaks from marinade and sear for 3 to 5 minutes per side.
- Serve hot, topped with pan juices and fresh blackberry garnish.
FILET MIGNON WITH BLUEBERRY GLAZE RECIPE

- Preheat the oven to 415° F. Remove steak from the fridge 30 minutes before cooking, this is to bring the steak to room temperature and ensure your cooking times are more accurate. Season both sides generously with salt and pepper.
- Add the 2 tablespoons of butter to an oven safe cast iron skillet and turn up high, allow the skillet to become very hot first. Once the butter melts, place the filets face down and sear undisturbed for 2 minutes. Flip the filets and sear for an additional 2 minutes. This will give your filets a nice seared edge.
- Meanwhile, combine all blueberry glaze ingredients in a small saucepan (I use a potato masher to crush the blueberries, breaking the skins). Simmer on medium-high heat, whisking occasionally until mixture reduces by half and slightly thickens, about 10-12 minutes. Remove from heat and let rest.
- Transfer your skillet directly to the oven. [WARNING] skillet may be hot, handle with oven mitts. For rare, bake for 4 minutes. Medium rare, 5-6 minutes. Medium, 6-7 minutes. Medium well, 8-9 minutes. Remember, depending on the thickness/size of the steak, the more or less time it may take. This recipe is ideal for a 6-8 ounce portion, roughly 2-3 inches thick. Remove filets from the skillet and set on a plate, Let sit for 5 minutes before serving.
- Serve each filet topped with 3-4 tablespoons of blueberry sauce.

- Heat shallots, garlic, blackberry jam, and red wine in a saucepan over medium-high heat. Simmer until reduced to 1/2 cup of liquid, about 15 minutes. Strain liquid through a fine mesh sieve and set aside. Heat the beef broth in a separate skillet over medium-high heat until reduced by half, 15 to 20 minutes. Whisk the two reduced sauces together, and stir in the butter. Season with salt and pepper.
- Heat a skillet over medium-high heat. Cook the venison steaks until they are beginning to firm, and are hot and slightly pink in the center, 3 to 4 minutes per side. An instant-read thermometer inserted into the center should read at least 145 degrees F (65 degrees C). Serve the steaks with the sauce and a few fresh blackberries.

FILET MIGNON WITH BLACKBERRIES
Sweet blackberries make a delicious sauce for a classic filet.

- Pat the steaks dry with paper towels and season generously with salt and pepper. In a heavy skillet, heat the oil over medium-high heat until almost smoking. Sear the steaks in the hot oil for 3 minutes per side for medium-rare. Transfer the steaks to a serving plate, tent with foil, and let stand.
- Using the same skillet, saute the shallots for 1 minute. Add the red wine, scraping up any browned bits on the bottom of the pan. Let wine boil until reduced by half. Add broth and blackberry preserves, return to a boil and reduce by half. (The sauce should coat the back of a spoon.) Whisk in the 2 tablespoons butter. Season sauce with additional salt and pepper, to taste.
- To serve, drizzle the sauce over the steaks. Place a pat of compound butter and scatter a few blackberries on the plate.
- Compound Butter:
- In a bowl, combine 1 stick butter and blackberries and mix well.
- Place on plastic wrap to mold into a log shape. Wrap and refrigerate until ready to serve.
FILET MIGNON WITH BLACKBERRY SAUCE

- Season steaks with salt, pepper and garlic.
- Heat oil over medium-high heat until almost smoking.

CHARBROILED FILET MIGNON MEDALLIONS WITH ROASTED PEAR AND GARLIC SAUCE

- Preheat the oven to 450 degrees F.
- Rinse the filet medallions and pat completely dry. Add the medallions to a medium mixing bowl, and drizzle with olive oil. Sprinkle with sea salt, a few pinches of seasoned salt, and black pepper. With your hands, rub both sides of the medallions until they are covered with the oil and spices. Set aside in the refrigerator for at least 1 hour.
- Meanwhile, cover the bottom of a glass baking dish with aluminum foil. Cut off a small slice from the bottom of each pear they can stand up straight and arrange them, upright, in the baking pan. Add garlic and drizzle the pears and garlic with olive oil. Cover with aluminum foil. Roast in the oven for 30 minutes.
- Allow the pears to cool for 30 minutes and then peel off the skin and remove the core.
- Add the garlic, pears and chicken stock to a blender and blend until smooth. Pour the mixture into saucepan over low heat and season with a couple of pinches of sea salt and pepper and let simmer for a couple of minutes.
- Heat the broiler. Cover a baking sheet with foil and arrange the filet mignon medallions on the pan. Charbroil on high on the top rack, about 6 inches below the broiler. Broil for 5 to 7 minutes for medium-rare. Do not flip.
- Ladle a bed of the roasted pear and garlic sauce on each of 6 plates. Use tongs to top each with a filet and serve.
