FIGS IN PORT

Figs in Port image

These figs in Port wine, made with fresh figs, tawny port, sugar, and black peppercorns, is a simple, elegant summer dessert.

Provided by Yigit Pura

Categories     Dessert

Time 15m

Number Of Ingredients 4

10 large, slightly underripe or somewhat overripe Black Mission figs
1/4 cup plus 2 tablespoons granulated sugar
2/3 cup tawny port
1 1/2 teaspoons whole black peppercorns

Steps:

  • Remove the stems from the figs and cut them in half lengthwise.
  • Place a 10-inch stainless-steel or enamel-coated saucepan over medium-high heat until hot but not smoking. Sprinkle the sugar evenly over the surface. It will melt right away and begin to caramelize and smoke. Immediately place the figs, cut side down, onto the caramelizing sugar. Reduce the heat to low and let the figs cook for 2 to 3 minutes. Do not stir or toss or turn the figs. The figs will naturally release their own juices which will dissolve the sugar.
  • Carefully add the port to the saucepan. Keep the pan over low heat until the caramel melts completely and begins to coat the figs. Add the peppercorns, first enclosing them in a tea ball or cheesecloth, if desired. Use heat-resistant tongs to flip the figs over and cook for 2 to 3 minutes more. Transfer the figs to a platter, cut side up, and cover to keep warm.
  • Return the pan to medium heat for 3 to 5 minutes, using a heat-resistant rubber spatula to stir and occasionally scrape the bottom to pull up all the caramel and peppercorn goodness that may be stuck there. Remove and discard the peppercorn via the tea ball or cheesecloth or a slotted spoon. The port sauce should be deep purple, thick, and velvety. Remove the pan from the heat.
  • Drizzle the warm figs with the port sauce and serve immediately.

FIGS POACHED IN RED WINE

Figs Poached in Red Wine image

This recipe features dried figs, which can be found year-round, poached in wine, for a delicious winter dessert.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes

Time 1h20m

Number Of Ingredients 4

1 package (10 ounces) dried Calimyrna figs, (1 1/2 cups, packed)
1 bottle (3 cups) red wine
1/3 cup sugar
Zest of 1 orange

Steps:

  • In a medium saucepan, combine all ingredients and bring to a boil, stirring occasionally. Reduce heat; simmer, covered, until figs are easily pierced with the tip of a sharp paring knife, 45 minutes to 1 hour.
  • With a slotted spoon, transfer figs to a bowl; simmer remaining liquid until reduced to about 1/3 cup, 3 to 5 minutes (liquid should look syrupy and coat the back of a spoon). Pour through a fine-mesh sieve over figs, and let cool slightly. (If refrigerating, bring to room temperature before serving.) Serve figs and syrup over ice cream or whipped ricotta cheese, if desired.

FIGS IN MAVRODAPHNE WINE WITH MANOURI CHEESE

Figs in Mavrodaphne Wine With Manouri Cheese image

This is a 'winter' dessert recipe popular in many of the upscale tavernas in Athens and always offered at the end of a meal. The dried figs are poached in wine and served with fresh manouri cheese, fresh mint (more than just a garnish!), and a drizzle of honey with cinnamon.

Provided by evelynathens

Categories     Dessert

Time 52m

Yield 6 serving(s)

Number Of Ingredients 9

12 ounces dried calimyrna figs (Greek)
2/3 cup mavrodaphne wine (or any sweet, red, dessert wine)
1 cinnamon stick
3 -4 whole cloves
1/2 cup greek thyme honey
1 1/2 lbs fresh manouri cheese (fresh ricotta could be used)
of fresh mint (to garnish)
greek thyme honey (to garnish)
ground cinnamon

Steps:

  • Place the figs in a wide saucepan and cover with hot water.
  • Soak them for 1 hour.
  • Pour in the Mavrodaphne wine and the spices.
  • Bring to a boil, reduce heat, and simmer for about 30 minutes, until the figs are very plump and tender.
  • Remove the fruit with a slotted spoon, and strain the poaching liquid, discarding the spices and any seeds that may have leaked out from the figs.
  • Return the poaching liquid to the pot, add honey, and boil until reduced and thick and the consistency of syrup, about 5-7 minutes.
  • Slice the manouri cheese into 1/2-inch rounds, carefully so as to keep the pieces intact.
  • Place the cheese slices in one overlapping row on a large platter.
  • Place the poached figs evenly over them and pour over the syrup.
  • Serve immediately, garnish with mint and a discreet pinch of ground cinnamon, if desired.

FIGS IN SPICED SYRUP

Figs In Spiced Syrup image

Fresh figs have a short shelf life-expand it a bit by cooking the figs in a richly spiced sugar syrup.

Provided by Molly Watson

Categories     Dessert

Time 20m

Yield 4

Number Of Ingredients 8

12 fresh figs
1/2 cup sugar
1/2 cinnamon stick
Optional: 2 to 3 whole cloves
Optional: 2 to 3 whole black peppercorns
Optional: 1 to 2 whole cardamom pods
Optional: 2 allspice berries
Optional: 1/4 teaspoon freshly grated nutmeg

Steps:

  • Gather the ingredients.
  • Bring the sugar and 1 cup water to a simmer in a medium saucepan (it should be large enough to hold all the figs). Stir as needed to dissolve the sugar.
  • Add the half of a cinnamon stick and whatever other spices you choose to use (or all of them!) and simmer the syrup for about 10 minutes.
  • Trim off and discard the stems from the figs.
  • Put the figs in the syrup. Simmer about 5 minutes. Don't cook them too long, or they will completely fall apart.
  • Remove the figs from the syrup and let the figs and syrup cool separately for about 15 minutes (if you leave the figs in, they will soften and start to fall apart a bit, so if that sounds good, leave them in!).
  • Once slightly cooled off, strain the syrup, discard the spices, and pour the syrup back over the figs.

FIGS IN WINE SYRUP

Figs in Wine Syrup image

Adapted from a recipe on SippitySup.com. I have used both a late harvest zinfandel and a merlot for this. Inexpensive wines are fine, as they are reduced and sweetened. This will keep three days in the fridge. The figs can be frozen in the syrup, but will soften more because the ice crystals will break the cell walls. I suspect this recipe would be good for canning, although I have not tried it. Figs in regular sugar syrups need to be acidified and processed in a boiling water bath for 45 (pints) to 50 (quarts) minutes, which would poach the fruit. They are a gorgeous red color and are good with ice cream, cheeses (brie would be good), yogurt, or mascarpone.

Categories     Dessert

Time 40m

Yield 4-6 serving(s)

Number Of Ingredients 8

3 cups red wine
1 cup granulated sugar
1/2 lemon, juice of
1 lemon, zest of
3 whole star anise
8 whole black peppercorns
5 whole juniper berries
12 ripe fresh figs, washed and stemmed

Steps:

  • Place the wine, sugar, lemon zest and juice, and spices in a medium saucepan over medium-high heat. Bring to a boil, then lower heat and simmer until reduced by half, about 1/2 hour. It should have a syrupy consistency.
  • Cut an X into the tops of the figs. If they vary in size, cut the larger ones into pieces about the size of the smaller ones.
  • Add the figs to the hot reduced wine syrup and let cool before serving. If refrigerated, bring them up to room temperature before serving.
