2 large egg whites
1 cup confectioners' sugar
3 large figs, cut in quarters, lengthwise

Steps:

  • Heat oven to 250 degrees. In the bowl of an electric mixer fitted with the whisk attachment, whisk the egg whites to soft peaks on medium speed, about 7 minutes. Reduce the speed to low, and slowly add the confectioners' sugar. Once the sugar is fully incorporated, increase the speed to high; you may need to scrape down the bowl a few times. Whisk until whites are firm but not dry, about 10 minutes more.
  • Line a baking sheet with parchment paper. Divide the meringue into 4 equal dollops on the parchment, and place 3 fig quarters in the center of each dollop. Using a small offset spatula, smooth the meringue around the bottom of the figs, sealing the bottom of each fig in meringue.
  • Place baking sheet with meringue and figs on center rack of oven, and bake until meringues are firm, about 1 hour. Remove baking pan from oven, and, using a spatula, transfer meringues to a serving platter. Serve immediately.

Rose Pavlova with Figs and Pistachios image

This elegant pavlova has a crunchy outer shell and a soft marshmallow-like center. Italian meringue, made with a cooked sugar syrup, is the most stable meringue and forms the base of this dessert. A Middle Eastern-inspired flavor combination of honey-sweet figs, buttery bright green pistachios and subtle flowery rosewater is a welcome contrast to the overall sweet taste.

1 1/2 cups granulated sugar
6 large egg whites
1/2 teaspoon cream of tartar
1/2 teaspoon rosewater
1/4 cup chopped pistachios
1 1/4 cups heavy cream
3 tablespoons granulated sugar
1 vanilla bean, split and seeds scraped from half (save the other half for another use)
Sliced fresh figs, for serving

Steps:

  • For the meringue: Preheat the oven to 400 degrees F.
  • Add the sugar and 1/2 cup water to a very clean medium saucepot and mix until the sugar is moistened. Heat over medium-high heat, without stirring, until the mixture begins to boil. Continue boiling until it reaches 240 degrees F on a candy or instant-read thermometer, 3 to 4 minutes,
  • Meanwhile, pour the egg whites into the bowl of a stand mixer fitted with a whisk attachment and whisk on medium speed until they begin to froth up, about 1 minute. Add the cream of tartar and continue whisking until very thick and frothy but no peaks have begun to form, 2 to 3 minutes.
  • When the sugar syrup reaches the correct temperature, turn off the stand mixer and add the syrup to the egg whites. Immediately turn the mixer to high and whip until the meringue is thick and glossy and holds very stiff peaks, about 2 minutes. Add the rosewater and whip 5 seconds to fully incorporate. The meringue should be smooth and silky and hold its shape when you scoop it from the bowl.
  • Line 2 baking sheets with parchment paper. Form 8 pavlovas between the 2 sheets, dividing the batter as evenly as possible. To form each pavlova, scoop out 2 to 3 large spoonfuls of the meringue, heaping them on top of each another on the parchment. Make a divot in the center of each, forming a shallow well with the back of the spoon, and smooth out the sides. Leave enough room between each pavlova to allow them to expand slightly. Sprinkle the sides of each pavlova with the chopped pistachios.
  • Just before loading the baking sheets into the oven, lower the oven temperature to 225 degrees F.
  • Bake, rotating the baking sheets from front to back at least once, for about 2 hours. To check if the pavlovas are done, lift them from the baking sheets and gently poke them to make sure the outsides are completely firm and the centers are still a little soft. Let them cool completely on the baking sheets.
  • For the whipped cream topping: Whip the cream in the bowl of a stand mixer fitted with a whisk attachment on medium speed until soft peaks form, 3 to 4 minutes. Add the sugar and seeds from half of the vanilla bean and whip to medium peaks, 1 to 2 minutes.
  • To serve, top each meringue with whipped cream and garnish with sliced figs.

150 grams slivered almonds
150 grams dried Figs
2 egg whites
110 grams powdered sugar
200 grams white Couverture

Steps:

  • Chop coarsely the almonds slivers and taost in a dry pan while stirring. Let cool down.
  • Finely chop the figs.
  • Beat the egg whites until very stiff, sprinkle the powdered sugar, and continue beating until the mixture forms peaks and shines.
  • Carefully fold the almonds and figs into the beaten egg whites.
  • Pour the egg white mixture into small heaps using 2 teaspoons over a baking tray lined with baking paper. Bake in a preheated oven at 160°C (fan: 140°C, gas mark 2) (approximately 320°F) for 25-30 minutes. Remove from the oven and allow to cool on a wire rack.
  • Chop the chocolate coarsely, melt in a bowl over hot water bath, and stir until smooth. Let cool and brush the meringues with it. Chill the meringues in refrigerator until the chocolate has set.

  • Preheat oven to 350 degrees F. Line a 13x9x2-inch baking pan with foil, extending foil over the pan edges. Coat foil with nonstick cooking spray. Set pan aside. In a large bowl, use a pastry blender to cut butter into cookie mix until mixture resembles coarse crumbs. Stir in the lightly beaten egg until mixture begins to cling together. Press dough into the bottom of the prepared pan.
  • Bake in the preheated oven for 15 to 18 minutes or until set and lightly browned. Cool crust in pan on a wire rack for 5 minutes. In a food processor, combine figs and preserves. Cover and process until a thick paste forms. Spread fig mixture over the crust. Set aside.
  • Reduce oven temperature to 325 degrees F. In a large bowl, combine egg whites and cream of tartar. Beat with an electric mixer on high speed until soft peaks form (tips curl). Gradually add the sugar, about 1 tablespoon at a time, beating until stiff peaks form (tips stand straight). Spread the meringue over the fig mixture, swirling to create peaks.
  • Bake for 18 to 22 minutes or until meringue is set and lightly browned. Cool completely in pan on a wire rack. Cut into bars. Lift the cut bars out of the pan. Makes 24 bars.
