- In a large skillet, heat 2 tablespoons butter over medium heat. Add onions, sugar and salt; cook and stir until softened, about 15 minutes. Reduce heat to medium-low; cook until deep golden brown, 30-40 minutes, stirring occasionally., Meanwhile, place figs, water and honey in a small saucepan. Bring to a boil; reduce heat. Simmer, uncovered, until liquid is almost evaporated, about 20 minutes., Preheat panini maker or indoor electric grill. Layer 6 slices of bread with Asiago cheese, prosciutto, goat cheese, caramelized onions and figs; top with remaining bread. Spread outsides of sandwiches with remaining butter., Cook sandwiches, covered, until bread is browned and cheese is melted, 4-5 minutes. If desired, drizzle with balsamic glaze.

- Heat a skillet over medium heat; add oil. Add onion; cook and stir until onion has softened and turned translucent, about 5 minutes. Reduce heat to low and continue cooking and stirring until onion is very tender and dark brown, about 40 minutes more. Remove from heat and cool.
- While the onion is cooling, cut the figs lengthwise into 1/4-inch rounds.
- Layer 1/4 teaspoon goat cheese, 1/4 teaspoon caramelized onions, and 1 or 2 fig slices on each cracker.

- Preheat the oven to 350 degrees F.
- Crumble the goat cheese into an oven safe dish and set aside.
- In a sauce pot combine the figs and sherry with enough water to barely cover the figs. Place the sauce pot over high heat and bring up to a bubble, cover and remove from the heat and let the figs plump while the onions are cooking.
- Pour the olive oil into a large skillet and place over medium heat. Add the onions, garlic, rosemary, salt and pepper and cook, stirring often, for about 10 minutes, or until lightly browned. Using a slotted spoon remove the plumped figs from the sauce pot, leaving behind any of the pluming liquid. Add the figs to the cooked onions, stir to combine and then spoon over the goat cheese. Place the dish into the top half of the oven for 20 minutes, until the edges begin to bubble.
- Remove and serve immediately with sliced baguettes.

I made these vegetarian baguettes for a party last year and they tasted just fantastic. The combination of the herbed mild goat cheese, arugula, and the sweet onions and figs tastes great together.

- Melt butter in a large skillet over medium-low heat. Mix onion with olive oil and add to skillet. Cook slowly until onions caramelize but do not brown, about 40 minutes. Stir occasionally. Season with salt and allow to cool, about 30 minutes.
- Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Lay out figs, cut side up, onto a baking sheet and sprinkle with sugar. Grill under the broiler until sugar has melted, 3 to 5 minutes. Allow to cool.
- Combine chevre, herbed goat cheese, and milk in a small bowl until creamy.
- Cut baguettes in half lengthwise and spread goat cheese mixture evenly over lower halves. Layer caramelized onions over the goat cheese, then cover with arugula. Cut figs into quarters or slices, depending on size, and layer onto the arugula. Top with the remaining baguette halves and wrap baguettes in plastic wrap. Refrigerate so flavors can combine, 2 to 3 hours. Slice and serve.

- Cut the butter into 1/4" (.64cm) cubes using a knife, or a bench scraper. Pop the butter in the freezer for 5 minutes while you prep the rest of the ingredients.
- In a large nonstick pan melt the olive oil and butter together. When just melted, add the onions, salt and sugar. Caramelize the onions on low to medium low for 30-45 minutes, stirring occasionally. Add a splash or two of water if they start sticking after about 30 minutes of cooking. The onions are done when they're golden and very soft.
- Remove the pastry from the fridge. Have ready a sheet pan, plastic wrap, parchment paper, flour for dusting, a rolling pin and ruler.
- Preheat the oven to 400F (205C). Spread half the goat cheese over the pastry in a circular pattern. Leaving a 1 1/2"-2" (1.2cm-2.5cm) edge. Next arrange 1/2 the caramelized onions over the goat cheese. Sprinkle with a few thyme leaves. Place 1/2 the figs cut as discs around the edge of the filling, slightly overlapping if needed. Arrange 1/2 the 1/4 cut figs in the center of the galette, placing another disc in the center of the "flower". Fold the edges over the filling, overlapping the pastry as needed, leaving the center open. Place in the freezer for 15 minutes or cover with plastic wrap and refrigerate up to an hour before baking. Assemble and freeze/refrigerate the second pastry in the same manner.MAKE AHEAD TIP: An assembled galette can go straight from freezer to oven! - Add the sliced onion to a dry medium sauté pan over medium heat. Spread the onions out evenly over the pan, cover, and cook, stirring occasionally. If your stovetop burner is strong, you may need to reduce the heat to medium low to prevent burning. Once a good amount of color has developed (about 5-7 minutes), deglaze your pan with the water, stirring to scrape up the brown bits on the bottom of the pan. Once the water has cooked off, add 1 tbsp olive oil and salt. Continue to cook for an additional 5 minutes. The onions should smell sweet and have a deep dark brown color. Remove from heat.
- Roll out pizza dough on a floured surface into a rectangle about 1/4-1/3 inch thick. Transfer to a baking sheet that has been lined with either parchment paper or a Silpat. Brush the dough with 1 1/2 tbsp olive oil and sprinkle with salt and pepper.
- Cut two figs into small pieces and sprinkle them over the dough. Crumble almost all of the goat cheese evenly over the dough (reserve approximately 1-2 oz for finishing) and top with the caramelized onions. Bake the flatbread for about 12-15 minutes, until golden brown and cooked through.
