This sweet Fresh Fig Chutney with raisins and apples is the perfect accompaniment for white meat, cheese platters and charcuterie boards. Seasoned with warming spices like nutmeg, cloves and ginger, it also makes for a wonderful DIY Christmas gift idea for your foodie friends.

1/2 cup brown sugar (unpacked)
1/2 cup apple cider vinegar
2 cups figs (fresh or frozen, stems removed and quartered)
1/3 cup apple (diced)
1/2 cup white onion (chopped)
1/3 cup raisins
1/3 tsp salt
1/2 tsp ground ginger
1/4 tsp ground clove
1/4 tsp ground nutmeg

Steps:

  • Soak raisins in a bowl of hot water for 10 minutes.
  • In a saucepan, melt sugar with vinegar. Add the figs, apple, onion, raisins, salt and spices (ginger, clove and nutmeg).
  • Bring to a boil, then reduce to low heat and cook for about an hour, stirring frequently.
  • Put the chutney into a jar and store it in a dry place.

¼ cup olive oil
1 large red onion, chopped
2 cups chopped fresh Black Mission figs
¼ cup aged balsamic vinegar
2 tablespoons white sugar, or to taste

Steps:

  • Heat olive oil in a saucepan over medium heat; stir onion in the hot oil. Reduce heat to medium-low, cover saucepan, and cook, stirring occasionally, until onion is softened and caramel-colored, 20 to 25 minutes.
  • Stir figs into onion; cook and stir until figs begin to lose their shape and have softened into onion, 10 to 15 minutes. Pour balsamic vinegar into fig-onion mixture; cook until all the liquid has evaporated, 5 to 10 minutes. Stir sugar, 1 tablespoon at a time, into fig-onion mixture until desired sweetness is reached. Serve warm or chilled.

1 3/4 teaspoons salt
1/4 teaspoon ground allspice
1/8 teaspoon ground cloves
1 1/4 pounds firm, slightly underripe fresh figs, rinsed, stems removed and halved
2 1/2 cups red wine vinegar
1/2 pound light brown sugar
1 onion, chopped
1/4 cup chopped fresh ginger
1 1/2 teaspoons yellow mustard seeds
1/4 lemon, zested
1/2 cinnamon stick

Steps:

  • In a large saucepan combine the vinegar, sugar, onion, ginger, mustard seeds, lemon zest, cinnamon stick, salt, allspice, and cloves and bring to a boil. Reduce the heat to a simmer and cook until mixture is thickened and reduced by 2/3, forming a thick syrup. Add the figs and cook gently until the figs are very soft and beginning to fall apart and most of the liquid they've given off has evaporated, about 30 minutes.
  • Transfer the chutney to a non-reactive container and allow to come to room temperature before serving. The chutney may be made up to 3 weeks in advance and stored in the refrigerator in an airtight container. (Alternately, hot chutney may be ladled into hot sterilized canning jars and processed in a hot-water bath according to manufacturer's directions.)

50g sultanas
1 tsp flaky sea salt

Steps:

  • Put all the ingredients in a pan and bring to a gentle simmer for 1 hr, uncovered, stirring occasionally until it gets sticky and jammy. Spoon into a clean Kilner jar. That's it. You're done.

1 tablespoon vegetable oil
1 large red onion (peeled and finely diced)
1/2 inch (2cm) piece of fresh ginger (peeled and minced)
2/3 cup (120g) packed light or dark brown sugar
1/2 cup (125ml) apple cider vinegar
juice and zest of one lemon
3/4 cup (100g) raisins and diced dried fruits ((any mix))
1 1/2 teaspoons mustard seeds
1 small cinnamon stick
1/4 teaspoon ground allspice
1/4 teaspoon salt
1/8 teaspoon ground cloves
pinch red pepper powder
1 pound (450g) fresh figs (stemmed and diced)

Steps:

  • In a wide saucepan, heat the vegetable oil over medium heat. Add the onions and cook until translucent, which will take about 5-6 minutes, stirring occasionally.
  • Add the remaining ingredients, except for the figs. Let cook at a low simmer for 20 minutes, then add the figs, cover the pot, and cook for 5 to 10 minutes, until the figs are tender and cooked through.
  • Remove the lid and cook 10 to 15 minutes over low heat, stirring, until the mixture thickens and becomes jam-like.

1 cup finely chopped dried figs
½ cup cider vinegar
¼ cup brown sugar
¼ cup minced white onion

1 pinch garlic powder
1 pinch cayenne pepper
1 pinch ground cloves
1 pinch ground cinnamon
1 (8 ounce) loaf French bread, cut into 1-inch slices
olive oil cooking spray
1 (8 ounce) round Brie cheese, cut into bite-size pieces
1 Granny Smith apple, cut into matchstick-size pieces
1 tablespoon oregano

Steps:

  • Combine figs, vinegar, brown sugar, onion, ginger, garlic powder, cayenne pepper, cloves, and cinnamon in a saucepan; simmer over low heat, stirring occasionally, until fig spread is reduced, about 30 minutes. Transfer fig spread to a bowl, cover with plastic wrap, and refrigerate, 8 hours to overnight.
  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Arrange bread slices on a baking sheet. Lightly spray both sides of each bread slice with olive oil cooking spray.
  • Bake bread slices under the broiler until toasted, about 2 minutes per side. Remove bread from oven and cool slightly, keeping broiler on.
  • Blend fig spread in a blender or food processor until pureed. Spread about 1 teaspoon fig spread onto each toasted bread slice; top with Brie cheese and apple pieces. Sprinkle each crostini with oregano.
  • Broil crostini in the preheated oven until Brie cheese is melted and browned, 1 to 2 minutes.

  • Add all ingredients to a saucepan on medium heat, bring to a boil string occasionally. Simmer chutney until liquids have reduced and chutney is thick and glossy, about 10-15 minutes. Serve and enjoy!

  • Place the orange zest, star anise, cinnamon stick and bay leaf in the center of a 6-inch square of cheesecloth; pull up the sides and tie the ends with butcher’s twine to make a little packet (if you don’t have cheesecloth you can simply throw the spices in the pot and fish them out at the end).
  • Nestle the packet into the saucepan. Bring the mixture to a boil over medium heat, then reduce the heat to a simmer on your lowest burner. Cook, stirring occasionally and smashing the figs with the back of a spoon, until thickened (it should be the consistency of a jam), about 15-20 minutes.
  • Remove the pan from the heat and discard the packet of spices. Smash the figs a bit more with the back of the spoon. The chutney should be thick, but if it looks dry you can stir in a splash or two of water. Stir in the walnuts. Serve warm or at room temperature.
