This recipe has been passed down by word of mouth in our fire station for years! It is fabulous and you can control how hot it is by how much red pepper you add. Please note that the longer it sits, the hotter it gets! Great on chicken, pork, and just about anything you can think of. Try it on a cracker with a slice of cheese!

Steps:
- Pour ketchup into a large saucepan. Pour vinegar into the ketchup bottle, shake to loosen any remaining ketchup, and pour into the saucepan. Save the bottle, and clean. Stir in the brown sugar, butter, and red pepper flakes. Cook over medium heat until almost boiling, but do not boil. For convenience, refrigerate leftover sauce in the clean ketchup bottle.

- Place round steak in a 3-qt. slow cooker. In a small bowl, combine the tomatoes, onion, garlic and seasonings; pour over steak. Cover and cook on low for 8-9 hours or until meat is tender. , Remove meat from slow cooker. Add beans to tomato mixture. Cover and cook on high for 30 minutes or until beans are heated through. When cool enough to handle, slice meat. In individual bowls, layer the rice, meat and bean mixture. Top with cheese, olives, onions and guacamole.

- Place all the ingredients in a medium saucepan and stir together. Bring to a boil, then reduce the heat to a simmer and cook for 15 minutes. If you prefer the sauce thinner, stir in a little water. If you prefer it thicker, let it simmer a little longer. THE FORT'S WHISKY BBQ SAUCE

- Place all ingredients in a saucepan and bring to a boil. Reduce heat and simmer for 20 to 30 minutes. Use immediately or cool and refrigerate for up to 10 days.
FIESTA BURGER
Steps:
- In a medium bowl, mix together the ground beef, chorizo, onion powder, cumin and 2 teaspoons each salt and pepper. Form the mixture into palm-size balls.
- Heat a griddle or large skillet over medium-high heat. Place the balls on the griddle and smash with a spatula or the back of a spoon. Cook, flipping once, until cooked through. Divide the Cheddar and queso blanco among the burgers and let melt. Remove the burgers to a plate.
- Meanwhile, combine the mayonnaise, ketchup and lime zest and juice in a bowl; mix to blend. Add cumin, salt and pepper to taste.
- Toast the slider buns on the griddle. Serve the burgers on the buns, topped with some rosada sauce.

- Puree peppers and pineapple with juice in blender until smooth.
- Combine all ingredients in medium sized stock pot.
- Bring to a boil, reduce heat to low and simmer for 1.5-2 hours stirring occasionaly.
- Once sauce has reached your desired thickness transfer to hot pint or 1/2 pint jars, leaving 1/2 inch headspace, secure lids and bands, process for 20 minutes in boiling water canning bath,.
- Remove from canner and allow to cool overnight-transfer any jars that do not seal to refrigerator-sealed jars can be stored for up to a year in a cool dry area. If you choose not to process the jars cool on counter for about an hour then transfer to fridge(use within 1 month).
BEEF FIESTA CASSEROLE
I've been making this casserole since my boys were young--it's one of their favorites. It's a great budget dish and perfect for when you need your TexMex "fix"! It also freezes well--I usually make it in two smaller casseroles; one for dinner tonight and one to freeze for later!

- Preheat oven to 375°.
- Grease a 3-quart casserole.
- In a large skillet, cook ground beef over med-high heat until browned; drain.
- Reduce heat to medium; add onion and garlic and cook for about 5 minutes.
- Add tomatoes, tomato paste, chilies, beans, salt, chili powder, cumin and pepper.
- Stir to combine and simmer for about 10 minutes.
- Pour into prepared casserole.
- Add macaroni and mix well to combine all.
- Sprinkle with cheese, add jalapeño slices if desired; cover and bake for 30 minutes.
- Uncover and continue baking for 10 minutes.
MEXICAN FIESTA BREAKFAST CASSEROLE
We ate this Mexican-inspired breakfast casserole once at a buffet brunch when we were on an organizing group for the church fiestas, and we both liked it so much that I came home and worked on recreating the recipe for our family.

- Preheat the oven to 375 degrees F (190 degrees C). Spray an 8-inch square glass baking dish with cooking spray.
- Heat a medium skillet over medium-high heat. Add chorizo; cook and stir until browned and crumbly, 3 to 5 minutes. Remove from the skillet and drain on paper towels.
- Mix water and dry milk together in a large bowl. Add chorizo, tortillas, eggs, pinto beans, diced tomatoes with green chiles, corn, green chile, pepper Jack cheese, bell pepper, and green onions. Mix well. Pour into the prepared dish.
