Enjoy one of our favorite yellow squash recipes - this easy sauteed summer squash is so quick and easy to make.

1 tablespoon olive oil
1 tablespoon butter
3 medium yellow squash, cut into 1/2 inch pieces
3 cloves garlic, minced
5 sprigs fresh thyme, finely chopped
10 fresh basil leaves, finely chopped
1 tablespoon freshly squeezed lemon juice
1/2 teaspoon sea salt
1/4 teaspoon ground black pepper

Steps:

  • Heat a large skillet over medium-high heat. Add the olive oil and butter.
  • Once the oil is hot and the butter is bubbling, add the yellow squash. Stir the squash to coat them in the butter and oil. Sauté for 5 minutes. Stir again and flip the squash over and cook for 4 more minutes.
  • Add the garlic and thyme to the pan. Stir to combine and cook for an additional 2 minutes.
  • Remove the squash from the heat and add the chopped basil, lemon juice, salt, and pepper. Stir and serve immediately.

1/4 cup green pepper, chopped
4 yellow squash, sliced

  • Melt butter in skillet; add onion and green pepper.
  • Cook until tender.

1 1/2 cups finely chopped white onions
1 1/2 tablespoons minced garlic
2 3/4 lbs chayotes, peeled, pitted, cut crosswise into 1/4-inch slices
18 ounces zucchini, cut crosswise into 1/4-inch slices
14 ounces crookneck yellow squash, cut crosswise into 1/4-inch slices
3 tablespoons chopped chives
3 tablespoons chopped fresh cilantro

Steps:

  • Melt butter in large pot over medium heat. Add onion and garlic; sauté 2 minutes.
  • Add all squash. Reduce heat to medium-low.
  • Cover; cook until just tender, stirring occasionally, about 25 minutes. Mix in herbs. Season with salt and pepper.

4 tablespoons butter
1 small sweet onion, finely chopped
12 medium crookneck yellow squash, trimmed and sliced 1/4 inch thick
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Melt the butter in a large skilet over medium-high heat. Cook the onion in the butter until it browns slightly, about 5 minutes. Layer the squash slices into the skillet and sprinkle with the salt and pepper.
  • Cover the pan, reduce the heat to low, and cook the squash for 20 minutes, or until tender. Remove the cover. Stir the squash and continue cooking until the liquid has cooked out, another 3 or 4 minutes.

BATTLETOWN YELLOW SQUASH

This is an excellent squash casserole. This recipe has been in our family for years and is a favorite!

2 lbs yellow squash, cut into slices 1/2-inch thick
1/4 cup light brown sugar
3 large eggs
2 tablespoons butter
4 ounces crushed saltines
1 small onion, diced
8 ounces half-and-half
1/4 teaspoon vanilla extract
1/2 teaspoon salt

Steps:

  • Cook squash till tender and allow to drain well.
  • Saute onion in butter.
  • Add eggs to squash and blend well.
  • Add onions and butter to squash and blend.
  • Add salt and brown sugar.
  • Alternate adding cracker crumbs and the half and half to the squash.
  • Add vanilla.
  • Mix well.
  • Pour into greased baking dish.
  • Bake 45 minutes at 375*.
  • Makes 6-8 servings.

AUNT MARJORIE'S FIESTA SQUASH CASSEROLE

This takes a bit of preparation time, but is well worth it. It's almost a meal in itself - all that cheese! It's another of the old Alston Family recipes I'm including in our family cookbook.

FIRST LAYER
3 small zucchini or yellow squash, diced
4 eggs, beaten
1/4 c butter, melted
1 c parmesan cheese, grated
salt and pepper to taste
1 Tbsp sugar
1/2 c minced onion
SECOND LAYER
3 to 4 medium sized tomatoes, sliced
salt and pepper to taste
THIRD LAYER
2 large onions, sliced thinly
1 c sour cream
2 c sharp cheddar, grated
1/2 c mayonnaise

Steps:

  • 1. Preheat oven to 350°. Mix FIRST LAYER ingredients together well and spread on the bottom of a 3-quart greased casserole dish.
  • 2. Place tomatoes in overlapping pattern on top, as the SECOND LAYER. Sprinkle with salt and pepper.
  • 3. Place sliced onions over top of tomatoes. Mix the remaining ingredients of THIRD LAYER well, and spread over top of casserole. May sprinkle a little paprika on top for color if desired.
  • 4. Bake at 350° for 45 - 60 minutes, until casserole bubbles around the edges for about 15-20 minutes. Cool slightly before slicing into squares for serving.
