SIMPLE SPICY SALSA



Simple Spicy Salsa image

This homemade spicy salsa is SO GOOD, it will remind you of chowing down on chips and salsa at your local Mexican restaurant. Only this time, there's no one to stop you from downing the entire bowl before dinner. Easy to make, this salsa takes less than 5 minutes.

Number Of Ingredients 11

28 oz fire-roasted diced tomatoes (canned)
½ red onion, sliced
½ green bell pepper, sliced
2 stalks celery, sliced
1 serrano pepper, sliced
handful fresh cilantro
1 tablespoon white wine vinegar
2 teaspoons sugar
1 teaspoon ground cumin
half a lime, juiced
salt, to taste ((I use Himalayan pink salt))

Steps:

  • Add all ingredients to a food processor (I use an 11-cup) or high-powered blender. Process for about 5 seconds (everything should chop up almost instantly, and you want it a little chunky, not pulverized).
  • Taste and adjust salt if necessary. Serve immediately OR transfer to a container and refrigerate. Best if eaten within 3-5 days of making.

Tasty salsa is easy using Ball® Fiesta Salsa Mix and either fresh or canned tomatoes.

4 ½ cups finely diced fresh tomatoes
3 tablespoons white vinegar (5% acidity)
¼ cup Ball® Fiesta Salsa Mix - MIX WELL BEFORE MEASURING
2 each Ball® or Kerr® Pint (16 oz) Jars with lids and bands

Steps:

  • Prepare canner, jars, and lids according to manufacturer's instructions.
  • Combine tomatoes, vinegar, and Ball® Fiesta Salsa Mix in large saucepan.
  • Heat to a boil. Reduce heat and simmer 5 minutes.
  • Ladle hot salsa into jars leaving 1/2 inch headspace. Remove air bubbles. Wipe rims. Center lids on jars. Apply bands and adjust to fingertip tight.
  • Process in boiling water canner for 35 minutes, adjusting for altitude.

4 cups chopped peeled fresh tomatoes
1/4 cup finely chopped onion
1 to 4 jalapeno peppers, seeded and finely chopped
1 tablespoon olive oil
1 tablespoon vinegar
1 teaspoon ground cumin
1 teaspoon salt, optional
1 garlic clove, minced

Steps:

  • In a bowl, combine all ingredients; mix well. Let stand for about 1 hour. Serve at room temperature. Store in a covered container in the refrigerator.

Fiesta Salsa Rice image

A blend of ground beef, Spanish rice, corn, and salsa that combines to form a delicious dish.

Number Of Ingredients 6

2 cups water
2 tablespoons olive oil
1 (6.8 ounce) package Spanish rice mix
1 pound ground beef
1 (16 ounce) jar chunky salsa
1 (11 ounce) can Mexican-style corn, drained

Steps:

  • Bring 2 cups water and olive oil to a boil in a medium saucepan. Stir in rice and contents of spice pack. Return to a boil. Cover; reduce heat to low. Simmer until most water is absorbed, 20 to 25 minutes.
  • While rice cooks, heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
  • Stir cooked beef, salsa, and corn into the rice. Let simmer for 5 minutes or until warm. Serve.
