1/4 cup butter, cubed
1 small onion, chopped
2 to 3 jalapeno peppers, seeded and chopped
6 plum tomatoes, seeded and chopped
5 cups fresh or frozen corn
1-1/2 teaspoons salt
Lime wedges, optional

Steps:

  • In a 6-qt. stockpot, heat butter over medium heat. Add onion and jalapenos; cook and stir until onion is crisp-tender, 3-4 minutes. Stir in tomatoes; cook 3 minutes longer., Add corn; cook, uncovered, until tender, stirring occasionally, 8-10 minutes. Stir in salt. If desired, serve with lime wedges.

1/2 cup butter, softened
1/4 cup minced fresh cilantro
2 teaspoons grated lime zest
1/2 teaspoon garlic powder
6 large ears sweet corn in husks
1/2 cup mayonnaise
1 tablespoon chili powder
1/2 teaspoon paprika
1/2 cup crumbled queso fresco or fresh goat cheese

Steps:

  • In a small bowl, combine the butter, cilantro, lime zest and garlic powder. Shape into a log; wrap in plastic. Refrigerate for 30 minutes or until firm., Carefully peel back corn husks to within 1 in. of bottoms; remove silk. Place in a Dutch oven; cover with cold water. Soak for 20 minutes; drain. In a small bowl, combine the mayonnaise, chili powder and paprika. Spread over corn. Rewrap corn in husks and secure with kitchen string., Grill corn, covered, over medium heat for 25-30 minutes or until tender, turning often. Serve with butter slices and sprinkle with cheese.

Fresh Corn Salad with black beans, avocado, tomatoes and a zesty chili-lime dressing. This easy corn salad recipe is one of the best summer side dishes!

4 ears fresh corn
15 ounce can black beans (rinsed and drained)
8 ounces cherry tomatoes (halved)
½ cup chopped red onion
½ cup cilantro (chopped)
3 ounces Cotija cheese (crumbled*)
1 large avocado (chopped)
3 tablespoons lime juice (about 3 limes)
3 tablespoons olive oil
¾ teaspoon chili powder
½ teaspoon cumin
½ teaspoon garlic powder
½ teaspoon kosher salt
1/8 teaspoon pepper

Steps:

  • Heat grill to medium heat. Remove husks and silks from corn; rinse and pat dry. Wrap each ear of corn in foil and grill for about 15 minutes, until tender when pierced with a knife, turning every 5 minutes. Let stand wrapped in foil for 5 minutes. Unwrap carefully as the corn will be very hot. Let cool.
  • While the corn cools, make the dressing. Whisk together all dressing ingredients in a small bowl. Set aside.
  • Once corn is cool, carefully use a sharp knife to slice the kernels off the cob. Place corn kernels in a large bowl.
  • To the bowl with the corn, add the black beans, tomatoes, red onion, and cilantro. Pour the dressing over the salad and toss gently to combine. Stir in the Cotija cheese. If serving the salad within 2 hours, you can stir in the avocado now. Otherwise, wait and add the avocado right before serving. Salad is best if chilled for at least 2 hours before serving.

This main dish stars chicken marinated in tequila that's then grilled, and topped with Texas Bean Salsa and splashed with lime juice. Apple juice can be substituted for the tequila if you choose, and the chicken can also be broiled.

1 (15.5 ounce) can black-eyed peas, rinsed and drained

1 small red onion, chopped

1 (4.5 ounce) can diced green chilies, drained
2 ripe tomatoes, diced and drained
1 cup Italian-style salad dressing
2 tablespoons chopped fresh cilantro
2 cloves garlic, minced
½ teaspoon garlic salt
6 skinless, boneless chicken breast halves
3 limes, juiced
⅓ cup tequila
3 teaspoons paprika
2 teaspoons salt
1 teaspoon pepper
6 Romaine lettuce leaves
6 sprigs cilantro leaves, for garnish
6 lime wedges, for garnish

Steps:

  • To make the salsa, mix the black beans, black-eyed peas, corn, red onion, bell pepper, chiles, and tomatoes together in a bowl. Toss vegetables with the Italian dressing, cilantro, garlic, and garlic salt until evenly blended. Cover, and refrigerate 6 hours or overnight.
  • Preheat a grill for medium-high heat.
  • About 45 minutes before serving time, place the chicken breasts in a baking dish and drizzle with lime juice and tequila. Sprinkle evenly with paprika, salt, and pepper. Cover the dish, refrigerate, and allow to marinate 10 minutes.
  • Remove chicken breasts from the marinade, and discard remaining marinade.
  • Cook the chicken breasts on the preheated grill until the juices run clear and the meat is no longer pink, 10 to 12 minutes.
  • To serve, place a lettuce leaf on each plate. Top with a chicken breast, and spoon Texas Bean Salsa over each, dividing evenly among servings. If desired, garnish with additional cilantro leaves and lime wedges.

1 (15 1/4 ounce) can sweet whole kernel corn, drained
1 (15 ounce) can black-eyed peas
1 small red onion, chopped
1/2 cup chopped green bell pepper
1 (4 1/2 ounce) can diced green chilies
2 tomatoes, diced and drained
1 cup Italian salad dressing
1 1/2 tablespoons chopped fresh cilantro
2 cloves garlic, minced
1/2 teaspoon garlic salt
6 (6 ounce) boneless skinless chicken breasts
3 fresh whole limes
1/3 cup tequila or 1/3 cup apple juice
3 teaspoons paprika
2 teaspoons salt
1 teaspoon pepper
6 romaine lettuce leaves

Steps:

  • Combine all ingredients for Texas Bean Salsa. Cover, and refrigerate 6 hours or overnight.
  • About 45 minutes before serving, place chicken breasts in baking dish. Squeeze lime juice over chicken. Drizzle with tequilla or apple juice. Sprinkle with paprika, salt and black pepper. Cover and marinate 10-60 minutes. Remove from marinade and grill or broil 10-12 minutes, until cooked, turning once.
  • Lay a lettuce leaf on each plate. Place a chicken breast on top of the lettuce leaf, and top each chicken breast with 1/6 of the Texas Bean Salsa. Garnish with additional cilantro leaves and/or lime wedges if desired.

20-minute summer squash and corn fiesta salad with chili-lime vinaigrette, feta cheese, and cilantro. A simple and flavorful side for all of your summer entertaining needs.

3 small-medium size zucchinis, sliced into 1/4 inch thick coins
1 jalapeño, seeds and ribs removed, finely chopped
2 minced garlic cloves
1/4 tsp. kosher salt
1 1/2 cups frozen/thawed corn (or 2 ears of fresh grilled corn*) (I use Trader Joe's fire-roasted frozen corn)
1 pint cherry tomatoes, halved
1/2 cup crumbled feta cheese
3 Tbsp. extra-virgin olive oil
2 Tbsp. fresh lime juice
1/2 tsp. chili powder
1/4 tsp. kosher salt
1/4 tsp. ground cumin
3 Tbsp. finely chopped fresh cilantro, plus more for garnish

Steps:

  • Heat 2 Tbsp. oil in a large skillet over medium. Add zucchini; cook 5 to 7 minutes, stirring only occasionally, until golden-brown and tender. Add jalapeño and garlic; cook 2 more minutes, until aromatic. Stir in corn, cook 1 minute, until heated through. Season with salt and transfer mixture to a bowl.
  • Prepare Chili-Lime Vinaigrette by combining olive oil, lime juice, chili powder, salt, cumin, and cilantro in a small bowl; stir with a whisk.
  • Add tomatoes and feta cheese to zucchini mixture. Pour dressing overtop and gently toss to combine. Garnish with additional cilantro, if desired.

5 ears of corn, husked
4 Tbsp. extra-virgin olive oil, divided
3 Tbsp. rice vinegar
2 Tbsp. mayonnaise
1 grated garlic clove
3/4 tsp. ground sumac ((sub paprika))
3/4 tsp. kosher salt, divided
1/2 tsp. black pepper, divided
1 small shallot, thinly sliced into rings ((about 3 to 4 Tbsp.))
2 medium (or 3 small) ripe avocados, peeled and cut into small cubes
1 jalapeño, seeds and ribs removed, finely chopped
1/4 cup fresh basil leaves, roughly chopped
3 Tbsp. fresh mint leaves, roughly chopped
1/4 cup roasted, salted pumpkin seeds (pepitas)
3 to 4 Tbsp. crumbled Cotija cheese ((sub feta or goat cheese))

Steps:

  • Add 1 Tbsp. of the oil to a large cast-iron skillet (or grill pan) over medium-high heat. Once hot, add 3 ears of corn, roll in oil, and let sit, undisturbed, for 4 minutes, until bottoms are lightly charred. Toss, and continue cooking in 3 minute intervals, until the corn is charred to your liking (about 12 mins total). Set aside and let cool. *Note: the remaining two ears of corn remain raw, which gives the salad more texture.
  • Meanwhile, prepare dressing by combining remaining 3 Tbsp. olive oil, rice vinegar, mayonnaise, garlic, sumac (or paprika), 1/4 tsp. salt, and 1/4 tsp. black pepper in a bowl; whisk to combine. Stir in shallots and set aside.
  • Once the charred corn is cool enough to handle, carefully cut the kernels from the cob and transfer them to a large mixing bowl. Cut the kernels from the remaining 2 ears of raw corn and add to bowl, along with diced avocado, jalapeño, basil, mint, pumpkin seeds, Cotija cheese, remaining 1/2 tsp. salt and 1/4 tsp. black pepper.Pour dressing over salad and toss to combine. Garnish with extra herbs, seeds, and cheese, if desired.
