I love to fix this spicy scrambled egg dish for friends and family. It's almost a meal in itself, but I serve it with muffins or biscuits, fresh fruit juice and coffee. -Kay Kropff, Canyon, Texas

1 tablespoon canola oil
1/2 cup chopped onion
1/4 cup chopped sweet red pepper
1 jalapeno pepper, seeded and chopped
8 bacon strips, cooked and crumbled
8 large eggs, lightly beaten
1 cup shredded cheddar cheese, divided
1/2 teaspoon salt
1/8 teaspoon pepper
Salsa

Steps:

  • In a large cast-iron or other heavy skillet, heat oil over medium-high heat. Add onion and pepper; cook and stir until tender, 3-5 minutes. Sprinkle with bacon. Pour eggs over the top; sprinkle with 1/2 cup cheese, salt and pepper. Cook over medium heat, stirring occasionally, until eggs are completely set. Sprinkle with remaining cheese. Serve with salsa.

This is a recipe I found on the cooksrecipes.com website, from their World Cuisine folder. It's different than the only other recipe on this site with the same title, so I thought I'd post it here for another option for anyone looking for a Tex-Mex breakfast idea.

12 large eggs, slightly beaten
3/4 cup heavy cream
1 teaspoon salt
2 tablespoons butter or 2 tablespoons margarine, melted
1 cup onion, chopped
1 cup red bell pepper, chopped
1 cup mushroom, sliced
1 (4 ounce) can green chilies, diced
6 slices bacon, cooked & crumbled (optional)
3/4 cup cheddar cheese, shredded
3/4 cup monterey jack cheese, shredded

Steps:

  • Combine eggs, cream and salt in medium bowl.
  • Melt butter in a large skillet; cook onion, bell pepper and mushrooms until tender.
  • Add the chiles, bacon (if using), and egg mixture. Cook, stirring occasionally until eggs begin to set. Sprinkle cheddar cheese and Monterey Jack cheese over eggs. Cover, and continue to cook until eggs are set and fully cooked.

1 lb ground sausage
1/2 green bell pepper, chopped
1/2 red sweet bell pepper, chopped
3 green onions, chopped
1 (10 ounce) can tomatoes and green chilies
1/2 cup hot chunky salsa
4 ounces cubed processed cheese
10 eggs, slightly beaten
1 1/2 teaspoons salt
1/2 cup sour cream
2/3 cup milk

Steps:

  • in a skillet, slowly brown sausage, bell peppers, and onions. Spoon sausage-onion mixture onto paper towels, drain and set aside.
  • Dry skillet with more paper towels, pour tomatoes, green chilies, salsa and processed cheese in skillet and cook, stirring constantly, only until cheese melts. Remove from heat.
  • In a large bowl, beat together eggs, salt, sour cream and milk and fold in sausage mixture, and tomato-cheese mixture.
  • Transfer to a greased 7x11 inch baking dish.
  • Bake uncovered at 325 degrees for 25 minutes or until center is set.

We ate this Mexican-inspired breakfast casserole once at a buffet brunch when we were on an organizing group for the church fiestas, and we both liked it so much that I came home and worked on recreating the recipe for our family.

nonstick cooking spray
¼ pound chorizo sausage
1 cup warm water
¾ cup instant dry milk
3 (6 inch) corn tortillas, cut into bite-size pieces
2 cups beaten eggs
1 (15 ounce) can pinto beans (such as Bush's®), rinsed and drained
1 (10 ounce) can diced tomatoes and green chiles (such as RO*TEL®), drained
1 cup frozen whole kernel corn
½ cup chopped green chile pepper
½ cup shredded pepper Jack cheese
½ green bell pepper, chopped
4 green onions, chopped
2 tablespoons light sour cream, or to taste
½ cup grated Mexican cheese blend

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Spray an 8-inch square glass baking dish with cooking spray.
  • Heat a medium skillet over medium-high heat. Add chorizo; cook and stir until browned and crumbly, 3 to 5 minutes. Remove from the skillet and drain on paper towels.
  • Mix water and dry milk together in a large bowl. Add chorizo, tortillas, eggs, pinto beans, diced tomatoes with green chiles, corn, green chile, pepper Jack cheese, bell pepper, and green onions. Mix well. Pour into the prepared dish.
  • Bake in the preheated oven until golden brown and the middle is set, 55 to 60 minutes. Remove from the oven; spread sour cream on top and sprinkle with Mexican cheese. Return to the oven to melt cheese, about 1 minute. Let cool slightly before serving.
