ORTEGA FIESTA BAKE

This makes a very large casserole dish -- so is especially good to take to potlucks and large gatherings. I have never tried to cut the recipe in half -- but I'm sure it could be done without any problem. (I believe I have the size of the Jiffy Corn Muffin Mix right -- they are the small boxes)

Number Of Ingredients 10

2 1/2 lbs ground sirloin
1 1/2 cups chopped onions
1 (16 ounce) jar medium ortega garden-style salsa
2 (1 1/4 ounce) packages taco seasoning mix (I only use about 1 1 /2 packages)
1/4 cup water
1 (16 ounce) bag frozen corn
1 cup sliced ripe olives
2 (8 1/2 ounce) packages Jiffy corn muffin mix
1 1/2 cups cheddar cheese, shredded (the taco blend of cheese works well)
1 (4 ounce) can diced green chilies

Steps:

  • Brown meat and onion until meat is no longer pink. Drain any excess fat.
  • Add taco seasoning, water and salsa. Simmer 5 to 6 minutes until thickened but not dry.
  • Add corn and olives.
  • Spoon into an ungreased 3 1/2 to 4 quart casserole dish.
  • Prepare Corn muffin mix according to instructions on box. Add cheese and chopped green chilies.
  • Spread over meat mixture.
  • Bake, uncovered at 350 for 35 minutes or until golden.

1/2 c butter, melted
1 1/2 c shredded mexican-blend cheese
1/4 c shredded mozzarella cheese
10 oz jar sliced jalapeño peppers, drained
1 tsp dried parsley or cilantro
2 - 12 oz tubes refrigerated biscuits, cut into quarters

Steps:

  • 1. In a large bowl, combine butter, cheeses, pepper slices and parsley; add biscuits and toss to coat. Transfer to an ungreased Bundt pan.
  • 2. Bake at 350 degrees for 30 minutes, or until golden. Invert onto a serving plate; serve warm.

A very filling and delicious twist on a bean burrito.

1 (6 inch) whole wheat pita bread
½ cup vegetarian refried beans
¼ avocado - peeled, pitted and diced
2 tablespoons fresh salsa, or to taste
2 tablespoons crumbled feta cheese, divided
hot sauce to taste
2 teaspoons chopped fresh cilantro, or to taste

Steps:

  • Warm the pita in a toaster oven until fragrant, 1 or 2 minutes; cut in half and open up each half. Heat the beans in a small saucepan over medium heat until hot, and mix in the avocado. Divide the bean mixture in half, and fill each half of the pita with half the bean mixture. Top each pita with 1 tablespoon of feta cheese, and add a dash of hot sauce and a teaspoon of chopped fresh cilantro to each.

I have been making this for years, and it is one of my favorite accompaniments to saucy barbecued ribs (or anything similar).

2 cups yellow cornmeal
2 cups flour
2 tablespoons baking powder
2 teaspoons salt
2 eggs
2 cups milk
1 (15 ounce) can cream-style corn
1 (4 ounce) can chopped green chilies
1 cup shredded cheddar cheese, about 4 oz

Steps:

  • Heat oven to 400 degrees.
  • Combine dry ingredients in a large bowl; mix well.
  • Add remaining ingredients, stirring only until dry ingredients are moistened.
  • Pour into a greased 13x9-inch baking pan.
  • Bake for 40 to 45 minutes.
