FIESTA BEEF & CHEESE SKILLET COBBLER

- Preheat oven to 400°. In a 10-in. cast-iron or other ovenproof skillet, cook beef over medium heat until no longer pink, breaking into crumbles, 5-7 minutes; drain. Stir in beans, tomatoes, enchilada sauce and cumin; bring to a boil. Reduce heat; simmer, uncovered, 20 minutes to allow flavors to blend, stirring occasionally. Stir in 2 tablespoons cilantro., In a bowl, combine baking mix, 1/2 cup cheese, bacon and remaining cilantro. Add milk and beaten egg; stir just until a soft dough is formed. Spoon over beef mixture., Bake, uncovered, until golden brown, 13-15 minutes. Sprinkle with remaining cheese; bake until cheese is melted, 2-3 minutes longer. Let stand 10 minutes before serving. If desired, serve with sour cream.

Steps:
- Chop the green pepper. Cut the Velveeta into cubes.
- Brown ground beef in a large skillet; drain well.
- Add tomatoes (undrained) and water and bring to a boil. Stir in pasta and green pepper.
- Reduce heat to medium-low and simmer 15 minutes, until pasta is tender, stirring occasionally.
- Add the Velveeta cubes to the skillet. Cook until melted, stirring frequently.

My husband grew up with this meal and still loves it! Kid-friendly and can add or subract ingredients without losing much flavor. We make this all the time.

- Dissolve the beef boullion cube in the 1 cup of water.
- Brown beef and drain.
- To the beef, add onion, green pepper, seasonings, tomatoes, corn, and bullion with water.
- Bring to a boil.
- Stir in rice and remove from heat.
- Cover.
- Let stand 5 mintues, fluff with fork.

BEEF FIESTA CASSEROLE
I've been making this casserole since my boys were young--it's one of their favorites. It's a great budget dish and perfect for when you need your TexMex "fix"! It also freezes well--I usually make it in two smaller casseroles; one for dinner tonight and one to freeze for later!

- Preheat oven to 375°.
- Grease a 3-quart casserole.
- In a large skillet, cook ground beef over med-high heat until browned; drain.
- Reduce heat to medium; add onion and garlic and cook for about 5 minutes.
- Add tomatoes, tomato paste, chilies, beans, salt, chili powder, cumin and pepper.
- Stir to combine and simmer for about 10 minutes.
- Pour into prepared casserole.
- Add macaroni and mix well to combine all.
- Sprinkle with cheese, add jalapeño slices if desired; cover and bake for 30 minutes.
- Uncover and continue baking for 10 minutes.
