Fiesta Baked Cheese Dip Recipes

FIESTA BAKED CHEESE DIP

Steps:

• Heat oven to 350ºF.
• Beat cream cheese in large bowl with mixer until creamy. Reserve 1/4 cup shredded cheese. Add remaining shredded cheese to cream cheese along with the chiles, 1/2 cup sour cream and ground red pepper; mix well.
• Spread cream cheese mixture onto bottom of 2-qt. casserole sprayed with cooking spray.
• Bake 20 min. or until dip is heated through and lightly browned around edge. Top with remaining sour cream, reserved shredded cheese, chopped bell peppers and cilantro before serving.

DELICIOUS BAKED MEXICAN SPINACH FIESTA DIP

Steps:

• 1. Preheat oven to 400 degrees. In a 10" skillet, cook onion in oil until tender. Add 2/3 of the chopped tomatoes and all of the jalapeno peppers; cook 2 minutes more. Transfer mixture to large bowl. Stir in spinach, 2 cups Monterey Jack cheese, cream cheese, half and half, olives, vinegar, salt and pepper. Mix well.
• 2. Spoon into a 1 1/2-2 qt. baking dish. Bake about 35 minutes or until hot and bubbly. Top with remaining Monterey Jack cheese, chopped fresh tomato and freshly chopped cilantro or parsley.
• 3. Serve with tortilla chips and/or fresh veggies to dip. (I like to serve a platter with red, yellow, orange and green peppers along with tortilla chips.)

FIESTA DIP

Steps:

• Combine all ingredients.
• Chill for 2 hours.
• Serve with tortilla chips.
• Makes approximately 3 cups of dip.

BAKED CHEESE FIESTA DIP

Steps:

• Beat cream cheese till light and fluffy.
• Stir in all other ingredients and mix well.
• Spray a 10-inch pie plate or quiche dish with cooking spray.
• Bake about 30 minutes at 350° until edges are lightly browned.

FIESTA BAKED CHEESE DIP

Steps:

• Beat cream cheese in large mixing bowl with electric mixer on medium speed until softened. Reserve 1/4 cup shredded cheese for garnish. Add remaining shredded cheese, chilies, 1/2 cup of the sour cream and ground red pepper to cream cheese; mix well.
• Spoon into 10-inch pie plate or quiche dish.
• Bake at 350 degrees F for 20 minutes or until lightly browned around edge. Spread remaining 3/4 cup sour cream over baked cheese spread. Sprinkle with reserved 1/4 cup shredded cheese. Garnish with bell pepper cut-outs, if desired. Serve with tortilla chips.
