Serve this delicious and "Oh So Spicy" shrimp dish with baguettes of hot French bread, generous napkins and a bowl for the shrimp shells. Truly a feast to enjoy and finger licking good. This came from a newspaper probably 15 years ago!

1/2 lb butter, melted
1/2 lb margarine, melted
3 -4 fluid ounces Worcestershire sauce (3/8 to 1/2 cup)
4 tablespoons ground black pepper
1 teaspoon ground rosemary
2 teaspoons Tabasco sauce
2 teaspoons salt (sea salt, is best)
3 minced garlic cloves
4 lemons, 2 juiced and 2 sliced
5 -6 lbs raw shrimp, in their shells

Steps:

  • Preheat oven to 400 degrees.
  • In a bowl, mix all the ingredients, except the lemon slices and the shrimp.
  • Pour about 1/2 cup sauce to cover the bottom of a large baking dish and then arrange layer of shrimp and lemon slices until you come almost to the top of the dish.
  • Leave about 1" of headroom.
  • Pour the remaining sauce over the shrimp and lemon slices.
  • Bake uncovered, stirring once or twice until the shrimp are cooked throughout, about 15 to 20 minutes.

4 pounds tiger prawns
2 cups extra-virgin olive oil
2 ounces Cajun seasoning

Steps:

  • Marinate the prawns with the olive oil and Cajun seasoning. Let sit for about 10 minutes. Place on a hot grill and cook until just pink and opaque. Serve immediately.

1 1/2 pounds large shrimp, peeled and deveined
6 tablespoons Essence, plus more for garnish, recipe follows
2 tablespoon extra-virgin olive oil
10 ounces andouille sausage, chopped
1/2 medium onion, minced
1 1/2 teaspoons crushed red pepper flakes
5 cloves garlic, minced
3 shakes Worcestershire sauce
1 pound linguine
2 cups heavy cream
1 cup whole milk
1 tablespoon freshly ground black pepper
1/2 teaspoon hot chili powder
1/2 teaspoon kosher salt
1/2 cup (1 stick) unsalted butter, sliced
1 1/2 cups grated Parmigiano-Reggiano
Chopped fresh flat-leaf parsley, for garnish
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Steps:

  • Place the shrimp and 3 tablespoons Essence in a large resealable plastic bag and shake. Place the bag in the refrigerator while you prepare the sauce.
  • Heat a deep 3-quart skillet over medium-high heat. Add 1 tablespoon olive oil and the andouille sausage. Saute sausage for 2 minutes, stirring often. Add onions and saute for 2 minutes. Add crushed red pepper flakes and garlic and cook 1 minute. Add Worcestershire sauce.
  • Meanwhile, cook the pasta in boiling salted water according to package instructions.
  • To the skillet, add cream, milk, remaining Essence, black pepper, chili powder, and salt. Stir to a consistent color. Add butter and stir until melted. Stir in cheese until melted. Lower heat to a simmer.
  • Heat the remaining olive oil in another large skillet over high heat and add the shrimp. Saute shrimp for 1 to 2 minutes per side or until they just start to turn pink. Add the shrimp and cooked, drained pasta to the first skillet. Stir to combine and blend flavors, about 1 minute.
  • Serve in a large pasta bowl. Sprinkle with parsley and Essence for garnish.
  • Combine all ingredients thoroughly.

1/2 teaspoon kosher salt
2 teaspoons purchased Cajun seasoning OR 1 1/2 tablespoons homemade Cajun seasoning
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
2 tablespoons olive oil

Steps:

  • Pat the shrimp dry. In a medium bowl, mix the shrimp with ½ teaspoon kosher salt, the Cajun seasoning, garlic powder and onion powder.
  • In your largest skillet* (cast iron or stainless preferred), heat the olive oil on medium high heat. Add the shrimp and cook for 1 to 2 minutes per side until just opaque and cooked through, turning them with tongs. Once cooked through, serve immediately.
