FIERY PINEAPPLE CHUTNEY

Fiery Pineapple Chutney image

Part of the pineapple is pureed to make it into a sweet tart syrup, then cooked with chunks of pineapple, cayenne and black pepper to add a nice kick of heat. Great in curries and with salmon and rice. From the Fields of Greens cookbook, and inspired by Julie Sahni.

Provided by Sharon123

Categories     Chutneys

Time 50m

Yield 2 cups

Number Of Ingredients 12

1 large pineapple
3/4 cup sugar
1 1/2 teaspoons ground cumin
1/4 teaspoon cinnamon
1/4 teaspoon cayenne pepper
1/4 teaspoon black pepper
1 teaspoon grated fresh ginger
1 teaspoon salt
1 lemon, juice of
1 -2 jalapeno chile, seeded, finely diced (or you can use serranos for more heat)
1/4 medium red onion, finely diced (about 1/2 cup)
1 teaspoon of fresh mint, chopped

Steps:

  • Peel and core pineapple, cut into small pieces.
  • Puree 2 cups of it and set the rest aside.
  • Combine the puree, sugar, spices, ginger, salt and lemon juice in a medium saucepan. Bring the mixture to a boil, then cook over medium heat for 5 minutes, stirring as needed, to make a pineapple syrup. Add the pineapple chunks, chilies, and red onion; reduce the heat a little and cook over medium low heat for 25 minutes.
  • The puree and the pineapple chunks will blend together with the chunks retaining some of their texture.
  • Move the chutney to a bowl and let it sit for 1-2 hours before serving.
  • It will keep for at least a week in the refrigerator but don't add the mint until your'e ready to serve it. Enjoy!

  • Arrange racks in the middle and lower third of oven. Preheat oven to 375ºF (190ºC). Stir together chili powder, paprika, coriander, pepper, brown sugar, red pepper flakes, cayenne and salt. Rub all over ham. Set ham in foil-lined roasting pan; place on middle rack. Loosely tent ham with foil. Bake 1 hr. 30 min. Remove foil. Brush packet of honey glaze (included with ham) over the ham. Continue baking, uncovered, 25 to 30 min. until glaze caramelizes and meat thermometer inserted into thickest part registers 160°F (71°C).
  • Meanwhile, after ham has baked 1 hr., brush cut-sides of squash with 1 tbsp (15 mL) oil and season with 1/4 tsp (1 mL) each salt and pepper. Place cut-side down on large parchment paper-lined baking sheet. Roast 1 hr. on lower rack until flesh is tender when pierced with a fork. When squash has been in oven for 30 min., toss cauliflower with 2 tbsp (30 mL) oil, thyme, garlic and remaining salt and pepper. Spread onto baking sheet with squash. • Remove cooked squash from baking sheet. Using a fork, gently scrape out squash strands. Discard skin. Toss squash strands with walnuts, parsley and remaining oil. Keep warm.

  • Peel the onions and chop.Using a large heavy pan, heat the oil then add the onions and cook until they become transparent. Make sure you don't let the onions brown as this will result in a bitter taste.
  • Add the remaining ingredients to the pan. Stir to combine and leave to boil on a medium heat for 30 minutes stirring occasionally to ensure nothing sticks to the bottom of the pan.
  • After 30 minutes, turn the heat down and let the chutney reduce down until it becomes a thick jam like consistency. This should take between 1 1/2 to 2 hours. Stir every now and again to prevent sticking to the bottom of the pan. When the chutney has reduced enough so it is thick (like jam), you can use a potato masher to mash it down or if you like the texture lumpy, leave as it is. I have mashed mine (in the photo above) until it is only slightly lumpy.
  • If you are going to use the chutney within the next few days, it will keep nicely in the fridge once cooled, in an air tight container.
