This is such an easy recipe, but so tasty. I used to put it on the menu of the gastro pub where I worked-people used to phone us to see if it was on and reserve portions! Even my Pops loves this and he is impossibly critical!Hope you enjoy!!

4 -6 boneless skinless chicken breasts
1 teaspoon chili powder
1 1/2 teaspoons garam masala
1 teaspoon minced garlic
3 tablespoons tomato puree
2 tablespoons Greek yogurt
2 tablespoons chopped fresh coriander
2 tablespoons mango chutney
1 teaspoon salt
1/2 teaspoon sugar
4 tablespoons oil
2 green chilies, chopped
2 tablespoons single cream

Steps:

  • Blend together the tomato puree, yoghurt, garam masala, chili powder, garlic, mango chutney, salt and sugar.
  • Heat oil and add tomato mixture-cook for approx 2 minutes-stirring occasionally.
  • Add chopped chicken and a little cold water,and continue to cook until chicken is cooked through, stirring occasionally.
  • Add chilies, coriander and cream, stir in well and cook for a few minutes more. If the sauce is a little thick just add water to achieve your preferred consistency.
  • Serve with boiled rice and/or naan bread.
  • N.B-This freezes well-sometimes I just make the sauce up and freeze little tubs of it.

Baltis became the rage in the 70s even though they originated in Pakistani and Kashmiri neighborhoods of Birminghood, and are now considered a national English dish due to their popularity.

1 tablespoon butter
2 tablespoons sunflower oil
1 cinnamon stick
1 teaspoon ground cumin
1 teaspoon garlic, finely chopped
3 medium onions, peeled and finely chopped
1 teaspoon fresh gingerroot, finely chopped
1 plump green chili pepper, deseeded and finely chopped
500 ml passata (sieved tomatoes, 17 oz.)
900 g boneless skinless chicken breasts, cut into large cubes (2 lb.)
1/2 teaspoon hot chili powder
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1 teaspoon curry powder
1/2 teaspoon garam masala
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper, coarsely ground
1 tablespoon fresh lemon juice
100 ml just-boiled water (7 tablespoons)
1 tablespoon tomato puree
fresh coriander, to garnish

Steps:

  • Melt the butter with the oil in a large saucepan and fry the cinnamon and cumin for a few seconds.
  • Add the onions and cook until golden brown, stirring regularly.
  • Stir in the garlic, ginger and chili pepper and cook for 2-3 minutes, stirring.
  • Stir in the tomatoes and cook until the oil separates from the onions.
  • Add the chicken pieces and cook in the sauce until the meat is colored and sealed on all sides.
  • Sprinkle over the chilli powder, cumin, coriander, curry powder, garam masala, salt and pepper.
  • Stir in the lemon juice then add the water and tomato puree.
  • Bring the curry to a gentle simmer and cook for about 45 minutes or until the chicken is tender, stirring occasionally. Alternatively, spoon carefully into a large casserole dish and cover. Cook in the center of a preheated oven at 350F/180C/Gas 4 for 45 minutes.
  • Garnish with lots of fresh coriander.

A really tasty home made curry that is not too difficult with the spices etc. It comes out just perfect! Just as good as any curry house, if not better. Get the poppadoms and chutney's out if you have them and serve with rice and naan bread. Make the full batch and only put leftovers in the freezer after it has sat for 24 hours. Still tastes great on day of preparation but leaving until the next day takes it to the next level

4 chicken breasts, cut into bite size pieces
2 medium onions, chopped into half rings
1 bell pepper, chopped into strips
1 tablespoon cooking oil
3 tablespoons butter
4 -6 tablespoons balti curry paste (I use half a jar of pataks brand)
4 garlic cloves, crushed
2 inches piece gingerroot, grated
1 (14 ounce) can chopped tomatoes (400g)
1 large apple, grated
2 tablespoons cinnamon
1 tablespoon ground cumin
3 cardamom pods
2 bay leaves
1 tablespoon garam masala
1 chicken stock cube (I like knorr stockpot)
50 g of solid coconut cream, grated (around 1/4 of a block)
1/2 pint milk
1 large handful fresh coriander, leaves and stalks- chopped (cilantro)
salt
black pepper

Steps:

  • Melt the butter in a pan and add the oil, brown off the chicken quickly and reserve to 1 side. Now fry the onions and peppers over a medium heat in the remaining oil until just starting to brown.
  • Add the curry paste and fry off for at least 2 minutes before adding the garlic and ginger and frying for a further 1-2 minutes.
  • Add the chopped tomatoes to the pan stirring well along with the cinnamon cumin, cardamom, bay and garam marsala. Boil down for around 3-5 minutes.
  • Mix the stock cube with 1/2 pt boiling water and add to the pan along with the coconut cream and the milk, bring to the boil and add the reserved chicken and the grated apple.
  • Cook for 30 minutes over a low/medium heat.
  • Taste and adjust seasonings adding salt and plenty of black pepper, take off the heat and throw in the coriander, allow to sit for 15 minutes before serving.

Entered for ZWT. Balti is an curry style associated with Birmingham, England, and is associated with England, although it originated in the Pakistani and Kashmiri communities in the 1970s. The Balti Triangle is a concentration of 50 Balti restaurants in Birmingham. This recipe is endorsed by the Birmingham City Council. A balti curry is a curry cooked over a high flame with spiced fresh meat and/or vegetables then cooked again with extra spices and served in the traditional round-bottomed balti dish (similar to a Japanese danobe or a flat-bottomed wok). Birmingham has balti cook-offs just as the U.S. loves its chili cook-offs. In June 2012, a collection of Indian restaurants in Birmingham have teamed up to have the ingredients of the Balti dish protected by EU legislation. Palm sugar can be found in the Thai food section. Serve piping hot in balti dishes with naan breads on the side.

1/2 teaspoon mustard seeds, crushed
1 teaspoon garam masala
4 dried curry leaves, crushed
1 teaspoon palm sugar
1 teaspoon ground coriander

1 teaspoon nigella seeds (aka black cumin or black caraway)
3 green chilies, chopped
4 cardamom pods, split
1 tablespoon peanut oil or 1 tablespoon sunflower oil
1 onion, finely chopped
1 garlic clove, minced
1 cm fresh ginger, peeled and grated - 1/2 inch
2 large chicken breasts, cut into bite-sized pieces
250 ml vegetable stock (8 1/2 oz.) or 250 ml chicken stock (8 1/2 oz.)
1 teaspoon tomato puree
1 pinch salt (or more to taste)
1 bay leaf
2 tablespoons fresh cilantro or 2 tablespoons fresh coriander, chopped
1 large tomatoes, sliced

Steps:

  • First assemble the spices: mustard seeds in one small bowl, the rest can be mixed together in another bowl. Put the onion in one bowl. Put the garlic and ginger in another small bowl.
  • To begin the curry, heat the oil in a large pan. Once hot but not smoking, add the lightly crushed mustard seeds, cook for 30 seconds only, beware they may pop and spit out of the pan.
  • Add the chopped onion, lower the heat and cook for approx 3-5 minutes until soft but not colored.
  • Then, add all the spices plus the garlic and ginger. Cook on a medium heat taking care to ensure the spices don't burn.
  • Add the chicken, stirring well to make sure all the chicken is coated in the spices. Cook for 10 minutes stirring occasionally to make sure the chicken or spices are not burning.
  • Finally, add the stock, the tomato purée, a small pinch of salt and the bay leaf. Stir again and then lower the heat. Cook gently for 25 minutes until the chicken is cooked through and tender.
  • Finally add the cilantro/coriander and tomato, stir and cook for a further 3 minutes.

3 tablespoons tomato puree
2 tablespoons plain yogurt
1 teaspoon garam masala
1/2 teaspoon chili powder
2 cloves garlic, crushed
2 tablespoons mango chutney
1 teaspoon salt
1/2 teaspoon sugar
4 tablespoons cooking oil
3/4 kg chicken, skinned and diced
150 ml water
1 -2 green chili
2 tablespoons chopped fresh coriander
2 tablespoons whole milk

Steps:

  • Blend together tomato puree, yogurt,garam masala, chilli powder, garlic, mango chutney, salt and sugar.
  • Heat oil in a karahi or wok then add mixture.
  • Lower heat and cook for two minutes,stirring occasionally.
  • Add the chicken and stir until it is well coated in the mixture then add the water.
  • Continue cooking for about 5- 7 mins until the chicken is tender.
  • Stir from time to time.
  • Add green chillies, chopped coriander and milk, stir in and cook for another two minutes.
  • Serve with rice or warm Indian breads.

1/2 onion, chopped
1/4 teaspoon mustard seeds
1 (14 1/2 ounce) can diced tomatoes

Steps:

  • Heat oil over medium heat.
  • Add onions and mustard seeds, cook until they begin to soften.
  • Add garlic, stir, cook about 1 minute.
  • Add chicken and begin to brown.
  • Add tomatoes (include the sauce).
  • Add all spices except fresh coriander.
  • Add water if needed, it should not cover the chicken, but can be used to keep the dish from burning. You want the dish to be about the consistency of spaghetti sauce at the end of cooking.
  • Cook 5 minutes or more- until chicken is fully cooked yet still tender.
  • Serve over rice, sprinkle with coriander.
