Homemade Sopa de Fideo (Mexican noodle soup) - Thin noodles in a tomato chicken broth served with a squirt of lime. Mexican lunchtime comfort food in the way that grilled cheese and tomato soup is, warm fuzzies in a bowl. It's an easy and quick Mexican soup that you will make again and again. Also called, Sopita de Fideo

8 ounce package of "fideo" noodles (thin spaghetti, vermicelli, or angel hair pasta work well )
2 plum tomatoes (Roma tomatoes)
1 clove garlic
¼ medium white onion
¼ ground cumin (optional to add to broth)
½ tsp. Mexican oregano (optional to add to broth)
4 limes
1 ripe avocado sliced thin (optional for garnish)
8 cups homemade chicken broth
3 tbsp. vegetable oil (or olive oil)
Salt to taste (about 1tsp. will be needed depending on the chicken broth you use)

Steps:

  • Cut the tomatoes in half and remove the seeds. Puree the tomatoes, onion, and garlic and set aside.
  • Preheat 3 tbsp. of vegetable oil to medium-hot. Add the noodles and stir to coat with oil. Continue stirring until the noodles have started to brown.
  • Strain the pureed tomatoes, onion, and garlic into the noodles. Notice the color of the noodles. Some of them should be very brown. The browned noodles add depth of flavor to the soup.
  • Add the chicken broth and stir.
  • Bring the soup to a boil. Cover and reduce to low heat. Cook for 10 minutes.
  • Check the salt and adjust to taste before serving.
  • Serve your soup with a couple of lime halves. A squirt of lime brings the flavors together. A little chopped avocado is a nice touch.

7 ounces dry angel hair fideo, uncooked
1 medium poblano or green bell pepper, seeded, chopped
1 small jalapeno or Serrano pepper, seeded, chopped
1/2 cup chopped onion
6 cloves garlic, finely chopped
1 can (8 oz each) Hunt's® Tomato Sauce
6 cups water
2 tablespoons caldo con sabor de pollo (chicken bouillon)
2 cups shredded cooked chicken
1/4 teaspoon Sazon seasoning
2 tablespoons chopped fresh cilantro

Steps:

  • Heat oil in large saucepan over medium-high heat. Crush fideo; add to saucepan and stir to coat with oil. Cook 2 minutes or until browned, stirring constantly. Add peppers, onion and garlic; cook 5 minutes or until vegetables are tender, stirring occasionally.
  • Stir in tomato sauce, water and bouillon. Reduce heat to medium-low, cover and simmer 10 minutes or until pasta is tender. Stir in chicken and seasoning. Sprinkle with cilantro.

I've been to many Mexican restaurants and they seem to always give you a small cup of Sopa de Fideos (noodle soup) before the meal. This can easily be made at home with just a few ingredients. This is my version of this tasty Mexican noodle soup.

1 (14.5 ounce) can diced tomatoes
1 small onion, chopped
1 large clove garlic, coarsely chopped
2 tablespoons olive oil
1 (7 ounce) package fideo pasta, uncooked
3 (14.5 ounce) cans chicken broth
freshly ground black pepper to taste
coarse salt to taste
1 tablespoon chopped fresh cilantro

Steps:

  • Place the tomatoes, onion, and garlic into a blender, and pulse several times to get the mixture moving; blend until smooth, 30 seconds to 1 minute.
  • Heat the olive oil in a skillet over medium-low heat, and stir in the pasta. Fry the pasta gently, stirring often, until the pasta is golden brown, 2 to 5 minutes. Remove from heat.
  • Pour the tomato mixture into a large saucepan, and stir in chicken broth and noodles. Bring to a boil, and reduce heat to medium low; simmer until the noodles are tender, 7 to 8 minutes. Season to taste with salt and black pepper, and stir in the cilantro; simmer 2 more minutes to cook cilantro.

This fideo recipe was given to me by my mother in-law. It goes great with any meat dish including carne asada. I use this recipe in place of rice as my side dish.

2 tablespoons vegetable oil
1 (8 ounce) package fideo pasta
½ teaspoon ground cumin
½ teaspoon garlic salt
1 (8 ounce) can tomato sauce
1 tablespoon chili powder
1 ½ cups water

Steps:

  • Heat oil in a saucepan over medium-high heat. Add the fideo, and fry until browned. Pour in half of the can of tomato sauce, and 1 cup of the water. Season with cumin, garlic salt and chili powder, and stir to blend. Bring to a boil, and cook until the liquid has almost evaporated.
  • Stir in the remaining tomato sauce and water. Cover, and cook over medium heat for about 10 minutes, or until the fideo is tender, and the sauce has thickened.

Calabacita is a classic Tex-Mex dish that is slightly different everywhere you find it. This is my version.

Number Of Ingredients 12

2 tablespoons shortening
3 lbs pork chops, boned and cubed
3 -4 serrano chilies, to taste
1 large onion
2 teaspoons whole comino
4 cloves garlic
1/3 cup flour
3 lbs squash, sliced,large slices quartered (yellow or zucchini or Mexican squash)
1 can whole kernel corn, including liquid
2 cans Rotel diced tomatoes
2 teaspoons salt
1 teaspoon black pepper

Steps:

  • Heat shortening in Dutch oven; fry pork cubes in batches until browned.
  • Return all pork to pan.
  • Place chilies and onion in food processor container and process until chopped (or chop together by hand).
  • Slice garlic and place with cominos and salt in a mortar and pestle and grind together.
  • (The garlic and cominos and salt can be chopped in the food processor with the chilies and onion, but grinding it gives it more flavor).
  • Add all vegetables to pan with pork and cook over high heat until onion is transparent.
  • Sprinkle flour over pork and vegetables and stir to combine.
  • Cook a few minutes to remove the raw taste of the flour.
  • Add all remaining ingredients plus about 1 tomato can of water--enough so that pork and vegetables are not quite covered with liquid.
  • Bring to a boil, then reduce to a simmer and cover with a lid.
  • Cook at a simmer for about 2 hours, stirring occasionally, checking periodically and adding more water if necessary.

1 (10 ounce) package vermicelli (Fideo or the stars-which is what i used in the pics)
1 (12 ounce) can tomato sauce
2 -3 teaspoons red pepper flakes (optional)
1 -2 garlic clove, minced
1 teaspoon cumin
1/2 cup oil (for frying)
8 cups water (may add more, if needed)
1 1/2 chicken bouillon cubes
1 1/2 cups cooked pork chops, sliced thinly

  • 1.In a boiling pan heat oil, once warm add fideo, garlic, cumin & red pepper flakes. Stir constantly, until fideo turn golden brown.
  • 2.Once this is brown add water and tomato sauce. Stir often until the fideo is soft. You may need to add more water, to get to soup consistency because the noodles will absorb some of the water.
  • 3. Then if you have left over chicken or pork chops heat them, cut them into thin slices and place with soup.
  • 4.Serve with tortillas, sour cream & limes. Enjoy!

Steps:

  • Add oil to a medium pot and cook on LOW-MEDIUM heat. Add fideo and cook until noodles are coated in oil and have started to brown.
  • Add tomato sauce and broth and bring to a boil. Then reduce to LOW and simmer for 8-10 minutes or until noodles are soft.
  • Add cheese, salt and pepper and stir until combined. Serve warm.
