FABULOUS FIBER PIE CRUST
My son is diabetic. This crust is sugar free easy and delicious substitute for graham cracker crusts. It's also a good way to get fiber in your diet which is a must with diabetes. It even smells good when baking!

Steps:
- Whisk together flour and salt.
- Cut the lard into the flour with a pastry blender or 2 knives until the lard is pea sized lumps within the flour.
- In a 1 cup liquid measuring cup, combine the vinegar and beaten egg. Add enough ice water to bring it to one full cup of liquid.
- Gradually stir the liquid into the lard mixture, adding only enough liquid to make dough cling together.
- Gently gather the dough into a ball and divide into 6 equal portions.
- Wrap the portions and refrigerate for 15-30 minutes (if you are using right away) or freeze for future use.
- When you are ready to use and the dough has chilled for at least another 15 minutes, roll out each portion on a lightly floured surface. If the dough is sticking, chill again for another hour or two. The dough must be cold to be flaky!
- Transfer the prepared dough to pie plate.
- Trim and flute shells or crusts and bake according to your pie recipe. Yield: 3 9-inch double crust pies or 6 pie shells.

Steps:
- Preheat oven to 475°F.
- Mix together all of the ingredients. Stir with a fork until thoroughly mixed. Do not over-work the dough.
- Shape this mixture into a ball and place it between two pieces of wax paper that have been dusted with flour. Roll the pastry into a circle large enough to fit in a 9-inch pie pan.
- Spray pan with a non-fat cooking spray and Arrange crust in pan. Cut off the edges that hang over.
- Prick the bottom with a fork and brush over with a little bit of beaten egg white. Bake 10 minutes or until golden brown. Cool before adding filling.
- It's probably a good idea to prebake it before using it in almost any recipe.
- Note: If you are making a pie where the filling needs to be cooked with the shell, simply bake at 350°F for 45 minutes or however long the recipe calls for. Work foil over edges while baking so the crust won't get overbrown. Remove foil for the last five minutes.
FIBER ONE PIE CRUST
This is a great alternative to a graham cracker crust that packs about 25% less calories. I've been using this versatile cereal in a lot of applications, and this is one of my favorites.

1-1/2 INGREDIENT FIBER CRUST
This has the TASTE and the TEXTURE of a graham cracker crust, but without the fat and calories and with necessary fiber. It's absolutely delish! Feel free to use more cereal if you prefer thicker crusts. The recipe is more than EASILY adaptable! Use for cheesecakes, pies, quiches, whatever requires a crumb crust!
