My fett'unta has always been the showstopper of my Italian meal. All I do is grill thick loaves of bread, rub them with garlic and drown them in olive oil. Since the olive oil is the star of this recipe, I will teach you how to choose the finest. The careful choice of ingredients is what really makes this simple fett'unta the perfect addition to any meal.

8 slices rustic, crusty white bread, in 2-inch slices
1 1/2 cups extra-virgin olive oil, plus additional for brushing
3 cloves garlic
Sea salt, preferably Maldon brand

Steps:

  • Prepare a hot fire in a gas or charcoal grill, if using, or preheat a grill pan or heavy-bottomed skillet over high heat. Brush the bread slices liberally on both sides with olive oil. Place the bread on the grill or in the grill pan and cook until it is crispy and golden brown, almost black in places, about 2 minutes per side.
  • Rub garlic cloves on both sides of each piece of toast; then liberally pour olive oil over one side (about 3 tablespoons per piece). Season the oiled side generously with sea salt. Cut the bread on an angle into halves or thirds and serve.

4 large slices of Tuscan-style or dense country bread
2 cloves garlic, halved, for rubbing
1 cup extra-virgin olive oil, best available
Salt

Steps:

  • Toast the Tuscan bread on a hot BBQ grill.
  • While the slices are still hot, rub the garlic halves on the toasted bread.
  • Generously drizzle the extra-virgin olive oil over the toasted bread. Season with a generous amount of salt. Serve hot.

GRILLED BREAD WITH PROSCIUTTO



Grilled Bread with Prosciutto image

6 slices good Tuscan round bread, sliced 3/4 inch thick
1 large garlic clove, cut in half
Good olive oil
2 ounces thinly sliced prosciutto (torn in pieces, if desired)
2 ounces fresh smoked mozzarella, grated
3 tablespoons minced fresh parsley
Kosher salt and freshly ground black pepper

Steps:

  • Prepare a charcoal grill with medium-hot coals or turn a gas grill to medium-high heat.
  • Grill the bread for 2 minutes, until golden on one side. Place the bread grilled side up on a platter and immediately rub the cut side of the garlic clove over the surface of the bread. For really garlicky fettunta, rub hard. Drizzle a tablespoon of olive oil over each slice of bread.
  • Place the torn prosciutto over the grilled side of the bread and top with the grated mozzarella. Return the bread to the hot grill, cover the grill, and cook for 1 to 2 minutes-just long enough to melt the cheese and rewarm the toast. (Be sure the vent is open so the fire doesn't go out!) Drizzle with a little more olive oil, sprinkle with parsley, salt, and pepper, and serve hot.

CAMEMBERT & PROSCIUTTO TARTINES

6 to 12 (1/2-inch-thick) slices from a round rustic country bread, depending on the size of the loaf
2 (8-ounce) Camembert cheeses
12 to 15 thin slices Italian prosciutto
1/4 teaspoon dried thyme
Kosher salt and freshly ground black pepper
Minced fresh chives, for serving

Steps:

  • Preheat the broiler. Position an oven rack 5 to 6 inches below the heat.
  • Lay the slices of bread in one layer on a sheet pan. Slice both Camemberts 1/3 inch thick across, making about 12 slices from each. Place the cheeses on the bread in a single layer, cutting them to fit and covering most but not all of the surface of the bread. Cover the bread and cheese completely with a layer of prosciutto, sprinkle with the thyme, then sprinkle with salt and pepper.
  • When the broiler is hot, place the sheet pan on the prepared rack and broil the tartines for 2 to 3 minutes (leaving the oven door slightly ajar), turning the pan once to brown evenly, until the prosciutto is browned and crispy. Watch the tartines carefully so they don't burn! Cut each tartine crosswise into 1 1/2-inch slices, sprinkle with chives, and serve warm.

ITALIAN FLATBREAD (PIADINA) WITH FONTINA AND PROSCIUTTO

You can top a piadina with anything you like. This sauceless combination is very typical of northern Italy, where piadini are especially popular."

3 1/2 cups all-purpose flour, plus extra for dusting
1/2 teaspoon baking soda
1 teaspoon fine sea salt, plus extra for seasoning
1 stick butter, cut into 1/2-inch pieces, at room temperature
2 tablespoons extra-virgin olive oil
1 pound whole milk ricotta cheese
2 teaspoons lemon zest (from about 2 small lemons)
Freshly ground black pepper
6 ounces fontina cheese, shredded (about 2 cups)
4 ounces prosciutto, thinly sliced-
1 cup chopped fresh basil

Steps:

  • Combine the flour, baking soda, and 1 teaspoon of salt in the bowl of an upright mixer fitted with a dough hook attachment. Add the butter and mix on low speed until incorporated, about 2 minutes. With the machine running, slowly add 10 to 12 tablespoons water until the mixture forms a dough around the hook. Transfer the dough to a lightly floured work surface and knead for 5 minutes until smooth. Cut the dough into 4 equal pieces. Form into disk shapes and wrap in plastic wrap. Refrigerate for 30 minutes.
  • Place a grill pan over medium-high heat or preheat a gas or charcoal grill. On a lightly floured work surface, roll out each piece of dough into an 8 to 10-inch circle, about 1/8-inch thick. Brush each circle with the extra-virgin olive oil and grill for 4 minutes each side. Remove the piadina from the grill to cool slightly. Combine the ricotta cheese and lemon zest in a small bowl. Season with salt and pepper. Spread each piadina with 1/2 cup of the ricotta mixture. Sprinkle the fontina cheese evenly over the ricotta cheese. Arrange 2 prosciutto slices on top of the cheeses. Cut each piadina into 8 wedges and transfer to a serving platter. Garnish with the chopped basil.
