Steps:
- Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs for al dente, adding the spinach during the last 30 seconds of cooking. Reserve 1 cup cooking water, then drain the pasta and spinach.
- Meanwhile, melt the butter in a large skillet over medium heat. Add the heavy cream, nutmeg, lemon zest and 1/2 teaspoon salt. Increase the heat to medium high and bring the liquid to a simmer. Add the pasta and spinach and toss until coated, about 1 minute. Stir in the cheese and season with salt and pepper. Stir in enough of the reserved cooking water to loosen the sauce.
- Remove from the heat and immediately stir in the pesto. Divide among bowls; top with pepper and more parmesan.

- Heat the oil in a heavy skillet over medium-high heat. Saute onion and garlic until soft, about 10 minutes. Add roasted peppers and saute until heated through. Remove from heat and let cool slightly. Place mixture in the bowl of a food processor with stock and all but 2 tablespoons of the feta. Process until combined and smooth, about 30 seconds. Cook pasta according to package directions. Drain, reserving 1/2 cup pasta water. Toss pasta with sauce, adding pasta water by the tablespoon, if needed. Sauce should cling nicely to pasta. Season with salt and pepper, to taste. Divide among pasta bowls. Sprinkle with parsley and remaining feta cheese.

- Place zucchini in a colander, toss with salt and set aside to drain in sink or over a bowl 30 minutes. Meanwhile, heat 3 tablespoons oil in a heavy sauté pan, add onion, pine nuts and garlic and sauté over low heat about 10 minutes, until onion is soft and nuts start to brown. Rinse and drain zucchini and add to pan. Sauté about 20 minutes, until tender.
- Bring large pot of salted water to a boil for pasta, cook pasta about 3 minutes and drain, reserving about 1 cup pasta water. Add pasta to sauté pan, cook over low heat about 5 minutes, to blend ingredients, adding pasta water as needed. Season with salt and pepper. Fold in parsley, cheese and additional olive oil and serve.

- Cook pasta in a large pot of boiling water until al dente. Drain.
- While the pasta is cooking, prepare the vegetables. In a large skillet, heat oil over medium heat. Add onion, garlic, zucchini and peppers; saute 5 minutes. Add tomatoes, salt, and cayenne pepper. Cook over low heat 5 minutes, or until vegetables are crisp tender.
- Pour vegetables over hot pasta.

- Set a large pot of salted water to boil. In a large skillet, heat oil over medium-high. Add onion and garlic; season with salt and pepper. Cook, stirring occasionally, until onion softens, 3 to 4 minutes. Add pork and beef; cook, breaking meat up with a spoon, until no longer pink, 2 to 3 minutes. Add wine; cook until evaporated, about 7 minutes. Add tomatoes, oregano, and red-pepper flakes; cook until sauce is slightly thickened, 2 to 3 minutes.
- Cook pasta in boiling water until al dente, according to package instructions. Drain, and return to pot; add meat sauce, and toss to coat. Serve immediately, topped with Parmesan, if desired.

- Drop fettuccine into boiling water with salt added. Cook to desired degree of tenderness, 4 to 5 minutes for fresh pasta and about 9 minutes for dried.
- Bring cream to simmer.
- Drain pasta immediately and return to kettle. Add pepper and butter and toss until butter is melted. Add cream and cheese and stir gently to blend.

FETTUCCINE WITH WHITE SAUCE
I got this recipe from a friend. In addition to being a wonderful sauce for pasta, this white sauce is a great basic recipe to use with seasonal vegetables such as zucchini. This sauce is also perfect for adding shrimp or scallops. Spring onions are used in this recipe as they tend to be milder in taste than other onions. Although this recipe calls for fresh garlic, minced garlic may also be used. One teaspoon of minced garlic equals 2 cloves. Since this is a white sauce, it does NOT need cheese. The pasta should be added to the sauce, not the sauce to the pasta. Please note that some ingredients used in my recipe are approximations and more spices may be needed depending on individual taste. - Cook fettuccine to al dente, consult package directions for cooking time.
- Add half of the stick of butter to large saucepan.
- Fill bottom of saucepan with olive oil and stir butter and oil over medium-high heat.
- Add garlic to butter and olive oil.
- Add anchovies and cook down.
- Stir in chopped peppers.
- Add onions and mushrooms and stir well.
- Add more olive oil to saucepan to wet all the vegetables.
- Add second half of butter.
- Add white wine and stir well.
- Sprinkle salt over sauce, I use about three sprinkles.
- Add oregano, I add three dashes.
- Grate fresh ground black pepper over sauce.
- Drain pasta and add to sauce.

FETTUCCINI TOMATO RUSTICA I
I was inspired to make this dish after tasting something similar at an Italian restaurant in Ontario. It is a different type of pasta, having a great deal of flavour from the roasted pepper and sun-dried tomato, as well as being slightly dry from the cheese. I'm a picky eater and I love this dish!

- In a small bowl, combine olive oil, garlic, sun-dried tomatoes, red pepper and basil. Marinate 4 hours.
- Preheat oven to 250 degrees F (120 degrees C). Bring a large pot of lightly salted water to a boil. Add pasta, and cook for 8 to 10 minutes, or until al dente; drain. Toss pasta with marinade until evenly coated. Spread into a baking dish.
- Bake in preheated oven for 1 hour. Divide onto plates, top with grilled chicken, and sprinkle with goat cheese.

- Cut ham into small chunks.
- Melt butter in a medium frying pan.
- Add shallots& ham and cook until golden.
- Season with salt& pepper, to taste.
- Stir in the cream and keep warm over low heat while the pasta is cooking.

- Cook"al dente".
