1/4 cup olive oil
3 tablespoons butter
3 cups cubed fully cooked ham
1 large sweet red pepper, finely chopped
1 medium onion, chopped
2 garlic cloves, minced
1/4 cup minced fresh parsley
1-1/2 teaspoons minced fresh basil or 1/2 teaspoon dried basil
1-1/2 teaspoons minced fresh oregano or 1/2 teaspoon dried oregano
1 can (14-1/2 ounces) chicken broth
1 tablespoon lemon juice
1/2 cup shredded Parmesan cheese

Steps:

  • Cook pasta according to package directions; drain. Meanwhile, in a large skillet, heat oil and butter over medium-high heat. Add ham, red pepper and onion; cook and stir 4-6 minutes or until ham is browned and vegetables are tender. Add garlic and herbs; cook 1-2 minutes longer., Stir in broth and lemon juice. Bring to a boil. Reduce heat; simmer, uncovered, 10-15 minutes or until liquid is reduced by half. Add pasta; toss to combine. Sprinkle with cheese.

1/2 large yellow onion (sliced)
1/4 teaspoon salt
1/4 teaspoon pepper
1 pound cooked ham (diced)
1 (16 oz) box bow tie pasta
4 cloves garlic (minced or pressed)
1 tablespoon Dijon mustard
1/2 cup white wine (or 1/2 cup water, but wine adds more flavor)
4 1/2 cups water
3/4 teaspoon salt (more or less to tsate)
1 (8 oz) block swiss cheese (shredded)
1/2 cup shredded parmesan

Steps:

  • Melt butter over medium heat in a large stockpot.
  • Once melted, add in onion, salt and pepper and cook for 5-7 minutes, or until tender.
  • Add in ham, pasta, garlic, mustard, wine (if using), water, and additional salt.
  • Bring to a simmer and simmer for 9-13 minutes, stirring regularly, until pasta is al dente.
  • Remove from heat and stir in swiss and parmesan.
  • Taste and re-season, if necessary, and enjoy!

8.8 oz pasta
1 small red bell pepper (or ½ large one)
1 small yellow or green bell pepper (or ½ large one)
1 small carrot
3 green onions
10 cherry tomatoes
1/2 cup canned corn (drained)
1/2 cup frozen peas
3.5 oz cooked ham or bacon cubes
2 eggs
1 cup milk
1 teaspoon Dijon mustard
2 garlic cloves
1 teaspoon dried oregano
½ teaspoon dried thyme
3/4 cup grated cheese (See note)
1 pinch freshly grated nutmeg
1/2 teaspoon fine sea salt (or Kosher, more or less to taste)
1/8 teaspoon black pepper

Steps:

  • Cook the pasta according to the packet's instructions. Drain well. In the meantime, preheat the oven to 200 degrees Celsius/ 400 degrees Fahrenheit.
  • Prepare vegetables: Clean and chop the bell peppers, green onions (reserve 1 tablespoon greens for sprinkling on the pasta bake at the end), carrot, cherry tomatoes into small pieces. Drain the corn. Mix the vegetables, ham or bacon, and pasta in the pot you used to cook the pasta.
  • Make the sauce: Mix the eggs, milk, mustard, grated garlic, and dried herbs. Adjust the taste with salt, pepper, and nutmeg. Pour this mixture over the noodles and vegetables and stir. Mix in half of the cheese. Transfer to a lightly buttered baking dish.
  • Bake: Sprinkle the remaining cheese on top and bake for about 30 minutes until the cheese is golden.
  • Rest: Remove from the oven, let stand for 5 minutes, sprinkle with the remaining green onions and serve with a green salad.

24 asparagus spears, trimmed cut into 2-inch pieces
12 ounces fettuccine
2 teaspoons vegetable oil
1 cup thinly sliced leeks (white and pale green parts only)
1 small yellow bell pepper, cut into matchstick-size strips
2 cups whipping cream
1/2 cup grated Parmesan cheese (about 1 1/2 ounces)
2/3 cup diced country ham
Additional grated Parmesan cheese

Steps:

  • Bring large pot of salted water to boil. Add carrot and cook until crisp-tender, about 4 minutes. Using slotted spoon, transfer carrot to strainer and cool. Add asparagus to boiling water and cook until just tender, about 3 minutes. Using slotted spoon, remove asparagus pieces, reserving tips for garnish. Add pasta to boiling water and cook until just tender but still firm to bite, stirring occasionally. Drain pasta. Return to same pot.
  • Meanwhile, heat oil in heavy large skillet over medium-high heat. Add leeks and bell pepper; sauté 2 minutes. Add cream and simmer until slightly thickened, about 5 minutes. Mix in 1/2 cup grated Parmesan cheese and country ham.
  • Add carrot and asparagus pieces to sauce. Season to taste with salt and pepper. Pour sauce over pasta and toss to coat evenly. Divide pasta among 4 plates. Garnish with asparagus tips. Serve, passing additional Parmesan separately.

  • Bring a large pot of water to a boil. Add a small handful of salt and the pasta. Cook according to package directions (approximately 6-10 minutes) and then drain the pasta. Stir together the cream, thyme, 1/4 teaspoon salt and 1/8 teaspoon pepper. Set the cream mixture aside.
  • While the pasta is cooking, heat a large skillet over medium high heat. Add the broccoli and 2 tablespoons of water and cover with lid. Allow the broccoli steam for 1-2 minutes, until bright green and almost tender. Remove the lid and add the peppers and mushrooms. Cook, stirring occasionally, for 3-4 minutes, letting the vegetables brown a bit between tossing each time. Sprinkle with the remaining salt and pepper. When the vegetables are cooked, but still crisp, remove them to a bowl.
  • Add the ham to the hot skillet and allow it to brown for a minute or so before stirring. When the ham pieces are hot and lightly browned, add the cream to the skillet. Let it simmer and slightly thicken for 1-2 minutes, until it coats the ham pieces. Add the vegetables, toss to coat and then stir in the pasta. Let the sauce cook for another 2-3 minutes as needed, to thoroughly coat the pasta. (If the pasta is too dry, add a small splash of milk until it reaches the desired consistency.)
  • Grate cheese over the top of the pasta and toss to combine and melt the cheese. Serve with additional cheese sprinkled on top, if desired. Enjoy!
