CREAMY GOAT CHEESE SALMON PASTA
Delicate flavor and creamy texture- that's what makes this goat cheese salmon pasta so good!

Steps:
- First, cook spaghetti according to the package instructions.
- Chop garlic and onions very fine and cook in the the skillet over medium heat for 5 minutes. until very fragrant.
- Cube salmon fillet, slice mushrooms and add to the skillet. cook for additional 5-7 minutes, add salt and pepper
- Meanwhile, mix goat cheese and milk in a little bowl with the fork. You want to melt goat cheese as much as possible.
- Turn the heat off. Add cheese mixture to the skillet, stirring constantly.
- Drain your noodles and add to the skillet. Mix together and serve. Garnish with chopped green onions and cherry tomatoes.

Steps:
- 1. Heat 1/4 cup olive oil in heavy large skillet over medium-high heat. Add sliced leeks and sauté until golden and tender, about 10 minutes. Add sliced zucchini and sauté until beginning to soften, about 3 minutes.
- 2. Add 1 cup half and half and crumbled goat cheese and stir until goat cheese melts. Remove sauce from heat. Season sauce with salt and generous amount of pepper.
- 3. Meanwhile, cook fettuccine in large pot of rapidly boiling salted water until pasta is just tender.
- 4. Drain fettuccine and return to pot. Add sauce to fettuccine and toss until thoroughly coated. Transfer fettuccine to large bowl. Top pasta with smoked salmon and serve immediately.

SALMON, GOAT CHEESE, AND LEEK TART
Steps:
- Preheat oven to 350°F. Roll out puff pastry on lightly floured surface to 12-inch square. Line 9-inch-diameter tart pan with removable bottom with pastry, cutting off excess at edge. Using fork, pierce dough all over. Freeze pastry 5 minutes. Cover pastry with aluminum foil. Fill with dried beans or pie weights. Bake pastry 15 minutes. Remove weights and foil. Bake crust until golden, about 5 minutes longer. Cool completely on rack. (Can be prepared 1 day ahead. Cover with plastic wrap. Let stand at room temperature.)
- Preheat oven to 425°F. Heat olive oil in heavy large skillet over medium heat. Add sliced leeks and sauté until soft, about 5 minutes. Add whipping cream and simmer until leek mixture is reduced to 1 1/4 cups, about 5 minutes. Let mixture cool.
- Using wooden spoon, beat herb cheese, goat cheese, and cream cheese in large bowl until well blended. Stir in leek mixture, then lemon juice and thyme. Season mixture to taste with salt and pepper. Stir in eggs 1 at a time, blending well after each addition.
- Spread half of filling over bottom of crust. Top with smoked salmon. Top salmon with remaining filling. Sprinkle with breadcrumbs.
- Bake tart until filling is set, about 30 minutes. Transfer to platter. Let tart cool to room temperature. Cut tart into wedges and serve.
SMOKED SALMON PASTA WITH FRESH TOMATOES, BASIL AND GOAT CHEESE RECIPE

- Heat olive oil in a large sauté pan over medium heat, add bacon and cook until lightly brown. Add leeks and cook until soft. Add wine, turn to high and boil until most of the wine has evaporated. Add tomatoes and butter and lower heat. Add salmon, lemon zest, crushed pepper and capers and turn off heart when warmed. Cook pasta in 2 quarts rapidly boiling salted water until al dente (usually less time than instructions on the box). Drain the pasta and add to sauté pan. Turn heat to high and mix sauce with pasta; remove pan from heat. Add cheese and basil off heat, toss and serve immediately. Vinaigrette with fresh greens and a dry white wine nicely finish this meal
