- Heat oil over medium-high heat in a large skillet. Add mussels and cook for 4 minutes. Stir in wine, garlic, oregano, basil, hot sauce, salt, and pepper; cover and cook until mussels have opened up, 3 to 5 minutes. Discard any mussels that have not opened.

Steps:
- Rinse the mussels and remove beards if necessary, discard any that do not fully close when rinsing (these are dead).
- Bring a large pot of water to a boil, add a pinch of salt, and cook linguine until al dente.
- Meanwhile, heat butter and oil in a large covered saucepan on medium-high heat. Cook garlic and shallots until fragrant, about 1 minute. Add wine, basil, and red pepper flakes to the pan. Cover and simmer mussels in the white wine sauce until fully cooked and shells open up, about 5 minutes. Stir mussels to coat in the sauce.
- When linguine is finished, strain and stir into the mussels and white wine sauce. Now add cream and Parmesan cheese. Simmer for 5-7 minutes, covered, stirring occasionally until the sauce slightly thickens. Serve topped with a pinch of fresh basil, more Parmesan cheese, and 6-7 mussels.

MUSSELS IN BASIL CREAM SAUCE
Steps:
- Scrub and de-beard mussels in cold water.
- Discard any cracked or unopened shells.
- In a large pot melt butter.
- Add shallots and 1 clove chopped garlic and sauté about 3 minutes.
- Add wine and bring to a boil.
- Add mussels and cover until mussels open, about 4 to 6 minutes.
- When mussels are cooked, scoop them out with a slotted spoon.
- Discard any mussels that didn't open.
- Add 1/4 cup of ff half and half to the wine and simmer about 4 minutes.
- In a blender, puree basil, parmesan cheese, olive oil, remaining half & half and garlic.
- Add to cream, season with salt and pepper and simmer another few minutes.
- Pour over mussels.

This is a great pasta recipe with mussels. You can use all mussels or half mussels and half clams. Use as little or as much chile as you can stand.

- Heat 1 tablespoon olive oil in a saucepan over medium heat and cook onion until soft and translucent, 3 to 5 minutes. Add minced garlic and cook until fragrant, about 30 seconds. Add tomato sauce, season with salt, and simmer over low heat until thickened, about 15 minutes.
- Heat 1 tablespoon olive oil in a skillet and cook peeled garlic for 1 minute. Add mussels and cook until they open, about 8 minutes. Transfer mussels to a bowl. Pour in white wine and allow to evaporate. Remove garlic, but save cooking liquid.
- Heat 1 tablespoon olive oil in a separate skillet and cook clams until they open, about 8 minutes. Remove 1/2 of the mussels and 1/2 of the clams from their shells. Discard any unopened shells. Add all mussels and clams, with and without shells, and cooking liquid to the tomato sauce. Season with red pepper flakes and simmer for a few minutes.
- Meanwhile, bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes. Drain and add spaghetti to tomato sauce. Mix in parsley and season with salt and pepper. Serve with Parmesan on the side.

- Put mussels in a large pot along with parsley stems, white wine and broth and cover.
- Bring to a boil and cook, stirring from time to time, until the mussels just open, about 5 minutes.
- Remove with a slotted spoon.
- When cool enough to handle, remove from their shells.
- Strain broth through cheesecloth.
- Cook over high heat until reduced to 1 ½ cups, about 25 minutes.
- In a large frying pan, heat olive oil slightly and add onion.
- Cook, covered, until onion is soft, about 2 minutes.
- Add garlic and mushrooms and cook 2 minutes longer.
- Add red pepper and tomatoes and let stew for another 2 minutes.
- Add reserved broth and bring to a boil.
- Cook fettucine until al dente.
- Add pasta to skillet with sauce, top with basil and parsley and toss to coat with sauce.
- Cook for 1 minute so that pasta absorbs sauce.
- Add reserved mussels and cook another minute for mussels to heat through.

- Place the olive oil, water, white wine and garlic in a large pot over medium heat. Add the mussels and steam according to the technique described in the basic steamed mussels recipe. Remove the mussels from their shells and set aside. Strain the cooking liquid and place in a medium-size saucepan. Cook over medium heat until reduced to 1 cup.
- Meanwhile, bring a large pot of lightly salted water to a boil. Add the fettuccine and cook just until al dente, about 10 minutes. Drain. Add the cream and the mussels to the sauce and cook for 1 minute. Season to taste with salt and pepper.

- Bring a kettle of water to a boil for the pasta.
- Heat a large, heavy skillet. Add the pine nuts and cook, stirring, until lightly toasted. Remove the nuts from the pan and reserve. Lower the heat.
- Melt the butter and lightly saute the garlic. Stir in the cream and cook until the cream has reduced somewhat and is slightly thickened. Stir in the basil and mussels. Season the sauce to taste with salt and pepper. Remove from heat.

- For pasta dough, add flour to the bowl of an electric mixer fitted with a dough hook, and mix, gradually adding eggs, yolks and 20ml water until dough comes together. Turn out onto a lightly floured surface, knead into a ball, then wrap and refrigerate (1 hour).
- To make tagliolini, cut dough into 4 pieces. Working with one piece at a time, flatten dough so it fits through a pasta machine on its widest setting. Laminate dough by rolling dough four times on widest setting, then folding it over and re-rolling. Roll dough, reducing settings notch by notch and keeping edges square until about 1.5mm thick. Strain cooking liquid. Heat half the oil in a frying pan over medium heat. Add garlic and fry until fragrant (1-2 minutes). Add 100ml mussel cooking water and saffron, then cover, reduce heat to low and simmer to infuse saffron (10 minutes). Return mussel meat to pan.
- Cook tagliolini in a large saucepan of boiling salted water until al dente (20-50 seconds). Drain, then add to mussel sauce in pan. Add zest and remaining oil, tossing until sauce emulsifies and coats pasta. Stir through lemon juice and basil, and season to taste. To serve, top with basil leaves, drizzle over oil, and season to taste with ground black pepper.
