Tagliatelle ai funghi (tagliatelle with mushrooms) is a super flavourful veggie pasta dish enriched with a mix of porcini and fresh mushrooms. This easy mushroom tagliatelle recipe makes a super easy vegetarian dinner in less than 30 minutes.

300 g tagliatelle pasta
20 g butter
40 g porcini mushrooms (dry)
200 g shiitake mushrooms
150 g mascarpone
50 ml double cream

Steps:

  • Add the porcini mushrooms to a small bowl and cover them with boiling water. Leave aside.
  • Boil the pasta in salted water until it reaches an almost al dente stage. Reserve 1 cup of water (about 200 ml) before draining.
  • In a frying pan, melt the butter, and add the chopped shiitake mushrooms. Cook for 4-5 minutes until they are tender and lightly browned.
  • In the meantime, drain the porcini mushrooms, chop them coarsely, and add to the pan. Cook for 1 more minute.
  • Add the double cream and continue to stir until it evaporates, about 2 minutes, taking care to scrape the bits on the bottom regularly.
  • Add the mascarpone and half of the pasta water. Cook until the sauce is creamy. Add more water if needed, but keep in mind the sauce should be creamy, not watery.
  • Add the drained pasta and toss it over moderate heat, until it's cooked through (about 2-3 minutes). Add more pasta water if needed.
  • Serve immediately.

150 g dried trofie, or fusilli
2 cloves of garlic
250 g mixed mushrooms
25 g Parmesan cheese
2 heaped tablespoons half-fat crème fraîche

Steps:

  • Cook the pasta in a pan of boiling salted water according to the packet instructions, then drain, reserving a mugful of cooking water.
  • Meanwhile, peel and finely slice the garlic. Place it in a large non-stick frying pan on a medium-high heat with ½ a tablespoon of olive oil, followed 1 minute later by the mushrooms, tearing up any larger ones.
  • Season with sea salt and black pepper, and cook for 8 minutes, or until golden, tossing regularly.
  • Toss the drained pasta into the mushroom pan with a splash of reserved cooking water.
  • Finely grate in most of the Parmesan, stir in the crème fraîche, taste, season to perfection, and dish up, finishing with a final grating of Parmesan.

The deliciousness of pasta with porcini can only be understood by those who have had the pleasure of eating it. It's an easy dish to make as long as you can find good quality porcini. So definitely worth going mushroom hunting for (even in your local supermarket!).

400 g tagliatelle ((14oz) fresh or dried)
500 g fresh or frozen porcini mushrooms (17oz) (or 250 g porcini and 250 g cremini. See recipe notes about using dried porcini)
½ glass white wine
3-4 fresh nepitella (small leafed wild mint sprigs or thyme or parsley)
2-3 tbsp extra virgin olive oil
2 garlic cloves (peeled)
2 tbsp unsalted butter
salt and pepper (to taste and salt for pasta cooking water)
Parmigiano Reggiano (grated or vegetarian parmesan (optional))

Steps:

  • Put water on to boil for the pasta. Add salt once it starts to boil.
  • Clean the fresh mushrooms by cutting off the end of the stalk. It would be better not to rinse with water, given that the fungus absorbs it. You can use a small brush to remove any soil, or a damp cloth.
  • Cut the mushrooms into pieces
  • Fry the peeled garlic cloves in the olive oil, then remove them when golden and add the mushrooms.
  • Cook them for about 3-4 minutes until they start to brown. If using frozen mushrooms add after the fresh ones have browned a little
  • Add wine and nepitella or thyme, increase the heat and cook until the alcohol has evaporated
  • Reduce the heat and add salt and pepper.
  • Continue to cook for about another 10-15 minutes. Lower the heat once mushrooms are cooked through and add the butter. When the butter has melted remove the pan from the heat.
  • Cook the pasta in salted boiling water, remove a glass of the pasta cooking water to be used later and then drain and add the pasta to the pan with the mushrooms and butter.
  • Toss everything together over a low heat. The pasta absorbs liquid very quickly so if it looks too dry, add a little of the pasta cooking water at a time until you get the right creaminess.
  • Serve immediately with grated parmigiano or vegetarian parmesan as required.

1 ounce dried mushrooms (like cremini, porcini; whatever you like)
Salt
1 tablespoon olive oil
3 tablespoons butter
2 teaspoons minced garlic
1 medium yellow onion, chopped
1 pound fresh mushrooms like shiitake or button, sliced (a variety is nice)
1/2 cup dry white wine or mushroom-soaking liquid
1/2 pound cut pasta, like ziti or penne
1/2 cup fresh chopped parsley, plus more for garnish
Fresh-shaved Parmesan (optional)

Steps:

  • Soak the dried mushrooms in very hot water until soft, anywhere from 5 to 15 minutes. When they are tender, remove the dried mushrooms from the soaking liquid with a slotted spoon, reserving the liquid; slice or chop if the pieces are large.
  • Set a large pot of water to boil for the pasta and salt it. Put a large skillet over medium-high heat, and add the olive oil and 2 tablespoons butter. When it is hot, add the garlic and onions; cook, stirring occasionally, until the onions begin to soften, 3 to 5 minutes. Add the fresh mushrooms and dried mushrooms when they're ready, and cook until they give up their liquid and start to brown, at least 15 minutes. Add the white wine or mushroom-soaking liquid to the pot and cook, scraping up any browned bits from the bottom as the liquid starts to bubble.
  • Meanwhile, cook the pasta until tender.
  • Reduce skillet heat to low. Add remaining butter and the parsley, and stir to combine; sprinkle with salt and pepper. When the pasta is done, drain it. Add the pasta to the mushroom mixture, and toss until well combined. If the mixture is dry, add a little pasta water or mushroom-soaking liquid. If you like, garnish with Parmesan and more parsley.

1 large portobello mushrooms, sliced
2 cloves crushed garlic

12 ounces dry fettuccine pasta

Steps:

  • Cook the pasta according to package directions.
  • Meanwhile, saute mushrooms and garlic in olive oil over low heat until tender. Mix in pesto mix, milk, and cream cheese; bring to a boil over medium heat. Reduce heat, and simmer while stirring until cream cheese has melted and mixture has thickened.
  • Drain pasta. Pour sauce over noodles, and toss to coat. Serve.

Olive oil-flavored nonstick cooking spray
1 teaspoon minced garlic
3 tablespoons minced onion
3 cups (20 ounces) button mushrooms, sliced 1/4-inch thick
1 dried shiitake or other dried mushroom
1 ounce brandy
2 cups fat-free low-sodium chicken stock
1/2 cup evaporated skim milk
1 pinch ground cinnamon
1 pinch ground nutmeg
8 ounces whole-wheat linguini
3 1/2 teaspoons arrowroot
1 ounce freshly grated Parmigiano-Reggiano

Steps:

  • Boil 6 quarts of water in a large pot. Once the water is boiling, add 2 tablespoons salt. Preheat the oven to 350 degrees F.
  • Add 3 quick sprays of nonstick cooking spray to a large ovenproof saute pan or small roasting pan over medium heat. Once hot, add the garlic and onions, then cover and cook, stirring occasionally, until they have softened, about 2 minutes. Add 1 1/2 cups of the mushrooms and stir, then cover and cook until the mushrooms begin to steam, about 1 minute. Transfer the pan to the oven and cook, covered, until the mushrooms are soft, about 5 minutes. Grate the dried mushroom into the pan.
  • Add the brandy, chicken stock and evaporated skim milk and bring to a simmer, then cook for about 5 minutes to let the flavors combine. Add the cinnamon and nutmeg.
  • Meanwhile drop the pasta into the boiling water and cook to al dente according to the package instructions.
  • Mix the arrowroot with 1 teaspoon of water, then add to the mushrooms and simmer, gently stirring, until thickened, about 1 minute. Add half the cheese and stir into the sauce. Drain the pasta and add to the sauce along with the remaining sliced mushrooms; cook over high heat, stirring, until the pasta holds the sauce. Divide the pasta among 4 bowls and sprinkle evenly with the remaining cheese.

¼ cup extra virgin olive oil
8 garlic cloves, finely chopped
1½ pounds of assorted mushrooms, cleaned and sliced ¼-inch thick(about 6 cups)
Freshly ground black pepper
8 fresh sage leaves, chopped
1 pound spaghetti
1 cup vegetable stock or pasta cooking water
¼ cup chopped fresh Italian parsley
1 cup freshly grated Parmigiano-Reggiano cheese

Steps:

  • Bring 6 quarts of salted water to a boil in an 8-quart pot over high heat. Heat the olive oil in a large skillet over medium heat. Scatter the garlic over the oil and cook, shaking the pan, until golden, about 2 minutes. Add as many of the mushrooms as will fit comfortably into the skillet. Season lightly with salt and pepper and toss in the sage. Add the remaining mushrooms as the mushrooms in the skillet wilt and make room. Cook, stirring and tossing frequently until the mushrooms are sizzling and brown, about 10 minutes. (If the mushrooms have given off a lot of water during cooking, you'll have to wait for that liquid to boil off before the mushrooms begin to brown.) Stir the spaghetti into the boiling water. Return to a boil, stirring frequently. Cook the pasta, semi-covered, stirring occasionally, until done, about 8 minutes. Add the stock to the browned mushrooms, bring to a boil and lower the heat so the sauce is at a lively simmer. Cook until the liquid is reduced by about half, about 5 minutes. If the skillet is large enough to accommodate the sauce and pasta, fish the pasta out of the boiling water with a large wire skimmer and drop it directly into the sauce in the skillet. If not, drain the pasta, return it to the pot and pour in the sauce. Toss in the parsley, bring the sauce and pasta to a boil, stirring gently to coat the pasta with sauce. Check the seasoning, adding salt and pepper if necessary. Remove the pot from the heat, stir in the cheese and serve immediately in warm bowls.
