Provided by Foodiewife

Number Of Ingredients 18

RED ONION JAM:
Vegetable cooking spray
1 pound ground lamb
1/2 pound ground veal*
2 tablespoons fresh oregano, chopped
2 teaspoon Montreal Steak Seasoning (or season with kosher salt, fresh cracked pepper and garlic powder, to taste)
2 teaspoon fresh oregano, or 1 teaspoon dried
3 to 4 tablespoons fresh parsley, optional
3 tablespoons fig preserves
2 to 3 thin slices feta cheese
4 quality hamburger buns, toasted
Fresh spinach leaves, for garnish
4 cups thinly sliced red onions, about 2 medium
1 teaspoon olive oil
1/4 cup sugar
1/4 cup red wine vinegar
1 to 2 teaspoons chopped fresh thyme
NOTE: Mixing veal, or pork, can tone down the flavor of lamb

Steps:

  • Onion Jam: Sauté onions in hot oil in a large nonstick skillet over medium-high heat 10 minutes. Reduce heat to low; stir in sugar, vinegar, and thyme. Cover and cook 10 minutes or until onion is very tender. Keep warm. Season the meat, add fresh parsley, oregano and lightly mix Gently shape into four patties. Add the feta cheese and top with a patty. Seal so that the cheese will not run out, while grilling. Coat cold cooking grate of grill with vegetable cooking spray, and place on grill. Preheat grill to 350°F to 400°F (medium-high) heat. Cook the burgers about 6 minutes, covered. Flip the burgers over and cook for 6 more minutes. Top each burger with some fig jam and spread evenly. Allow to cook 2 to 4 more minutes or until about 145°F. Rest for a few minutes. Place the burger on the bottom bun, layered with spinach leaves. Top with the red onion jam and top bun. Enjoy!

Provided by USA WEEKEND columnist Pam Anderson

Categories     World Cuisine Recipes     European     Greek

Yield 4

Number Of Ingredients 14

4 large unpeeled garlic cloves
1 ¼ pounds ground lamb
½ cup crumbled feta cheese
¾ teaspoon dried oregano
½ teaspoon salt
½ teaspoon black pepper
½ large cucumber, peeled, grated and squeezed very dry in a clean towel
¾ cup sour cream
1 tablespoon minced fresh mint leaves
1 teaspoon red or rice wine vinegar
1 clove garlic, minced
4 large, thin red onion slices
4 large, thin tomato slices
4 small (4 inch) pita breads

Steps:

  • Set 4 whole garlic cloves in a small skillet over medium-high heat; toast until spotty brown, about 5 minutes. Peel, mince and set aside.
  • Break up lamb in a medium bowl. Sprinkle roasted garlic, feta, oregano, salt and pepper over meat; stir with a fork to combine. Divide into 4 portions. Toss meat back and forth between cupped hands to form a ball. Pat with fingertips to flatten to about 4 inches wide. Refrigerate.
  • Mix cucumber, sour cream, mint, vinegar, 1 minced clove of garlic, and salt and pepper to taste in a small bowl. Refrigerate sauce until ready to serve.
  • Build a hot fire on one side of grill. Replace rack. When coals are covered with white ash, add burgers. Cover and cook, turning only once, until done, about 4 to 5 minutes per side for medium to medium-well burgers.
  • Grill pitas until spotty brown and warm, a minute or so per side. Split crosswise. Spread a couple of tablespoons of sauce over 4 pita halves. Top each with an onion slice, a tomato slice and a burger. Spread a portion of the remaining sauce over each burger. Top with remaining pita halves.

  • Slice or shave brussels sprouts very thin and slice the jalapeño into thin rounds, set aside. Set 2 to 3 cups of water to boil in a kettle or a sauce pan. In a container with a lid, like a mason jar, add vinegar and sugar. Stir to combine.
  • Separate the lamb into 6 even sections, a little over 5 ounces each. Remove about 1/3 of the meat from one section and flatten into a disk. Repeat with the remaining half of the section so you have two lamb patties, one smaller than the other. The easiest way to flatten the lamb into patties is to place it in between parchment paper or plastic wrap and press it this with something heavy - like a cast iron pan or sauté pan.

  • To prepare the mixture for the stuffed hamburgers, add into a large bowl the minced beef along with the rest of the ingredients and mix thoroughly with your hands. If the mixture is too sticky, add some more breadcrumbs (or some water/olive oil if it is too dry) till the mix is solid. It is important to knead the mix for about 10 minutes so that all the ingredients combine and the beef absorbs all the flavours. An easier alternative is to mix with a hand mixer using the dough hook at low speed.
  • Cut the feta cheese into small cubes and sprinkle with some dry oregano. For the stuffed burgers, in addition to feta cheese, you could also add chopped tomatoes and peppers coarsely chopped.
  • Knead the mixture into flat, thin, round burgers. At the center of half of the burgers place some of the stuffing and top them with another half-burger, squeezing on the edges till they stick together. We don’t want that stuffing running out while cooking now, do we?

Transfer 1/2 cup dressing to large bowl; add lamb chops and stir to coat. Let marinate 30 minutes, stirring occasionally. Add grape tomatoes to remaining dressing in medium bowl; toss to coat.
  • Sprinkle lamb chops with salt and pepper. Heat remaining 2 tablespoons olive oil in heavy large skillet over medium-high heat. Sauté lamb chops until browned on both sides and cooked to desired doneness, about 4 minutes per side for medium, depending on thickness. Transfer lamb chops to 4 plates (reserve skillet).
  • Using slotted spoon, transfer tomatoes to same skillet (reserve dressing from tomatoes in bowl). Sauté tomatoes until skins begin to wrinkle, about 2 minutes. Top lamb chops with tomatoes, then feta, red onion, and remaining 1 tablespoon oregano. Drizzle with reserved dressing.
