GREEK FETA TURKEY BURGERS



Greek Feta Turkey Burgers image

These Greek Turkey Burgers with Feta are so juicy, delicious, and easy to make. They come together in under 30 minutes and are also prep-ahead and freezer-friendly! I like to serve them with homemade tzatziki sauce for extra amazing flavor!

1 pound ground turkey ((85% lean, 15% fat))
¼ cup finely chopped Italian parsley
1 tablespoon finely chopped fresh dill
½ teaspoon dried oregano
2 tablespoons very finely diced red onions
2 cloves garlic, minced
¼ cup crumbled feta cheese
½ teaspoon Kosher salt
¼ teaspoon freshly ground black pepper
Olive oil for pan
4 burger buns of your choice (I like sesame or brioche buns)
Tzatziki sauce (homemade or store-bought)
Crumbled feta cheese
Tomato slices
Cucumbers slices
Onion slices
Lettuce

Steps:

  • Make the the tzatziki sauce per the recipe link instructions. You can make this 1-2 days in advance, if desired. You can also use store-bought tzatziki. Set aside.
  • Make the turkey mixture: In a large bowl, combine the ground turkey, parsley, dill, dried oregano, diced red onions, minced garlic, crumbled feta, salt, and pepper. Mix with your hands until evenly combined, but do NOT overmix. Note: overmixed meat will result in dry and tough patties.
  • Form the turkey burger patties: Divide the mixture into 4 equal parts and form ½ inch patties with an indentation in the middle. Make them a bit wider than the buns (about ⅓ or ½ inch larger or so) - this is because burgers tend to shrink while cooking. Tip: an indentation in the center to prevent them from puffing up as they cook. This will also prevent them from shrinking.
  • In a large skillet, heat a few drizzles of olive oil over medium heat. Cook for 4-5 minutes on each side. Tip: Don't press down the burgers with a spatula as they cook - this will remove all the moisture.
  • Build the burgers on the buns along with the toppings. Serve immediately and enjoy! I like to build them in this order: bottom burger bun, lettuce, turkey burger patty, tzatziki, crumbled feta, tomato slices, cucumber slices, onion slices, more tzatziki, top burger bun.

1 lb extra lean ground beef
1 egg
1 teaspoon dried basil
1/2 teaspoon dried oregano
3 tablespoons seasoned dried breadcrumbs
3 tablespoons ketchup
2 teaspoons finely chopped garlic
1/4 cup finely chopped onion
1/4 cup crumble feta cheese
1/4 cup crumbled feta cheese
1/4 cup light cream cheese
3 tablespoons low-fat plain yogurt or 3 tablespoons sour cream
1/2 teaspoon finely chopped garlic
1 tablespoon lemon juice
1 tablespoon water
1/2 teaspoon dried basil

Steps:

  • To make the burgers, combine the ground beef, egg, dried basil and oregano, breadcrumbs, ketchup, garlic, onion and feta in a large bowl and shape into 4 burger patties.
  • Grill or sauté in a pan lightly coated with cooking spray. Cook on 1 side for 7 minutes, then turn over and cook 3 to 5 minutes or just until beef is done.
  • Combine all the sauce ingredients in a food processor and purée until smooth.
  • Serve the burgers with the sauce.

1 red bell pepper
2 ounces crumbled feta cheese
2 tablespoons mayonnaise
2 teaspoons lime juice
1 sprig fresh mint, chopped
1 sprig fresh parsley, chopped
1 pound lean ground beef
6 ounces crumbled feta cheese
8 ounces fresh spinach - rinsed, drained and coarsely chopped
¼ cup bread crumbs
1 egg
1 clove garlic, minced
¼ cup chopped onion
2 sprigs fresh basil, coarsely chopped
3 sprigs fresh mint, coarsely chopped
2 sprigs fresh parsley, coarsely chopped
salt and ground black pepper to taste
4 Kaiser rolls, split and toasted
1 tomato, sliced
4 leaves lettuce

Steps:

  • Preheat the oven's broiler and set the oven rack about 6 inches from the heat source. Line a baking sheet with aluminum foil. Cut the red bell pepper in half from top to bottom; remove the stem, seeds, and ribs; place pepper cut-side-down onto the prepared baking sheet.
  • Cook under the preheated broiler until the skin of the pepper has blackened and blistered, about 5 minutes. Allow the blackened pepper to cool and steam in a paper bag for 5 minutes; peel and dice; set aside.
  • Stir together the 2 ounces feta cheese, mayonnaise, lime juice, the 1 sprig chopped mint, and the 1 sprig chopped parsley in a small bowl; set aside.
  • Preheat an outdoor grill for medium heat, and lightly oil the grate.
  • Place the roasted red pepper, ground beef, feta cheese, spinach, bread crumbs, egg, garlic, onion, basil, the remaining mint, and the remaining parsley in a bowl. Sprinkle with salt and pepper, and mix gently with your hands until evenly combined. Divide the meat mixture to form 4 equal 4 1/2 inch patties.
  • Cook on the preheated grill until the burgers are cooked to your desired degree of doneness, about 4 minutes per side for medium. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C). Serve burgers on warm toasted Kaiser roll with the feta cheese spread, fresh tomatoes, and lettuce.

If you find that the burgers are browning too much before the interior is cooking through, you can put a lid on the pan, or pop the burgers into a hot oven for a few minutes to finish cooking.
  • You may also grill the burgers either on an indoor or outdoor grill. About 3 minutes on each side as well, depending on how intense the heat is. Check for doneness using a thermometer, aiming for 165F.
