All the flavors you love in an order of Buffalo wings baked inside bite-sized meatballs. Perfect for a football game, but don't expect them to last until half-time.

1 pound ground chicken
¼ cup crumbled feta cheese
1 medium egg
¼ cup panko bread crumbs
¼ cup minced carrot
¼ cup minced celery
1 clove garlic, minced
1 tablespoon ranch dressing mix
½ cup Buffalo wing sauce

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Coat a large baking sheet with cooking spray.
  • Combine chicken, feta cheese, egg, bread crumbs, carrot, celery, garlic, and ranch dressing mix in a large bowl. Mix evenly until combined. Form mixture into 1/2-inch meatballs and place on the prepared baking sheet.
  • Bake in the preheated oven for 10 minutes; turn meatballs. Continue baking until no cooked through, about 14 minutes more.
  • Transfer cooked meatballs to a large bowl, add Buffalo wing sauce, and gently toss to combine.

Easy Greek meatballs image

Juicy Greek meatballs made with beef, lamb and feta cheese is a delicious, easy recipe perfect for lunch, dinner or as an appetizer served with yogurt.

500 g (1lb) ground/minced lamb
500 g (1lb) ground/minced beef
1 cup fresh breadcrumbs
2 large eggs
½ cup feta cheese (crumbled)
1 small red onion (finely minced )
2 garlic cloves (crushed )
zest of 1 lemon
3 tsp dried oregano
2 tsp rosemary (finely chopped)
½ cup parsley (finely chopped)
2 tsp salt
1-2 tsp black pepper

Steps:

  • Combine all the ingredients and mix until the ingredients are just combined, taking care not to over mix (this can cause the meatballs to be very dense).
  • To mix the meatballs: With wet hands (this prevents the meat from sticking to your hands), form meatballs of approximately 3cm/1in and place on a chopping board.
  • To fry the meatballs: pre-heat a non-stick frying pan and add a tablespoon of olive oil. Fry the meatballs in batches until golden brown on both sides and cooked through.
  • To bake the meatballs: Pre-heat the oven to 220ºC. Line 2 baking sheets with baking/parchment paper and add the meatballs, keeping some space between them. Drizzle the meatballs with 1-2 tbsp olive oil and place in the oven. Allow to bake, turning over halfway, until golden brown and cooked through (approximately 20-30 minutes).
  • Remove the meatballs from the heat, drizzle with lemon juice (optional) and serve.

1 pound ground beef
1 pound ground pork
¼ cup Italian-seasoned bread crumbs
1 (1 ounce) package onion soup mix
1 egg
1 tablespoon ground black pepper
1 tablespoon Italian seasoning
1 tablespoon minced garlic
½ cup crumbled feta cheese

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Lightly spray a baking sheet with cooking spray.
  • Mix ground beef, ground pork, bread crumbs, onion soup mix, egg, pepper, Italian seasoning, and garlic together in a bowl. Form a 2 to 3-inch meatball around 1 1/2 teaspoons feta cheese. Place stuffed meatballs on the prepared baking sheet.
  • Bake in the preheated oven for 10 minutes. Turn meatballs and continue baking until browned and cooked through, 10 to 20 more minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Remove from oven and transfer meatballs to a separate pan and tent with aluminum foil for 3 to 5 minutes.

Goat Cheese Stuffed Baked Chicken Meatballs image

I didn't think meatballs could get better, but that was until we added creamy goat cheese to the middle of one! These easy baked chicken meatballs come together quickly. When choosing the cheese, goat cheese is an excellent option, but other cheeses will work well. Consider feta, cheddar or mozzarella. If you use a melty cheese (like cheddar or mozzarella), you might want to consider stuffing the cheese into the middle of the meatball and covering it completely with meatball mixture.

1/2 cup (35 grams) bread crumbs, we prefer panko or homemade bread crumbs
2 garlic cloves, minced
1/2 teaspoon fine sea salt
1 teaspoon dried oregano
1 large egg
1/4 cup milk
1/4 cup roasted peppers, finely chopped
1 1/4 pounds ground chicken
2 ounces goat cheese
1 tablespoon olive oil
Warm marinara sauce, optional, see our homemade marinara recipe

Steps:

  • Heat the oven to 425°F and line a baking sheet with parchment paper, foil or a silicone baking mat.
  • In a large bowl, stir the breadcrumbs, garlic, oregano, salt, egg, milk and roasted sweet peppers. Add the ground chicken and lightly mix. Try not to over mix the chicken, over mixing will result in a tougher meatball, so use your fingers or a fork.
  • Form 16 evenly sized meatballs and place onto the prepared baking sheet. Break the goat cheese apart and press one or two small pieces of goat cheese into the top of each meatball. To help with browning, lightly drizzle the meatballs with olive oil.
  • Bake until they are cooked through, the outsides are browned, and they register 165°F in the middle on an instant-read thermometer; 20 to 25 minutes.
