CREAMY WHIPPED FETA DIP



Creamy Whipped Feta Dip image

Similar to htipiti, the salty and tangy Mediterranean mezze spread, this feta dip is fabulous with toasted pita or veggies.

1 8-oz block feta cheese
½ cup sour cream
½ cup mayonnaise, best quality such as Hellman's or Duke's
Zest from 1 lemon (about 1 teaspoon, packed)
1 small clove garlic, chopped
¼ teaspoon dried dill
¼ teaspoon dried oregano
¼ teaspoon dried thyme
⅛ teaspoon salt
¼ teaspoon freshly ground black pepper
⅛ teaspoon crushed red pepper flakes, plus more for serving
Toasted sesame seeds
Extra virgin olive, for drizzling
Toasted pita wedges (or pita chips) and/or sliced vegetables

Steps:

  • Combine all of the ingredients in a food processor or blender and process until smooth. Taste and adjust seasoning, if necessary. Transfer to a serving bowl and use a small spoon to create a swirl on the surface of the dip. Drizzle with olive oil and sprinkle with toasted sesame seeds and crushed red pepper flakes, if using.
  • MAKE AHEAD: This dip can be made up to 3 days ahead of time and stored in a covered container in the refrigerator. It will stiffen up in the fridge to a spread-like consistency, so be sure to let it sit at room temperature for about an hour before serving.
  • To make the toasted pita wedges: Preheat the oven to 350°F. Brush the pita bread on both sides with olive oil and sprinkle with a pinch of salt. Cut into wedges, then arrange on a parchment-lined baking sheet. Bake for about 10 minutes until lightly toasted.
  • To make the toasted sesame seeds: In a small pan over medium heat, cook the sesame seeds, stirring frequently, until golden, a few minutes. Watch carefully as they are quick to burn.

2 pints grape tomatoes
1 tablespoon minced garlic
1/3 cup olive oil
sea salt
cracked black pepper
1/3 cup chopped fresh basil (plus more for serving)
melba toast
bagel chips
pita bread pieces
French bread pieces
sliced vegetables

Steps:

  • Preheat oven to 400 degrees.
  • Add block of feta cheese and grape tomatoes to a 2-1/2 quart casserole dish.
  • Drizzle top of cheese and tomatoes with minced garlic and olive oil.
  • Season generously with salt and pepper.
  • Top dish with 1/3 cup freshly sliced basil.
  • Bake dip for 30 minutes.

1 (8 ounce) block feta cheese
2 tablespoons extra virgin olive oil
2 cloves garlic, roughly chopped
10.5 ounces cherry tomatoes, preferably different colors, halved
Scant ¼ teaspoon salt
⅛ teaspoon pepper
Pinch sugar
1½ tablespoons capers, drained

Steps:

  • Preheat the broiler and set the oven rack in the top position. Place the feta in a small (1-quart) baking dish and set aside.
  • Heat the oil in medium saucepan over medium heat. Add the garlic and cook, stirring constantly, until lightly golden, 1 to 2 minutes. Add the tomatoes, salt, pepper and sugar; cook, stirring frequently, until the tomatoes are softened and starting to burst, 2 to 3 minutes. Remove from the heat and stir in the capers.
  • Scatter the tomatoes around the feta and broil until the feta is softened and browned on top, 3 to 4 minutes (but keep an eye on it as broilers vary greatly.) Serve warm with bread.

4 ounces feta cheese crumbled
2 ounces cream cheese softened
1/4 cup plain Greek yogurt
3 tablespoons olive oil
1-3 cloves garlic grated (** see NOTE below)
1 1/2 tablespoon fresh dill (finely chopped)
3 tablespoons fresh lemon juice
zest from half of one lemon
fresh cracked black pepper to taste
Optional garnishes: chopped pistachios (olives, tomatoes, dill)

Steps:

  • In a medium bowl, using a hand mixer combine the softened cream cheese, yogurt, olive oil, dill, lemon juice and zest. Grate in the garlic and fold in the feta cheese.
  • Season with fresh cracked black pepper to taste then transfer to a serving bowl. Garnish with a light drizzle of olive oil and (optional) chopped pistachios, Kalamata olives or dill.
  • Serve with warm toasted pita or vegetables.
  • ** NOTE: Garlic cloves vary in size. I used 2 cloves in this batch which was about 1 heaping tablespoon of grated garlic. This gave me the strong garlic flavor I was looking for but I would suggest you start small and build the garlic flavor so it's not overwhelming.

l whole head garlic
1 tsp olive oil
4 oz cream cheese (softened)
1/4 cup sour cream
4 oz feta cheese (crumbled)
Salt and pepper. to taste

Steps:

  • Preheat oven to 375F.
  • Cut garlic lengthwise to expose the cloves and drizzle olive oil on top wrap in aluminum foil and garlic cloves become soft and caramelized, about 45 minutes. Remove from heat and let cool. Remove garlic cloves by squeezing out from one end.
  • Combine with cream cheese, sour cream and feta cheese in a food processor or blender and process until smooth. Season with salt and pepper to taste. Serve with assorted veggies and crackers.
