CREAMY WHIPPED FETA DIP
Similar to htipiti, the salty and tangy Mediterranean mezze spread, this feta dip is fabulous with toasted pita or veggies.

Steps:
- Combine all of the ingredients in a food processor or blender and process until smooth. Taste and adjust seasoning, if necessary. Transfer to a serving bowl and use a small spoon to create a swirl on the surface of the dip. Drizzle with olive oil and sprinkle with toasted sesame seeds and crushed red pepper flakes, if using.
- MAKE AHEAD: This dip can be made up to 3 days ahead of time and stored in a covered container in the refrigerator. It will stiffen up in the fridge to a spread-like consistency, so be sure to let it sit at room temperature for about an hour before serving.
- To make the toasted pita wedges: Preheat the oven to 350°F. Brush the pita bread on both sides with olive oil and sprinkle with a pinch of salt. Cut into wedges, then arrange on a parchment-lined baking sheet. Bake for about 10 minutes until lightly toasted.
- To make the toasted sesame seeds: In a small pan over medium heat, cook the sesame seeds, stirring frequently, until golden, a few minutes. Watch carefully as they are quick to burn.

- Preheat oven to 400 degrees.
- Add block of feta cheese and grape tomatoes to a 2-1/2 quart casserole dish.
- Drizzle top of cheese and tomatoes with minced garlic and olive oil.
- Season generously with salt and pepper.
- Top dish with 1/3 cup freshly sliced basil.
- Bake dip for 30 minutes.

- Preheat the broiler and set the oven rack in the top position. Place the feta in a small (1-quart) baking dish and set aside.
- Heat the oil in medium saucepan over medium heat. Add the garlic and cook, stirring constantly, until lightly golden, 1 to 2 minutes. Add the tomatoes, salt, pepper and sugar; cook, stirring frequently, until the tomatoes are softened and starting to burst, 2 to 3 minutes. Remove from the heat and stir in the capers.
- Scatter the tomatoes around the feta and broil until the feta is softened and browned on top, 3 to 4 minutes (but keep an eye on it as broilers vary greatly.) Serve warm with bread.

- In a medium bowl, using a hand mixer combine the softened cream cheese, yogurt, olive oil, dill, lemon juice and zest. Grate in the garlic and fold in the feta cheese.
- Season with fresh cracked black pepper to taste then transfer to a serving bowl. Garnish with a light drizzle of olive oil and (optional) chopped pistachios, Kalamata olives or dill.
- Serve with warm toasted pita or vegetables.
- ** NOTE: Garlic cloves vary in size. I used 2 cloves in this batch which was about 1 heaping tablespoon of grated garlic. This gave me the strong garlic flavor I was looking for but I would suggest you start small and build the garlic flavor so it's not overwhelming.
