FESTIVE CRANBERRY AND DATE BISCOTTI
These Italian biscuits are hard and crunchy because they are twice-cooked ('bis' is Italian for twice and 'cotti' for cooked). This makes them ideal for dipping into dessert wine, coffee or tea. Gifting these delicious cookies by placing them in a pretty, seasonal tin will make them the most well-received treat of the holidays!

Steps:
- Preheat oven to 325 degrees Fahrenheit.
- Line 3 large baking sheets with parchment paper.
- Sift flour, baking powder, and salt into medium bowl.
- Using electric mixer, beat butter and sugar in large bowl to blend well.
- Beat in eggs 1 at a time.
- Mix in orange zest, vanilla, ginger and nutmeg.
- Beat in flour mixture just until blended.
- Stir in cranberries, dates and pistachios (dough will be sticky).
- Turn dough out onto lightly floured surface.
- Gather dough together; divide in half.
- Roll each half into 15-inch-long log (about 1 1/4 inches wide).
- Carefully transfer logs to 1 prepared baking sheet, spacing 3 inches apart.
- Bake logs until almost firm to touch but still pale, about 30 minutes.
- Cool logs on baking sheet 10 minutes.
- Maintain oven temperature.
- Carefully transfer logs still on parchment paper to cutting board.
- Using serrated knife and gentle sawing motion, cut logs crosswise into generous 1/2-inch-thick slices.
- Place slices, one cut side down, on remaining 2 prepared sheets.
- Bake until firm and pale golden, about 10 minutes per side.
- Transfer cookies to racks and cool.
- Stir chocolate in top of double boiler over simmering water until smooth.
- Remove from over water.
- Using tines of fork, drizzle chocolate over biscotti or, alternatively, dip half of biscotti in the melted chocolate.
- Let stand until chocolate sets, about 30 minutes.

CRANBERRY-ALMOND BISCOTTI RECIPE - (3.9/5)

- Preheat the oven to 350°F. Line a heavy large baking sheet with parchment paper. Whisk flour, salt and baking powder in a medium bowl to blend. Using stand mixer (or a hand-held mixer), beat the sugar and butter until fluffy, about 2 minutes. Add the eggs and continue to mix, then add the lemon and orange zest until blended. Add about 1/3 of the flour, on low speed. Add the nuts and cranberries and then add more of the dry ingredients, a little at a time. Form the dough into a long, wide log on the prepared baking sheet. Bake until light golden, about 40 minutes. Note: Because I prefer a chewier texture on the inside, I under-baked mine by about 5 minutes. Cool only until you can touch it. Place the log on the cutting board. Using a sharp, serrated knife, cut the log on a diagonal into 3/4-inch thick slices. Note: I found that cutting straight down, rather than sawing, made for less crumbs or broken slices. Arrange the biscotti, cut side down, on the baking sheet. Bake the biscotti until they are pale golden, about 15 minutes. Transfer the biscotti to a rack and cool completely. Note: I baked mine at 325°F and turned them over after 7 minutes. My biscotti turned the way I prefer them to be-lightly golden, lightly crispy on the outside, and soft on the inside. If you prefer yours to be hard and crunchy, bake at 350°F. Dip in chocolate: Stir the chocolate in a bowl, set over a saucepan of simmering water, until the chocolate melts. To make tempered chocolate, chop about 2 cups of the chocolate into pieces (or chocolate chip Morsels) and place 3/4 of it in a small glass bowl in a microwave for 20 seconds exactly. Stir the chocolate and continue to microwave for 20 seconds at a time, stirring in between, until the chocolate is smooth and shiny. Add the remaining 1/4 of the chocolate and stir until smooth. The chocolate should register 87 to 89°F on a candy thermometer. (per Ina Garten). Submerge half of the biscotti (rather than one end, so you can get chocolate in each bite) into the melted chocolate. Gently shake off the excess chocolate. Place the biscotti on the baking sheet (chocolate side up) for the chocolate to set. Refrigerate until the chocolate is firm, about 35 minutes. Or, in our case, eat them immediately and enjoy! Note: Instead of zest, I used 1/2 teaspoon of Flor Di Sicilia, a few drops of pure orange oil (not extract) and lemon oil, purchased online at King Arthur Flour. Loved it!

- Stir together sugar, butter, brandy, and extracts in a large bowl, then stir in almonds and eggs. Stir in flour, baking powder, and salt until just combined.
- Chill dough, covered, 30 minutes.
- Preheat oven to 350°F with rack in middle.
- Using moistened hands, halve dough and form 2 (16-by 2-inch) loaves on an ungreased large baking sheet.
- Bake until pale golden, about 30 minutes. Carefully transfer loaves to a rack and cool 15 minutes.
- Cut loaves into 3/4-inch slices with a serrated knife.
- Arrange biscotti, with a cut side down, on a clean baking sheet and bake until golden, 20 to 25 minutes. Transfer to rack to cool completely.
CRANBERRY LEMON BISCOTTI RECIPE

- Preheat oven to 350F/176C degrees.
- In a medium bowl, sift together the flour, baking powder, cinnamon, and salt. Set aside.
- In a large bowl, beat the eggs, then add the dried cranberries, sugar, oil, and extracts. Gradually add the flour mixture to the egg mixture and mix together well, until a dough is formed and is slightly stiff, but still soft.
- Turn out dough onto a lightly floured surface and divide into two equal pieces. Form each dough piece into a small rectangular loaf. Place loaves on a large baking sheet lined with parchment paper or a silicon baking mat and bake for 20 minutes. Remove from oven and let cool on sheet for 5 minutes.
- Reduce oven to 300F/148C degrees. Remove slightly cooled biscotti loaves from the pan and cut into 15 (½-3/4") slices on the diagonal with a sharp knife. Place the slices back on the baking sheet and bake for additional 15-20 minutes.
- Remove from oven and transfer biscotti to a wire rack and let cool completely.

- In bread machine pan, place the first 10 ingredients in order suggested by manufacturer. Select dough setting (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed). Just before final kneading (your machine may audibly signal this), add cranberries. , When cycle is completed, turn dough onto a lightly floured surface. Cover and let rest for 15 minutes. Roll or pat to 1/2-in. thickness. Cut with a 2-1/2-in. biscuit cutter. Place in a greased 15x10x1-in. baking pan. Cover and let rise in a warm place until almost doubled, about 40 minutes. , Bake at 375° for 10-15 minutes or until golden brown. For glaze, combine confectioners' sugar and enough orange juice to achieve a glaze consistency. Drizzle over warm biscuits. Sprinkle with chopped cranberries if desired.

- Preheat oven to 350°. In a bowl, cream butter and sugar. Add eggs; beat well. Combine dry ingredients; add to creamed mixture alternately with buttermilk. Stir in cranberries, dates and pecans. Spread in a greased and floured 10-in. tube pan. Bake until a toothpick inserted in the center comes out clean, 60-70 minutes. Cool in pan for 10 minutes. Meanwhile, for glaze, heat orange juice and sugar in a small saucepan until sugar dissolves. Invert cake onto a serving plate. With a toothpick, punch holes in cake. Spoon glaze over cake. Cover and refrigerate for at least 8 hours. If desired, top with sugared cranberries and rosemary.

- Preheat oven to 400 degrees F,& coat a baking sheet with cooking spray.
- Mix flour & baking powder, then stir in corn oil, mixing until coarse crumbs form.
- Stir in milk to form a soft dough, then stir in cranberries.
- With floured hands, form dough into a ball, then press dough onto prepared baking sheet before evenly pressing it into a 6"x6" square.
- Cut dough into 12 biscuits, BUT DO NOT SEPARATE THEM.
- Mix sugar with cinnamon & sprinkle over the cut dough.
- Bake 15-20 minutes or until lightly browned.
- Great served with a flavored butter.
