This refreshing beautiful salad has become a favorite of everyone who's tried it. My bowl always comes home empty when I take this salad to a party or cookout. This recipe is a great way to take advantage of fresh fruit at its best. -Gail Sellers, Savannah, Georgia

1 medium fresh pineapple
3 medium apples (red, yellow and green), cubed
1 small cantaloupe, cubed
1 large firm banana, sliced
1 pint strawberries, halved
1 pint blueberries
4 cups seedless red and green grapes
3 kiwifruit, peeled and sliced
DRESSING:
3 ounces cream cheese, softened
1/2 cup confectioners' sugar
2 teaspoons lemon juice
1 carton (8 ounces) frozen whipped topping, thawed
Additional berries for garnish, optional

Steps:

  • Peel and core pineapple; cut into cubes. Place in a 3- or 4-qt. glass serving bowl. Stir in remaining fruit., In a large bowl, beat cream cheese until fluffy. Gradually add sugar and lemon juice and mix well. Fold in whipped topping. , Spread over fruit. Garnish with additional berries if desired. Store leftovers in the refrigerator.

4 red grapefruits, peeled and cut into bite-size pieces
4 navel oranges, peeled and cut into bite-size pieces
4 kiwifruits, peeled and cut into bite-size pieces, or more to taste
2 Granny Smith apples - peeled, cored, and cut into bite-size pieces
1 cup chopped pineapple
1 pomegranate, seeded
1 lime
3 tablespoons finely chopped fresh mint

Steps:

  • Combine grapefruits, oranges, kiwifruits, apples, and pineapple in a large bowl. Mix in pomegranate seeds. Zest and juice lime over the salad. Sprinkle mint on top; mix once more. Refrigerate for at least 1 hour.

A basic green salad with some very special ingredients- pomegranate seeds, Gorgonzola cheese, toasted pistachios, and a raspberry vinaigrette. I got the inspiration from recipe #109382, but I changed so much that I decided to post a new recipe. I hope you enjoy it as much as we did!

1 tablespoon raspberry vinegar
2 tablespoons extra virgin olive oil
1 tablespoon honey
1/8 teaspoon kosher salt
1/8 teaspoon fresh ground pepper
3 cups romaine lettuce, cut into bite sized pieces
2 tablespoons pomegranate seeds
2 tablespoons roasted pistachios, shells removed
1 tablespoon gorgonzola, crumbled

Steps:

  • Combine the vinegar, oil, honey, salt and pepper in a medium bowl, and whisk to combine. Taste for seasoning, and add more salt or pepper if needed.
  • Place half of the lettuce on each of two salad plates.
  • Scatter the pomegranate seeds, pistachios, and cheese over each plate.
  • Drizzle with the dressing, and serve immediately.
  • Note: dressing can be made ahead, but will probably separate while sitting and need to be mixed again before serving.

2 firm pears, cored and cubed2 crisp apples, cored and cubed4 Clementines, peeled and segmented2 kiwis, peeled and cubed1 pomegranate, seeded1 lemon, juicedOptional: 1 to 2 tbsp honey

Steps:

  • Make sure you read the cooking notes before you start.
  • Step 1 - In a large bowl, combine the cubed pears and apples, and toss immediately with ½ of the lemon juice (so they don't brown). Add the clementine segments, kiwi and half of the pomegranate seeds. Add the rest of the lemon juice and (optionally) the honey. Toss delicately to combine.
  • Step 2 - Serve in individual glasses, cups or bowls, and top each serving with a sprinkle of pomegranate seeds.
