You just might hear a 'whoopie' or two from your guests when you serve this sweet dessert. Each individual pie contains a cookie surprise!

30 each OREO Cookies
1 package (2-layer size) white cake mix with colored sprinkles
1 cup marshmallow creme
1 ½ cups thawed frozen whipped topping

Steps:

  • Place 1 cookie in each of 30 paper-lined muffin cups. Prepare cake batter as directed on package; spoon 1 heaping tablespoon over each cookie. (All batter will not be used.)
  • Bake 14 minutes or until toothpick inserted in centers comes out clean. Cool in pans 5 minutes; remove to wire racks. Cool completely.
  • Microwave marshmallow creme in medium microwaveable bowl on high for 15 seconds. Gradually stir in whipped topping until blended.
  • Remove liners from cupcakes; cut cupcakes horizontally in half. Fill with whipped topping mixture. Serve upside-down.

Made from 2 small chocolate sponge cakes filled with fluffy vanilla icing, whoopie pies have been a lunch-box staple for generations. In this classic recipe, Martha uses a 1-ounce ice cream scoop to form the cookies, then sandwiches them together with 7-minute frosting.

3 1/2 cups all-purpose flour
1 teaspoon salt
1 1/2 cups unsweetened cocoa powder
1 tablespoon baking soda
1 teaspoon baking powder
1 cup (2 sticks) unsalted butter, room temperature
2 cups sugar
2 large eggs
2 cups buttermilk, room temperature
2 teaspoons pure vanilla extract
Simple Seven-Minute Frosting

Steps:

  • Preheat oven to 400 degrees. Sift together flour, salt, cocoa powder, baking soda, and baking powder. Set aside. Line 2 baking pans with Silpats (French nonstick baking mats) or parchment paper. In the bowl of an electric mixer fitted with the paddle attachment, cream butter and sugar until light and fluffy. Add eggs, buttermilk, and vanilla. Beat until well combined. Slowly add dry ingredients. Mix until combined.
  • Using a 1-ounce ice cream scoop, place cookies onto lined baking pans, 12 per pan. Bake for 12 minutes. Remove to a rack to cool. Repeat with remaining batter.
  • Spread 2 tablespoons frosting onto each of 24 cookies. Sandwich together with remaining 24 cookies.

30 vanilla creme-filled chocolate sandwich cookies

1 cup JET-PUFFED Marshmallow Creme
1-1/2 cups thawed COOL WHIP Whipped Topping

Steps:

  • Heat oven to 350ºF.
  • Place 1 cookie in each of 30 paper-lined muffin cups. Prepare cake batter as directed on package; spoon 1 heaping Tbsp. over each cookie. (All batter will not be used.)

2 cups all-purpose flour
2 teaspoons ground cinnamon
1/2 tsp EACH ground ginger, nutmeg, salt
1/4 teaspoon ground cloves
3/4 teaspoon baking soda
3/4 cup packed light brown sugar
8 tablespoon unsalted butter, melted
1/4 cup molasses
3 tablespoons crystallized ginger, finely chopped
1 large egg
1/4 cup buttermilk
1 teaspoon vanilla extract
6 tablespoons unsalted butter, room temperature
1 1/2 cups Powdered sugar
6 oz. cream cheese, cut into 6-8 pieces, softened
1/2 teaspoon vanilla extract
Pinch of salt
Powdered sugar for dusting

Steps:

  • Whisk flour, cinnamon, ground ginger, nutmeg, salt, cloves and baking soda together in a medium bowl. Set aside.
  • Whisk brown sugar, melted butter, molasses and crystallized ginger in separate large bowl until combined. Whisk in egg, buttermilk and vanilla until combined. Add flour mixture and stir with rubber spatula just until dough comes together. Cover bowl with plastic wrap and refrigerate for at least 1 hour up to 24.
  • Preheat oven to 350 degrees F. Line 2 baking sheets with parchment paper or nonstick mat. Roll dough into balls using 1 scant tablespoon. Space balls evenly on prepared sheets, about 2 inches apart. Bake cookies, 1 sheet at a time, until puffed and just set, 11-13 minutes. Let cookies cool on sheet for 5 minutes then transfer to wire rack to cool completely before frosting.
  • Using stand mixer fitted with paddle attachment, beat butter and powdered sugar on medium-high speed until fluffy, about 2 minutes. With mixer running, add cream cheese, 1 piece at a time, and continue to beat until smooth, about 30 seconds. Beat in vanilla extract and pinch of salt as needed.
  • *Spoon or pipe 1 tablespoon frosting evenly onto bottoms (flat sides) of 24 cookies. Top with remaining 24 cookies, bottom sides down. Dust with powdered sugar. (Note, these cookies need the dusting of powdered sugar or they won't taste sweet enough).
  • Store cookies in an airtight container in the refrigerator. Bring to room temperature before serving.
