TURKEY COCKTAIL MEATBALLS WITH ORANGE CRANBERRY GLAZE



Turkey Cocktail Meatballs with Orange Cranberry Glaze image

You can make these ahead and freeze them without the glaze, then the day of the party, defrost them and simply reheat in the sauce.

1 ¼ pounds ground turkey
¼ teaspoon poultry seasoning
½ teaspoon garlic salt
1 teaspoon onion powder
1 teaspoon salt
½ teaspoon ground black pepper
¼ teaspoon Worcestershire sauce
1 pinch cayenne pepper
1 large egg, beaten
¼ cup milk
½ cup plain bread crumbs
1 tablespoon olive oil
1 cup canned jellied cranberry sauce
½ cup orange marmalade
½ cup chicken broth
1 tablespoon minced jalapeno pepper
1 tablespoon minced Fresno pepper
1 pinch salt and ground black pepper to taste

Steps:

  • Mix the turkey, poultry seasoning, garlic salt, onion powder, salt, pepper, Worcestershire sauce, and cayenne pepper together in a bowl. Stir in the egg, milk, and bread crumbs. Cover with plastic and refrigerate for 1 hour.
  • Heat olive oil in skillet over medium heat. Roll the turkey mixture into balls, about one tablespoon each. Place the meatballs in a single layer in the skillet. Brown meatballs on all sides, flipping occasionally. Place browned meatballs on a clean baking sheet. Set aside.
  • Combine cranberry sauce, marmalade, and chicken broth over medium heat in the skillet used to cook the meatballs. Stir in the jalapeno and Fresno peppers, then return meatballs to skillet. Reduce heat to medium-low, and continue to cook until the meatballs are no longer pink in the center and glaze is reduced. Season with salt and pepper.

1 large egg, beaten
1/2 cup dry bread crumbs
1/4 cup finely chopped onion
1/2 teaspoon curry powder
1/4 teaspoon ground ginger
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 teaspoon pepper
1 pound ground turkey
SAUCE:
1 cup honey
1/4 cup Dijon mustard
1/2 teaspoon curry powder
1/2 teaspoon ground ginger
OPTIONAL ADDITIONS:
Fresh basil leaves
Fresh cilantro leaves
Fresh mint leaves
Lime wedges

Steps:

  • Preheat oven to 350°. Combine the first 8 ingredients. Add turkey; mix lightly but thoroughly. Shape into 1-in. balls. Place meatballs on a greased rack in a 15x10-in. baking pan. Bake, uncovered, until cooked through and juices run clear, 20-25 minutes., Meanwhile, combine sauce ingredients in a small saucepan; whisk over medium heat until heated through. Brush meatballs with 1/4 cup sauce; return to oven for 10 minutes. Serve meatballs with remaining sauce for dipping and, if desired, fresh herbs and lime wedges.

  • In your food processor add oats, pulse into a flour-like substance. Remove from food processor and place to the side.
  • In a skillet add diced garlic and onion with coconut oil. Bring to medium heat and add mushrooms. Cook stirring often until browned and ready to eat (10-15 minutes). Transfer to food processor along with 1/2 cup oats, chickpeas, tamari, lemon juice, almond butter, nutritional yeast, cumin, paprika, sea salt and pepper. Blend until smooth and combined.
  • Next add remaining 1/2 cup oats in batches. Blend and check consistency, if too sticky add more oats to the mixture. You should be able to form into rough balls with a spoon (I used 1 cup ground oats in total.). Finally, add in chopped parsley and pulse until combined. Cover falafel mix and chill in fridge for at least one hour. (This will make forming balls easier).
  • Preheat oven to 375F/190C..Line a baking tray with parchment paper and scoop rounded tablespoon amounts of dough onto parchment paper, and gently form balls. (I used a spoon to do this). Bake falafels for 20-25 minutes, or until golden brown. Optional to drizzle with my Quick and Easy Vegan Gravy (recipe link in notes).

2011-02-21 The meatballs themselves were delicious and definitely a 5. The sauce wasn't quite as good, hence the 4 stars. The sauce wasn't bad, but I think something else would go with the meatballs a bit better. The meatballs turned out really moist and flavorful. My only changes were adding a little extra curry and ginger and a clove of garlic. I'll definitely be making them again.
