BUTTERED PEAS AND PEARL ONIONS



Buttered Peas and Pearl Onions image

1 cup chicken broth
1/4 cup (1/2 stick) unsalted butter
3 teaspoons chopped fresh dill
1 (10-ounce) package frozen pearl onions, thawed
1 (10-ounce) package frozen peas, thawed
1 small bunch watercress, washed and trimmed
Kosher salt and freshly ground black pepper

Steps:

  • In a 3-quart saucepan over medium heat, combine the chicken broth, 2 tablespoons of the butter, and 2 teaspoons of the dill. Once the liquid gets hot, add the pearl onions and peas. Cook and stir for 5 minutes until well coated and thickened slightly. Add the watercress, remaining butter, and dill; season with salt and pepper.

1 onion, chopped
2 cloves garlic, minced
16 ounces frozen green peas
1 tablespoon chicken stock
salt and ground black pepper to taste

Steps:

  • Heat olive oil in a skillet over medium heat. Stir in onion; cook until softened, about 5 minutes. Stir in garlic and cook for 1 minute. Add frozen peas, and stir in stock. Season with salt and pepper. Cover, and cook until the peas are tender, about 5 minutes.

1 package (16 ounces) frozen petite peas, thawed
1-1/2 cups fresh snow peas, trimmed and halved
1 cup halved thinly sliced red onion
1 jar (2 ounces) diced pimientos, drained
1/3 cup mayonnaise
1/3 cup sour cream
1 teaspoon minced fresh mint
1/4 teaspoon salt
1/8 teaspoon white pepper
Dash to 1/8 teaspoon ground nutmeg
5 bacon strips, cooked and crumbled

Steps:

  • In a large bowl, combine the peas, onions and pimientos. In a small bowl, combine the mayonnaise, sour cream, mint, salt, pepper and nutmeg. , Pour over pea mixture; toss to coat. Cover and refrigerate for at least 1 hour. Just before serving, stir in the bacon.

1 cup 1% low-fat milk
1 tablespoon cornstarch

  • Shell and wash peas; set aside.
  • Remove outer skin from onions.
  • Combine peas and onions in a large saucepan; add water to cover.

5 tablespoons butter
1 cup cream
salt to taste
ground black pepper to taste
⅔ cup Parmesan cheese
2 eggs

Steps:

  • Saute onions in butter or margarine until transparent. Place in 2-quart baking dish.
  • In a small bowl, beat eggs well. Stir in cream, and season with salt and pepper. Pour mixture over onions, and sprinkle cheese.
  • Bake, uncovered, at 425 degrees F (220 degrees C) for 15 to 20 minutes.

2 pounds shelled fresh peas, blanched 5 minutes, or frozen peas, thawed

Steps:

  • Blanch onions in large saucepan of boiling salted water 5 minutes. Drain, cool, and peel onions.
  • Sauté onions and guanciale in large skillet over medium heat until fat is rendered, guanciale is golden, and onions are brown in spots, about 10 minutes. Add peas; heat through. Season with salt and pepper. Transfer to bowl.
