Even people who aren't sure if they love fish will love these crunchy fillets! Quick and easy!

1 egg
2 tablespoons prepared yellow mustard
½ teaspoon salt
1 ½ cups instant mashed potato flakes
¼ cup oil for frying
4 (6 ounce) fillets sole

Steps:

  • In a shallow dish, whisk together the egg, mustard, and salt; set aside. Place the potato flakes in another shallow dish.
  • Heat oil in a large heavy skillet over medium-high heat.
  • Dip fish fillets in the egg mixture. Dredge the fillets in the potato flakes, making sure to completely coat the fish. For extra crispy, dip into egg and potato flakes again.
  • Fry fish fillets in oil for 3 to 4 minutes on each side, or until golden brown.

Panko breadcrumbs give these simple baked fish fillets a crunchy coating, and cooking them in the oven is easy and quick.

1 1/2 pounds fish fillets (haddock, cod, catfish, pollock, or similar mild white fish)
Kosher salt (to taste)
Freshly ground black pepper (to taste)
1 cup panko breadcrumbs (unseasoned)
2 tablespoons finely chopped parsley
1/4 cup all-purpose flour
2 large eggs (or 1/2 cup egg substitute )
1 teaspoon Cajun seasoning (or Creole)
2 tablespoons mayonnaise
1 lemon (quartered, for serving)
Optional: tartar sauce or rémoulade sauce (for serving)

Steps:

  • Gather the ingredients. Heat the oven to 425 F.
  • Line a rimmed baking sheet with aluminum foil or parchment paper and then spray it with nonstick cooking spray.
  • Cut the fish fillets into 6-ounce portions.
  • Sprinkle both sides of the fish pieces with salt and freshly ground black pepper.
  • In a wide bowl, combine the panko breadcrumbs and parsley.
  • Put the flour in another wide, shallow bowl.
  • In a third bowl, whisk the eggs or egg substitute with the Cajun seasoning and mayonnaise.
  • Dip the fish fillets in the plain flour, coating each piece thoroughly.
  • Dip the flour-coated fillets in the egg mixture and then coat them with the panko crumb mixture, pressing lightly to help the crumbs adhere to the fish. Repeat with the remaining fish.
  • Arrange the crumb-coated fish on the prepared baking sheet.
  • Bake for about 16 to 20 minutes, or until the fish flakes easily with a fork. The time in the oven depends on thickness, so adjust for very thin or very thick fish fillets. Serve the baked fish fillets with the lemon wedges and tartar sauce or rémoulade sauce.

1/2 cup Italian salad dressing
1 1/2 cups cheese crackers (crushed, like Cheez-its)
2 tablespoons butter, melted
paprika

Steps:

  • Preheat oven to 500 degrees.
  • Dip fillets in dressing and dip in cracker crumbs. Place on a well greased cookie sheet; drizzle with butter and sprinkle with paprika.
  • Bake until done (about 8-10 minutes depending on thickness of fillets).

2 6-ounce fish fillets, 1/2 inch thick (flounder, sole or similar fish)
1/2 teaspoon fresh lemon juice
1 cup diced red bell pepper (about 8 ounces)
2 tablespoons snipped chives
Pinch hot red pepper flakes
1 tablespoon chopped fresh cilantro (optional)
4 ounces broccoli florets, cut into very small pieces, about 1 inch in diameter
Kosher salt

Steps:

  • Put one fish fillet in the center of each dinner plate. Sprinkle fish with lemon juice.
  • Stir together red bell pepper, chives, red pepper flakes and cilantro.
  • Place half of the pepper mixture in a stripe down the center of each fillet. Arrange broccoli on either side of fillets. Cover tightly with microwave plastic wrap. Using a rack, cook for 3 minutes, switching plates from top to bottom after 1 minute 30 seconds.
  • Pierce plastic wrap on each plate. Remove wrap. Wipe up liquid if desired. Serve immediately.

I saw beautiful tomatoes in November at the Mexican/Arabic/Polish market and had to use them with the fish I was planning for dinner. I remembered a recipe I had seen while at the dentist's ". This recipe is festive in its appearance and its flavors. I hope you enjoy it as much as we did.

Number Of Ingredients 8

10 -12 ounces fish fillets (2)
1/2 cup chopped cilantro leaf
3 tablespoons olive oil
1/2 lemon, juice of
1 garlic clove, minced
2 medium onions, sliced
1 large tomatoes, chopped (about 8 oz.)
salt & freshly ground black pepper, to taste

Steps:

  • Preheat oven to 350 deg. F.
  • Combine cilantro, garlic, lemon juice and 2 tbl. olive oil. Place in dish or plastic bag, and add fish fillets. Be sure fish is coated in marinade. Marinate for about 30 min., while completing rest of dish.
  • Grease baking dish with 1 tbl. olive oil. Distribute sliced onions on bottom, top with chopped tomato, and sprinkle with salt and freshly ground pepper. Cover with aluminum foil and bake for 30 minutes - onions should be soft.
  • Place fillets on tops of onion/tomatoes and drizzle marinade on top. Sprinkle with salt and pepper. Return to oven and bake until fish is flaky, about 30 minutes.
  • Serve with rice or couscous.
  • Note: Cooking time will depend on thickness of fillet. If you use very thin fillets, you may need to remove them earlier and keep them warm, and return the onion/tomato mix to the oven. Total oven time should be about one hour.

  • Rub the fish with salt, pepper, and calamansi extract. Set aside for 15 minutes.
  • Before frying, dip the fish in beaten eggs and roll in bread crumbs.
  • Then heat oil in a pan.
  • Once the oil is hot, deep fry in a low medium heat until golden brown.
  • Transfer in a serving plate. Eat with your favorite dip.
