VANILLA BERRY PARFAITS



Vanilla Berry Parfaits image

Delicious and easy, this is a fabulous mix of berries and yogurt! If you like, you can make a thin layer of graham crackers or granola in each vanilla/berry layer. That gives it a little more crunch.

2 (8 ounce) containers vanilla yogurt
1 (10 ounce) package frozen mixed berries
2 tablespoons crushed graham crackers
⅛ teaspoon ground nutmeg

Steps:

  • Cover the bottoms of two small glasses with a layer of yogurt. Cover layer with berries. Repeat until both glasses are full, ending with a fruit layer. Sprinkle with graham crackers and nutmeg.

  • Drizzle with honey.

  • In a jar, layer yogurt, granola, and berries. Top with honey (optional).
  • Refrigerate up to 2 days. If you don't want soggy granola, wait til you're ready to eat the parfait to add it.

6 ounces frozen raspberries, thawed
6 ounces frozen blueberries, thawed
6 ounces frozen blackberries, thawed
2 tablespoons sugar
1 tablespoon lemon juice
6 ounces frozen raspberries, thawed
2 tablespoons sugar
1 1/2 cups heavy cream
2 tablespoons sugar

Steps:

  • Berry mixture:
  • Add 6 ounces raspberries, blueberries, blackberries, sugar, and lemon juice to medium bowl. Stir well to incorporate. Allow the berry mixture to sit at room temperature for 30 minutes.
  • Puree:
  • Add 6 ounces of raspberries to a food processor along with 2 tablespoons sugar. Puree until smooth. Remove the raspberry puree to a bowl, cover with plastic wrap, and let chill in the refrigerator.
  • Whipped cream:
  • Whip the heavy cream with a hand mixer until frothy and thick. Add the sugar and continue to beat until medium peaks appear. Gently fold in the raspberry puree until blended.
  • To serve, add a spoonful of the heavy cream to the bottom of an old fashioned glass, top with a spoonful of fruit, and sprinkle with a handful of granola. Repeat the layering once more. Top with a small spoonful of the cream and a few berries on top. Repeat with the remaining glasses and ingredients.

  • Place your diced strawberries, raspberries, blueberries and the sugar into a large bowl and stir until all the fruit is coated in sugar. Leave to one side.
  • Place double cream into a medium sized bowl and whisk until soft peak. You want it to hold its shape, but not be very firm and stiff. Add in the natural yoghurt and vanilla extract and whisk until well combined and slightly thickened.
  • Place 2-3tbsp of the yoghurt mixture into the bottom of an individual sized glass bowl/trifle bowl then top with 2tbsp of the fruit mixture and a few cubes of cake. Repeat the layers until the bowl is full. I repeated the layers twice, with a little extra fruit on top.
  • Repeat for each individual glass until you have exhausted your supplies. Place a sprig of mint into the top of each parfait and serve.

  • Crack the eggs into a medium bowl and beat well. Add the sugar and lemon juice and whisk until sugar is mostly dissolved. Set aside.
  • Fill the bottom of a double boiler pan with an inch of water. Bring to a simmer, then turn the heat down to low. Melt the butter in the top of double boiler. Add the egg mixture and cook, stirring constantly, until smooth and thick enough to coat a metal spoon, about 10 minutes. (If you get any bits of cooked egg, pass the mixture through a fine sieve to remove.) Stir in the lemon zest and pour into a shallow bowl. Chill in the refrigerator until cold.
  • Pour the chilled whipping cream into the bowl of an electric mixer and beat until the cream holds firm peaks (when you lift the whisk or beaters out of the bowl, the peak should hold its shape without drooping; if the cream looks grainy, you’ve gone too far and should start over). Be sure the lemon mixture is completely cool; then, using a rubber spatula, gently fold it into the whipped cream.
  • Place a large spoonful of berries into each glass (leave room for 2 layers of berries and 2 layers of cream) and top with a generous dollop of lemon cream. Top with another layer of berries and lemon cream. Cover with plastic wrap and chill until ready to serve. (Parfaits can be assembled up to this point several hours ahead of time.) Right before serving, top each parfait with a shortbread cookie and sprig of fresh mint.
