The health benefits of fermented foods are well established, and they're tasty to boot! If you're lucky enough to have a bumper crop of beets, try this easy recipe. Once beets are fermented, store in the refrigerator for up to 3 months.

Number Of Ingredients 6

2 pounds beets, peeled and cut into chunks
4 cloves cloves garlic, peeled
6 peppercorns
2 bay leaves
3 cups water, boiled and cooled
1 tablespoon salt

Steps:

  • Distribute beet chunks between two jars with lids. Add 2 cloves garlic, 3 peppercorns, and 1 bay leaf to each jar.
  • Combine water and salt in a bowl to make the brine; stir until salt is completely dissolved. Pour enough brine into the jars to completely cover the beets.
  • Screw on lids and let jars sit at room temperature until foam starts to appear on top, about 1 week. Transfer jars to a cool place (50 degrees F, 10 degrees C) for 2 to 3 days after foam appears. Store in the refrigerator.

Science says beets' anti-cancer chemicals inhibit skin, lung and liver tumors in mice. Beets also may help the heart by lowering artery-damaging homocysteine. You can use canned beets, but freshly cooked ones retain more nutrients.

6 medium beets
1 cup orange juice
2 tablespoons candied ginger
2 tablespoons maple syrup
½ cup walnuts
1 tablespoon white vinegar
1 tablespoon cornstarch

Steps:

  • Scrub beets, leaving on root and 1 inch of stem. Place beets in a large pot and cover with water. Bring to a boil, cover and simmer 45 to 60 minutes or until tender. Drain.
  • Remove skins and cut beets into wedges. In a saucepan, combine remaining ingredients. Bring to a boil; simmer until thickened. Add beets and toss.

Fresh beets (red or golden)- cleaned (peeling optional)
Brine :1 litre water filtered water + 20 grams (approximately 4.5 teaspoons) salt (non-iodized)
Bay leaf
Flavourings (optional): Garlic clove, ginger, fresh herbs
Glass fermentation container
Fermentation weight

Steps:

  • Wash and trim beets of greens. Leave skins on.
  • Cut beets into slices or cubes, as desired.
  • Place beets, bay leaf and optional flavourings in the fermentation container, leaving a 1" space to the top of the neck of the jar.
  • Fill with brine, leaving a 1" space to the top of the neck of the jar
  • Add fermentation weight (if necessary). Close jar.
  • Leave at room temperature (ideally 55-75 F (18-22 C) ) for 2-4 weeks.
  • Transfer to the refrigerator for storage.

4 medium beets, peeled and sliced into 1/8 inch-thick rounds
1 teaspoon brown mustard seeds
1 teaspoon allspice berry
1 teaspoon whole black peppercorn
1 teaspoon whole cloves
2 sticks cinnamon
1 inch piece ginger, peeled and cut into matchsticks
peel of 1 orange, cut off in wide strips
2 tablespoons whey
2 tablespoons honey
3 cups warm filtered water, warmed
kosher salt or sea salt, to taste

Steps:

  • 1. Bring a 4-qt. saucepan of salted water to a boil, and add beets; cook until just tender, about 3 minutes. Drain and transfer to a bowl of ice water, and let sit for 2 minutes to chill. Drain and place beets in a sterilized 1-qt. glass jar along with mustard seeds, allspice berries, peppercorns, cloves, cinnamon, ginger, and orange peel. In a medium bowl, stir together whey, honey, and filtered water; pour over beets until covered. Pour any remaining brine or water into a resealable plastic sandwich bag, and place bag on top of beets to keep them submerged.
  • 2. Drape a clean kitchen towel over the jar, and let it sit at room temperature until beets have cured to your taste, about 1 week. Season after curing with kosher or sea salt to taste, cover jar with lid, and refrigerate for up to 1 week.

  • Toss the beets, ginger, orange peel and fine sea salt together in a large mixing bowl. Stir the ingredients well, and allow them to sit for 20 minutes so that the salt brings out the beet juice.
  • Pack the beets tightly into a 1-quart jar, making sure there's no air pockets. Weigh down the beets, so that the brine covers the vegetables and beets. Seal the jar with an airlock or a very tight lid.
  • Allow the beets to ferment at room temperature at least 2 weeks and up to 1 month, or until pleasantly sour. If you're not using an airlock, burp the jar every 4 to 5 days. After the beets are sour enough for your liking, transfer them to the fridge and consume them within 6 months.
