Steps:
- Preheat the oven to 375 degrees F.
- Remove the stalks from each fennel bulb and discard. Cut the bulbs in half lengthwise through the core. Remove most (but not all) of the core by cutting a V-shaped wedge, leaving the wedges intact. Cut each piece into 2, 3, or 4 wedges, depending on the size of the bulb. Arrange the wedges, cut side up, in a gratin dish just large enough to hold them snugly in a single layer. Pour the chicken stock and wine over the fennel, then sprinkle with 2 teaspoons of salt and 3/4 teaspoon of pepper. Dot with the diced butter. Cover the dish tightly with aluminum foil and bake for 35 to 45 minutes, until the fennel is tender. Remove from the oven and raise the oven temperature to 425 degrees F.
- Meanwhile, make the topping. Combine the melted butter, panko, Parmesan, parsley, zest, 1 teaspoon salt, and 1/2 teaspoon pepper. Sprinkle evenly on top and return to the oven. Bake uncovered for 30 minutes, until the topping is browned. Serve hot or warm.

BLUE CHEESE BAKED FENNEL
Roasted fennel is a great way of serving this vegetable, if you don't fancy it raw. By adding a blue cheese and seed topping, you're turning into so much more than a side dish. Grind the seeds well in a coffee grinder, to form a breadcrumb-like texture. If you don't have a grinder, you can pound them with a pestle & mortar or just chop them. This recipe is delicious with a delicate blue cheese and works well with Dolcelatte or Cambozola. Avoid stronger cheeses such as Danish Blue or Stilton, as they could overpower the flavour of the fennel. Serve with baked potatoes, a side salad or coleslaw.

Steps:
- Pre-heat the oven to 350°F.
- Trim the green tops of the fennel bulbs and cut the bulbs in half.
- Use a little of the oil to grease a baking dish. Arrange the bulbs in the dish, with the flat sides uppermost.
- Use a pastry brush (or clean fingers!) to "baste" the fennel with the remaining oil. This will stop it from burning during roasting.
- Mix the seeds together and grind well.
- Crumble the cheese and mix with the seeds. It will form a kind of paste.
- Smooth ¼ of the paste on top of each fennel half.
- Roast for 30 minutes, until the fennel has softened and the topping is starting to go brown.

- Preheat oven to 400 degree F. In a skillet cook bacon over medium heat until crisp. Remove bacon. Drain, reserving 1 tablespoon drippings in skillet. Crumble bacon; set aside.

- Add fennel and garlic to drippings in skillet. Cook over medium heat about 10 minutes until fennel is just tender and begins to brown, stirring occasionally. Remove from heat. Add mayonnaise, sour cream, blue cheese, bacon, and peppercorns to fennel; mix well. Divide mixture between two 16-ounce oven-proof crocks, souffle dishes, or other oven-proof dishes. In a small bowl combine Parmesan cheese and bread crumbs; top mixture in each crock with Parmesan mixture.
- Bake, uncovered, 15 minutes, or until just heated through and tops are light brown. Do not overbake. Serve with radishes and/or Belgian endive leaves. Makes 6 to 8 servings.

- First, cut the green tops off the fennel (keep the fronds for garnish) cut it into thick slices and break the cauliflower into small florets. You'll need to cut the stalk off the cauliflower first then it's easy to break and cut apart.
- Boil the fennel and cauliflower in a large pot of salted boiling water for 3 minutes then drain and set aside.
- To make the cheese sauce, add the butter to a saucepan over a medium heat, once melted add the flour and stir to a thick paste. Let it cook for 1 minute whilst stirring (this cooks out the floury taste).

- Cook the fennel in salted water until just tender. It is important to get this right: the fennel should not still be crisp, on the other hand it should not be floppy either. Then squeeze out excess water.
- Drain well and arrange in a generously buttered gratin dish. Be generous too, with the pepper mill. Sprinkle on the cheese.
- Put into the oven until the cheese is golden brown (5-10 minutes) and the fennel is bubbling vigorously in buttery juices.
