EASY TAMALE CASSEROLE

My mom liked to make the Hamburger Helper® version of this recipe. When I moved to another state, I could not find it, so I came up with this. Memories of home. My hubby likes for me to spice this up sometimes, so I will use a 14-ounce can of tomatoes and green chiles in it or just use a Mexican-style cornbread mix sometimes.

1 pound ground beef
½ teaspoon salt
½ teaspoon ground black pepper
1 small onion, chopped
2 (15 ounce) cans pinto beans, rinsed and drained
2 (15 ounce) cans crushed tomatoes
1 (15 ounce) can cream-style corn
1 (6 ounce) box cornbread mix
1 egg, lightly beaten
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Heat a cast-iron skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Season beef with salt and pepper.
  • Stir onion into the ground beef; cook and stir for 1 minute and immediately remove skillet from heat.
  • Stir pinto beans and crushed tomatoes into the beef mixture.
  • Beat cream-style corn, cornbread mix, and egg together in a bowl until smooth; spread over the top of the ground beef mixture in the skillet. Sprinkle Cheddar cheese over the corn mixture.
  • Bake in preheated oven until the cheese is melted and the cornbread is set in the middle, about 25 minutes.

1 large egg, lightly beaten
1 can (14-3/4 ounces) cream-style corn
1 package (8-1/2 ounces) cornbread/muffin mix
1 can (4 ounces) chopped green chiles
1/3 cup 2% milk
1/4 cup shredded Mexican cheese blend
TOPPING:
2 cups coarsely shredded cooked chicken
1 can (10 ounces) enchilada sauce
1 teaspoon ground cumin
1/2 teaspoon onion powder
1-3/4 cups shredded Mexican cheese blend
Optional: Chopped green onions, tomatoes and avocado

Steps:

  • Preheat oven to 400°. In a large bowl, combine the first 6 ingredients; stir just until dry ingredients are moistened. Transfer to a greased 13x9-in. baking dish. Bake until light golden brown and a toothpick inserted in center comes out clean, 15-18 minutes., In a large skillet, combine chicken, enchilada sauce, cumin and onion powder; bring to a boil, stirring occasionally. Reduce heat; simmer, uncovered, 5 minutes. Spread over cornbread layer; sprinkle with cheese., Bake until cheese is melted, 10-12 minutes longer. Let stand 10 minutes before serving. If desired, top with green onions, tomatoes and avocado.

If you like Mexican food you'll love this recipe! It's a little extra work but well worth it. Make it as hot or as mild as you like.

10 ounces thawed frozen whole kernel corn
3 tablespoons tomato paste
1 (14 ounce) can chopped tomatoes
3 jalapeno peppers, chopped (optional)
1 cup green pepper, chopped
1 cup onion, chopped
1 1/4 lbs lean ground beef
2 tablespoons lite olive oil
1 cup sliced green olives
1 tablespoon ground cumin
1 1/2 teaspoons salt
1/2 teaspoon allspice
2 teaspoons chili powder
1/2 teaspoon hot pepper sauce
1 tablespoon yellow cornmeal
1 cup all-purpose flour
1 cup yellow cornmeal
3 tablespoons sugar
2 teaspoons baking powder
3 tablespoons butter or 3 tablespoons margarine, melted
3/4 cup 2% low-fat milk
1 large egg, lightly beaten
1/2 cup sharp cheddar cheese, grated
1 jalapeno pepper, finely chopped

Steps:

  • Heat oil in a large skillet.
  • Add onion and green pepper; saute until tender.
  • Add beef and cook until crumbly.
  • Add tomatoes (if the tomatoes are very juicy take off some juice, keep it you can add it if needed), tomato paste, corn, olives, cumin, salt, all spice, chili powder, pepper sauce and cornmeal.
  • Simmer stirring frequently for 30 minutes.
  • Preheat oven to 450°F.
  • Spoon mixture into a 2 1/2 qt casserole.
  • MAKE TAMALE TOPPING----------------.
  • In a large bowl mix, flour cornmeal, sugar and baking powder.
  • Add melted butter, milk, and egg.
  • Stir only until dry ingredients are just moistened.
  • Quickly stir in the jalapeno pepper and cheese.
  • BACK TO THE CASSEROLE-----------.
  • Spoon the topping in large spoonfuls around the edge of the casserole.
  • Bake in 450°F uncovered for 25-30 minutes or until cornmeal topping is cooked through and lightly browned.

Another recipe born by my desire to make things quicker in a casserole, as opposed to forming individual tamales by hand. It's a family favorite. If you can find Masa Harina, use that instead of the corn meal mix. It tastes more like real tamales. It's usually in the international aisle, in 5-pound bags like flour.

FILLING
1 lb ground beef, extra lean
1 can(s) ro-tel diced tomatoes and chilies
2 tsp chili powder
1 pkg sazón azafran (optional)
CRUST
1 c masa harina flour, or 1 1/2 cups cornbread mix
1/2 tsp salt (omit if using corn bread mix)
2 c cool water, or 2 cups boiling for the corn bread mix
2 eggs, beaten
2 Tbsp melted butter or olive oil
milk or buttermilk (amount will vary)
1 c shredded pepper jack cheese
OPTIONS:
1 can(s) black beans or corn (drained and rinsed) may be added to meat mixture. adjust the size of your baking dish to accomodate.
FOR LEFTOVERS CASSEROLE:
1 can(s) chili
1 c crushed fritos corn chips
1 c shredded cheese

Steps:

  • 1. In a heavy skillet, brown ground beef and crumble well. Pour off fat.
  • 2. Stir in Ro-Tel and chili powder (and Sazón Azafran if using). Simmer mixture for 5 minutes; set aside and cool to room temperature.
  • 3. Optional: Stir in 1 can corn or beans, drained well.
  • 4. In medium bowl, stir masa harina and salt SLOWLY into the cool water. (If boiling water and cornbread mix was used, stir and set pan in large bowl of ice water.) Beat until it reaches room temperature (this will be thick) and mixture is smooth. When corn batter has cooled, beat in eggs, melted butter or oil, and enough milk or buttermilk to make a thick batter like cake batter. It should drop from the spoon in dollops, not pour. If too thin, you can stir in a couple tablespoons flour or masa harina to get the thick batter.
  • 5. In a 2-3 quart greased baking dish, spread half the masa harina mixture evenly over bottom. Spoon meat filling evenly over. Top with the shredded cheese.
  • 6. Finally, spoon remaining masa harina evenly over top of all and smooth out with back of spoon.
  • 7. Bake at 375° for about 30 minutes, until masa harina is cooked and lightly browned. Allow to rest 5 minutes before slicing.
  • 8. LEFTOVERS: If you have about half of the casserole left over: Place leftover casserole in a baking dish that fits. Top with one can of chili, 1 cup crushed Fritos corn chips, and 1 cup shredded cheese. Cover with foil and bake at 350° for 30-45 minutes until very hot and cheese is melted. So good!
  • 9. NEW NOTE On the Masa Harina: I had to buy a new brand of Masa Harina because my store stopped carrying the old one. This one was labeled INSTANT Masa (corn) flour for tortillas, tamales, etc. It uses COLD water, not hot. I used the boiling like I always do with regular cornmeal, and got a very thick lump. I had to beat and beat to get it smooth enough to spread. So watch what type of Masa flour you get. Boiling water works fine with cornmeal, but use cold water on the instant masa harina.

1 large onion, chopped
1 green pepper, chopped
1 -2 garlic clove, crushed
1 tablespoon olive oil
1 lb lean ground beef
14 1/2 ounces whole canned tomatoes, drained (OR 3 medium tomatoes, chopped)
1/2 teaspoon salt
1/4 teaspoon pepper
1 teaspoon chili powder
1 cup cornmeal
4 cups water
1 teaspoon salt
1 teaspoon chili powder

Steps:

  • Preheat oven to 350ºF.
  • Sauté the onion, green pepper and garlic in the oil until just tender. Crumble the ground beef into the skillet and brown. Add the tomatoes, salt, pepper and chili powder. Cook over med-low heat for about 20 minutes.
  • While the meat mixture is simmering, bring 3 cups of the water to a boil. Slowly pour the corn meal into the remaining 1 cup of cold water, stirring until smooth. Add the salt and chili powder to the boiling water, and then, stirring constantly, add the cold corn meal mixture to the boiling water. Cook and stir for 5 minutes. Remove from heat and cover.
  • Spray a casserole or baking dish with vegetable cooking spray. Using half of the cornmeal mixture, fill the bottom and sides of the dish. Fill with the meat mixture. You can sprinkle some black olives over the meat, if preferred. Using the remaining half of the cornmeal mixture, cover the top of the pie.
  • Bake at 350°F for 20 minutes or until nicely browned. Or until knife inserted in top crust portion comes out clean.

A co-worker recently gave me this recipe. You can't get much easier than this!!! You can use fresh or frozen tamales. I'm sure you could easily substitute your favorite cheeses and add kernel corn, pinto beans, rotel tomatoes, etc. Simply great with cornbread or salsa biscuits. Can easily be expanded. Enjoy!

1 dozen tamale
1 (6 ounce) can evaporated milk
1 (10 ounce) can soup, Swanson Chicken a la King or 1 (10 ounce) can cream of chicken soup
1 (4 ounce) can green chilies
8 ounces Velveeta Mexican cheese, grated
1/2 medium onion, chopped
1/2 cup cheddar cheese, shredded for top

Steps:

  • Preheat oven to 350°F.
  • Shuck husks off tamales and place, single layer, in a 9x13 baking dish.
  • Mix all other ingredients (except for shredded cheddar cheese for top) until well blended. It will have a very soupy consistency.
  • Pour over tamales and bake for 30 minutes or until bubbling hot.
  • Sprinkle w/ cheddar cheese and bake a few more minutes until melted.
  • Serve hot!

1/8 teaspoon cayenne pepper
1/2 cup cornmeal
1-1/2 pounds lean ground beef (90% lean)
1 large onion, chopped
1 medium green pepper, chopped
2 garlic cloves, minced
1 can (16 ounces) kidney beans, rinsed and drained
1 can (10 ounces) enchilada sauce
1 can (4 ounces) chopped green chilies
1 can (2-1/4 ounces) sliced ripe olives, drained
2 teaspoons chili powder
2 teaspoons minced fresh cilantro
3/4 cup shredded cheddar cheese

Steps:

  • In a small heavy saucepan, bring the water, salt and cayenne to a boil. Reduce heat to a gentle boil; slowly whisk in cornmeal. Cook and stir with a wooden spoon for 15-20 minutes or until polenta is thickened and pulls away cleanly from the sides of the pan., Meanwhile, in a large skillet, cook the beef, onion, green pepper and garlic over medium heat until meat is no longer pink. 6 to 8 green pork tamales (Oaxaca style), husks removed
2 cups cooked, shredded chicken (from 3 lb deli rotisserie chicken)
2 1/2 to 3 cups green salsa, from 2 (10 oz each) jars
2 cups shredded Mozzarella, Oaxaca or Manchego Cheese
1/2 cup sour cream

Steps:

  • Heat oven to 400° F. In a 13x9-inch glass baking dish (3-quart), place the tamales (husked) so the bottom is completely covered (you may have to cut some in half).
  • In medium bowl, mix chicken and salsa; spoon over tamales. Sprinkle with cheese. Cover dish tightly with foil sprayed with cooking spray to avoid sticking.
  • Bake 25 to 35 minutes or until bubbly and cheese is partially melted. Remove from oven; uncover. Drop sour cream by tablespoonfuls over casserole. Garnish with fresh cilantro and avocado slices or finely chopped red onion.
