APPLE AND FEIJOA CRUMBLE RECIPE
Steps:
- Preheat the oven at 180˚C / 356˚F, fan bake.
- Peel and cut apples into thick slices, then steam until just soft.
- Slice feijoas in half, scoop out the flesh and roughly chop.
- Combine feijoas and apples and transfer to a baking dish.
- Combine oats, coconut chips, flaked almonds, chia seeds, cinnamon, maple syrup and coconut oil in a bowl, and use your hands to mix together.
- Spoon crumble mixture over the fruit, even out the surface, cover with tin foil, and bake for 15 minutes, middle rack. Remove the foil and bake a further 5 minutes or so to crisp up the topping.
- Serve hot with a dollop of coconut yoghurt!

Steps:
- Preheat your oven to 180 degrees celsius.
- Grease an oven proof dish with a little butter.
- Roughly chop approximately 2-3 cups of feijoa flesh and pop it in the bottom of the greased oven proof dish.
- Add vanilla and honey to the fruit and mix through.
- In a food processor place the oats, almonds, flour, brown sugar and butter, blitz until you have a nice crumbly topping.
- Top the fruit with the crumble topping, bake for approximately 20 mins until the feijoa crumble is golden and crunchy.
- Serve with a little vanilla ice cream, cream, yoghurt or custard.

- Preheat your oven to 150°C (305°F) on fan bake and grease a 24cm (9 inch) cake tin with coconut oil.
- Put dates in a blender and pour over boiling water to soak.
- Mix all crumble ingredients in a bowl, then pour in coconut oil, stirring with a knife to create a crumbly mixture.
- Sift dry ingredients into another bowl.
- Add remaining wet ingredients except feijoas to the blender and process until smooth, then pour into the dry mix.
- Lift and fold the mixture until almost combined, then add the feijoas and stir through - you want a few flour flecks to remain.
- Dollops large spoonfuls of the mixture into your tin and spread gently to the edges, then sprinkle over the crumble mixture.
- Bake for 45-50 minutes until a skewer comes out relatively dry in the middle.
- Remove and let cool, then remove from the tin and slice.

FEIJOA CRUMBLE
A nice crumble to use when feijoas are plentiful. Other fruits such as rhubarb, apples, peaches, pears or a combination can be used. Goes well with a smooth custard and/or whipped cream.

- Pre heat oven to 160'C.
- Peel & slice feijoas into an ovenproof dish.
- Add the brown sugar and water and stir to combine.
- Combine the butter,flour, baking powder and 2nd measure of sugar.
- Mix until like fine breadcrumbs. (use a food processor if liked).
- Sprinkle topping on fruit and bake for 45-60 minutes, until the fruit is stewed and the topping crisp.
- Serve hot or warm with custard and/or cream.

- Cut apple quarters into thick slices and put into a medium-sized saucepan. Add water, lemon juice, sugar and salt, cover and bring to the boil. Turn down to a simmer and cook for a couple of minutes. Add feijoa pulp to the saucepan, stir then cover and cook for a further 2 minutes until lightly poached. Drain into a colander in the sink and leave while preparing the crumble topping.
- In a deep bowl mix together flour, oats, ground almonds, brown sugar and ginger. Rub in the butter until the mixture is clinging together in clumps. (Try using a grater to grate the cold butter straight into the mixture. I usually grate some then rub it in, grate some more and rub it in until the butter is finished.)
- Transfer the drained fruit to a greased ovenproof dish or individual cocottes. The fruit should fill three quarters of the dish. Sprinkle crumble over the top of the fruit.
- Bake in a preheated oven at 180°C for 20-25 minutes until the crumble is cooked and fruit juices start to bubble up through the crumble. Enjoy with fresh cream, custard or ice cream.

- Preheat the oven to 180°C and grease and line the base of a slice tin around 18cm x 26cm or similar.
- Cream butter and first measure of sugar with an electric beater until pale and fluffy, add vanilla and beat well. Using a spatula, stir in flour and desiccated coconut to form a soft dough. Divide mixture into thirds, then combine two of the quantities to make one large and one small portion.
- Press the larger amount into the base of the lined slice tin and smooth with wet fingertips of the back of a wet spoon. Bake for 10-12 minutes until just starting to turn golden. Add the thread coconut to the remaining dough and mix well, then chill in the fridge for 10 minutes.
- Toss feijoas with the second measure of sugar and cinnamon. Arrange evenly over the partially cooked base, then crumble over the coconut dough.
