CARIBBEAN PORK WITH PINEAPPLE

2 lbs pork tenderloin, cut into 1-inch cubes
salt
1 large lime, juice of
3 teaspoons tabasco habanero sauce, divided
1/2 teaspoon dried oregano leaves
1/4 cup olive oil
1 medium onion, chopped
1 large garlic clove, sliced thin
1 (16 ounce) can diced tomatoes
1 cup beef broth or 1 cup chicken broth
1/4 cup raisins
1 large lime, zest of, grated
2 cups fresh pineapple chunks or 2 cups canned pineapple chunks
1/4 cup rum

Steps:

  • Season pork with salt.
  • Combine lime Juice, 2 teaspoons TABASCO Habanero Sauce and oregano, and drizzle over pork, toss until well mixed.
  • Cover and refrigerate about 1 hour.
  • Heat olive oil in a large skillet over medium heat, add pork and cook until lightly browned, 5 to 7 minutes.
  • Transfer pork to a shallow baking dish.
  • Add onion to skillet with drippings and place over medium heat, cook 5 minutes or until onion is tender.
  • Add garlic and cook 30 seconds.
  • Stir in tomatoes, broth, raisins, lime rind and remaining 1 teaspoon TABASCO Habanero Sauce and cook 5 minutes longer, then pour over pork.
  • Cover pork and bake in a 350 degree oven for 20 minutes.
  • Meanwhile, combine pineapple and rum in a small saucepan over medium-high heat and cook 5 minutes or until liquid is reduced by half.
  • Spoon pineapple over top of pork and bake, uncovered, 5 minutes longer.

1 tablespoon vegetable oil
1 teaspoon ground ginger
1/2 teaspoon ground allspice
1/2 teaspoon red chili flakes
1/2 teaspoon dry mustard
4 pork loin chops (3/4 in. thick, 6 to 8 oz. each)
12 ounces peeled and cored fresh pineapples
1 red onion (8 oz)
2 tablespoons chopped fresh mint leaves
lime wedges

Steps:

  • 1. In a 1-cup glass measure, whisk pineapple juice, soy sauce, brown sugar, oil, ginger, allspice, chile flakes, and dry mustard to blend. Trim fat on pork chops to 1/4 inch; rinse pork and pat dry. Place chops in a 1-gallon zip-lock plastic bag and add all but 1/4 cup juice mixture. Seal bag and turn to coat. Let stand, turning bag occasionally, at least 20 minutes, or chill up to 1 day . 2. Meanwhile, cut pineapple into 1/2-inch-thick slices. Peel onion and cut crosswise into 1/2-inch-thick slices, discarding ends. Place both in a rimmed dish and drizzle evenly with remaining juice mixture. Let stand about 20 minutes, turning slices once. 3. Lay chops (discard marinade), pineapple, and onion on an oiled grill over a solid bed of hot coals or high heat on a gas grill (you can hold your hand at grill level only 2 to 3 seconds); close lid on gas grill. Cook, turning once, until pineapple and onion are browned, 5 to 6 minutes total, and pork is browned on the outside and no longer pink in the center (cut to test), 5 to 7 minutes total. 4. Transfer chops to plates. Garnish with grilled pineapple and onion. Sprinkle with mint; offer lime wedges to squeeze over pork.

ROAST PORK WITH PINEAPPLE

This is one of my adopted recipes, I haven't made it yet, but sounds good. An eye and tongue pleaser for friends and/or family

1 (2 lb) boneless pork loin
1 (20 ounce) can pineapple slices in juice
3/4 cup light corn syrup or 3/4 cup dark corn syrup
1/3 cup soy sauce
1/3 cup thinly sliced green onion
1 1/2 tablespoons minced gingerroot
3 cloves garlic, minced and pressed
1/2 teaspoon dry mustard

Steps:

  • Drain pineapple and reserve ¾ cup juice.
  • In medium bowl, stir together corn syrup, reserved pineapple juice, soy sauce, green onion, ginger, garlic and mustard.
  • Add pork and turn to coat well.
  • Cover and refrigerate at least 6 hours or overnight, turning occasionally.
  • Drain and reserve marinade.
  • Place pork on rack in foil-lined roasting pan.
  • Roast in 375 degrees oven, brushing frequently with reserved marinade about 1-½ hours or until temperature in meat thermometer reaches 170 degrees.
  • PINEAPPLE SAUCE: In small saucepan, bring 1 cup reserved marinade to boil.
  • In small bowl, stir together 1 tbsp cornstarch and 2 tbsp water until smooth and stir into marinade.
  • Stirring, bring to boil over medium heat and boil 1 minute.
  • Add 4 pineapple slices and heat until pineapple is hot and glazed.
  • Arrange remaining pineapple slices on a platter.
  • Place pork roast on pineapple and pour pineapple sauce over pork.
  • Serve warm.
