Steps:
- Preheat oven to 400 degrees F.
- Scrub potatoes.
- rub with a little vegetable oil to make skins softer.
- Pierce skin with fork to allow steam to escape.
- Bake at 400 degrees until tender for about 50 to 60 minutes.
- Cool potatoes for 10 minutes.
- Cut potato in half and carefully scoop out pulp, leaving shells intact.
- In a large bowl, mash potatoes using a potato masher to remove lumps.
- Heat margarine and milk until margarine melts and beat into potatoes.
- Beat in sour cream, salt and pepper.
- Spoon into potato shells and brush with melted butter.
- Top each potato with cheddar cheese and chives.
- Place in oven until cheese melts on top.

- Preheat oven to 400 degrees F. Scrub potato, then pierce several times with a fork. Rub the skin with olive oil and a bit of salt. Place directly on the middle rack of the oven, with a pan underneath to catch any drippings. Bake for 1 to 1-1/2 hours, until cooked through and soft. Let the potato cool slightly, then cut potato in half lengthwise. Use a spoon to scoop out the insides of each half, leaving about 1/4" layer of potato on the skin. Transfer the scooped out potato to a small bowl and mash with a fork. Scramble eggs in a non-stick skillet until almost done but still slightly wet. Transfer the eggs to the bowl with the mashed potato. Add cheese and season to taste with salt and pepper, then mix thoroughly. Spoon the mixture into the shelled out potato skins. Heat potatoes in a microwave on high for 30 seconds to 1 minute, until potatoes are hot, cheese is melted, and eggs are completely cooked. Spoon salsa on top, then serve (with additional salsa on the side, if desired). VARIATIONS: Try adding black beans and spicy cheese, or bacon and sausage, or spinach and bell peppers.

- Prick each potato a few times with a fork, then rub the potato skins lightly with olive oil. Place the potatoes on a baking sheet and cook for 45 minutes to 1 hour, until the potatoes are fully cooked and a knife inserted through the potato meets with no resistance. Transfer the potatoes to a rack and let cool until you can touch them without burning yourself. - The next morning — reheat and serve:Reheat the potatoes in a 350-degree oven for about 15 minutes until warmed through. Place toppings into bowls and arrange buffet-style on a table. Let guests top their own potato boats with their favorite toppings and eat immediately!
