MASHED SWEET POTATOES
Mashed sweet potatoes make for the perfect healthy side dish recipe. It comes together with just a couple simple ingredients and it's perfect for the holidays or any day of the week.

Steps:
- Bring a large pot of water to boil on high heat.
- Peel the sweet potatoes with a hand peeler.
- Dice the potatoes into chunks and place them into the pot. Cook the potatoes for 20-30 minutes, or until the potatoes are fork tender.
- Drain the potatoes over a colander.
- Place the potatoes in a large mixing bowl and mash them with a hand masher or electric beater.
- Then, pour the butter and milk into the mixture and continue mixing until creamy. Season with salt and pepper.
- Scoop the mashed sweet potatoes into a bowl, sprinkle with chopped parsley and serve!

- Place sweet potatoes in a 6-qt. stockpot; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, 10-15 minutes or until tender. Drain; return to pan. Mash potatoes, gradually adding orange juice, brown sugar, syrup and pie spice to reach desired consistency.

EASY CREAMY MASHED SWEET POTATOES
These easy mashed sweet potatoes are on the savory side, but you can add a few extra ingredients for a sweeter version. See our tips in the notes section below for our suggestions. You can simmer, bake, microwave, or use a pressure cooker to cook the sweet potatoes. Our preferred method is to simmer the potatoes since this takes a similar amount of time when using a pressure cooker and when microwaving them and less time than when using an oven. - Peel and cut sweet potatoes into 1-inch cubes. Add to a large pot and add enough water so that they are covered by about one inch of water. Add the salt and bay leaf.
- Bring the water to a boil, reduce the heat to a simmer and cook until the potatoes are easily pierced with a fork, 10 to 12 minutes. Drain well, and then return the potatoes to the pot. Or if you plan to use a food processor, add them directly to the processor bowl. (A food processor makes extra silky mashed sweet potatoes.)
- Add the butter, cinnamon, black pepper, and a pinch of salt. Mash the sweet potatoes with a potato masher until your desired consistency. If using a food processor, pulse until your desired consistency.
- For extra creamy sweet potatoes, stir in sour cream or a splash of heavy cream, milk, or half-and-half. Serve with extra butter and chopped fresh herbs (optional) on top.

- Set a steamer basket in a large saucepan. Fill with enough water to come just below basket; bring to a boil, then reduce to a gentle simmer. Place sweet potatoes in steamer basket and cover; steam until tender, 15 to 25 minutes. Drain, and return to saucepan.

- Wash and peel sweet potatoes and cut into 1" cubes.
- Place the sweet potatoes in a large pot, add 2 teaspoons of salt and cover with hot water.
- Bring to a boil, then simmer for 20-30 minutes, or until the vegetables are very tender and no longer stick to a fork when poked.
- Once cooked, drain the water then return vegetables to the pot. Add in the butter, half and half, brown sugar and about 1 teaspoon of salt (more or less, to taste).
- Mash sweet potatoes with a potato masher or potato ricer, getting out all of the largest chunks and mashing as chunky or smooth as you like. (Note: you may also use a standing mixer with the whisk attachment, but just be sure not to overmix or it will get gummy.)

- Place the cubed sweet potatoes in a large saucepan or Dutch oven and add enough water to cover by about 1″. Add 1 teaspoon of the salt and bring the mixture to a simmer over medium-high heat. Reduce the heat and simmer, uncovered, until the potatoes are tender (in other words, it’s easy to slide a fork in and out), about 9 to 12 minutes.
- Drain well, then return the potatoes to the pot. Mash the sweet potatoes to your desired consistency.
