¾ cup cornstarch, divided
2 lb chicken wings, rinsed and patted dry
¼ cup all-purpose flour
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon cayenne pepper
2 teaspoons baking powder
2 teaspoons salt
1 teaspoon black pepper
⅔ cup water
peanut or vegetable oil, for frying
½ cup buffalo sauce
ranch or blue cheese dip, for serving
1 stalk celery sticks, for serving, cut into sticks

Steps:

  • In a bowl, toss ¼ cup (30 grams) of cornstarch and the chicken wings together until fully coated. Transfer the wings to a wire rack and let rest and dry out for 20 minutes, ideally in the fridge if you have space.
  • In a medium bowl, whisk together the remaining ½ cup of cornstarch, the flour, paprika, garlic powder, cayenne, baking powder, salt, and pepper. Gradually whisk in the water, breaking up any lumps and mixing until smooth. The batter should be slightly runny.
  • Heat the oil in a large pot until it reaches 350°F (180°C).
  • Coat chicken wings in the batter, shaking off any excess. Add the wings to the oil in batches, cooking for 8-10 minutes until golden brown. Transfer the chicken wings wot a wire rack set over a paper towel-lined baking sheet.
  • Transfer the chicken to a clean bowl and drizzle with with the buffalo sauce, tossing to coat. Transfer to a serving plate. Serve with either ranch or blue cheese dressing and celery sticks.

1 bag of Chicken (with first and second wing sections)
Texas Pete

Steps:

  • First, I always wash my chicken. Then I put down a piece of foil, and place a paper towel on top of it to dry my chicken.
  • Always rememeber to bleach down your countertops and sink, you don't want any contamination from the chicken.
  • Now, I'm going season my chicken. I like to use salt, pepper, and since I'm Southern, I also use Texas Pete Hot Sauce.
  • After you finish seasoning your wings, you will want to put oil in your pot. *Do Not Flour Your Chicken*
  • Add your chicken wings to the hot oil, in order to begin frying them.
  • When your wings begin to bubble to the top, remove them from the pot.
  • You will want to butter a pan and then add your wings.
  • Add your choice of barbecue sauce and more hot sauce if desired. Place them in the oven on 350 degrees for about 5 minutes. Your wings are already done, so don't leave them in any longer. They're placed in the oven, in order to get a nice sear on them.
  • When your wings are done, carefully take them out of the oven and allow them to cool.

2 teaspoons kosher salt
Oil for deep-fat frying
BUFFALO WING SAUCE:
3/4 cup Louisiana-style hot sauce
1/4 cup unsalted butter, cubed
2 tablespoons molasses
1/4 teaspoon cayenne pepper
SPICY THAI SAUCE:
1 tablespoon canola oil
1 teaspoon grated fresh gingerroot
1 garlic clove, minced
1 minced Thai chile pepper or 1/4 teaspoon crushed red pepper flakes
1/4 cup packed dark brown sugar
2 tablespoons lime juice
2 tablespoons minced fresh cilantro
1 tablespoon fish sauce
SPICY BARBECUE SAUCE:
3/4 cup barbecue sauce
2 chipotle peppers in adobo sauce, finely chopped
2 tablespoons honey
1 tablespoon cider vinegar
Thinly sliced green onions, optional

Steps:

  • Using a sharp knife, cut through the 2 wing joints; discard wing tips. Pat chicken dry with paper towels. Toss wings with kosher salt. Place on a wire rack in a 15x10x1-in. baking pan. Refrigerate at least 1 hour or overnight., In an electric skillet or deep-fat fryer, heat oil to 375°. Fry wings in batches until skin is crisp and meat is tender, 8-10 minutes. Drain on paper towels., For Buffalo wing sauce, bring hot sauce just to a boil in a small saucepan. Remove from heat; whisk in butter 1 piece at a time. Stir in molasses and cayenne pepper., For Thai sauce, heat oil in a small saucepan over medium heat. Add ginger, garlic and chile pepper; cook and stir until fragrant, about 2 minutes. Stir in brown sugar and lime juice. Bring to a boil; cook until slightly thickened, about 5 minutes.   • In a large bowl, mix the baking powder, garlic powder, salt, and pepper. Add the wings to the bowl and toss to coat. Lay the wings on the baking rack, making sure they do not touch.

4 lb / 2kg chicken wings, wingettes & drumettes ((Note 1))
5 teaspoons baking powder ((NOT baking soda / bi-carb soda) (Note 2))
3/4 teaspoons salt
4 tbsp (60g) unsalted butter, melted
1/2 cup Frank's Original Red Hot Sauce ((Note 3))
1 tbsp brown sugar
1/4 tsp salt
1/2 cup crumbled blue cheese, softened ((I use gorgonzola))
1/2 cup sour cream
1/4 cup mayonnaise
1 clove small garlic, minced
1 - 3 tbsp milk
2 tbsp lemon juice
1/2 tsp salt
Black pepper
Celery sticks
Lots of beer!

Steps:

  • If you plan ahead, lay the wings on a rack on a rimmed baking tray and let them dry uncovered in the fridge overnight. Alternatively, pat them dry with paper towels.
  • Preheat the oven to 250°F/120°C (all oven types). Put one oven shelf in the lower quarter of the oven and one in the top quarter.
  • Line the tray with foil. Spray the rack on the baking tray with oil.
  • Place the wings in a large bowl. Sprinkle over baking powder and salt. Use hands to toss well (or shake in ziplock bag) to coat wings evenly.
  • Place the wings skin side up on the rack (ok if snug, they shrink). Bake on the lower shelf in the oven for 30 minutes.
  • Then move the tray up to the higher shelf and turn the oven up to 425°F / 220°C. Bake for a further 40 to 50 minutes, rotating the tray halfway through. The wings do not need to be turned over.
  • The wings are ready when they are dark golden brown and the skin is very crispy.
  • Toss with Hot Sauce and serve immediately with Blue Cheese Dip and celery sticks. They can be served plain, with a dipping sauce or tossed in sauce. Wings also reheat crispy!
  • Whisk together the Sauce ingredients. Keep warm or reheat just prior to using.
  • Mash the blue cheese with sour cream until smooth (or to your taste).
  • Add remaining ingredients and mix well until combined, using milk to get it to the consistency you want.
  • Store in the fridge until required. Remove from the fridge 15 minutes before serving.

24 chicken wing parts (12 wings separated into 2 pieces)
One 12-ounce bottle cayenne hot pepper sauce, such as Frank's
1 stick butter
Several dashes Worcestershire sauce

Celery sticks, for serving

  • Preheat the oven to 325 degrees F. Heat 3 inches of canola oil in a heavy pot to 375 degrees F.
  • Add half the chicken wing parts to the oil and fry them until they're golden brown and fully cooked, 5 to 7 minutes. Remove and drain on paper towels. Repeat with the other half of the wing parts. In a saucepan, heat the cayenne sauce and butter over medium-low heat. Add the Worcestershire and hot sauce. I found this on another website as a Hooter's Clone. It really is the best I have ever tasted and a frequent request from my guests. The Franks Red Hot makes the difference. Oh, and heat the sauce over VERY LOW heat or it will seperate. If you let the wings sit for a bit they will become moist an you can do the second breading without the egg wash. Enjoy!

1 teaspoon salt
1/2 teaspoon paprika
1/2 teaspoon cayenne pepper
1/2 cup butter (not margarine)
1/2 cup Frank's red hot sauce (near the Tabasco in the store)
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
20 chicken wings or 20 chicken drummettes
1 egg
water

Steps:

  • Combine breading in a bowl or gallon sized ziplock bag, coat chicken with flour mixture. Then dip floured chicken briefly in beaten egg (add a little bit of water to thin slightly) and again dredge in flour. Set aside.
  • Gently melt butter in pan, add Franks Red Hot, pepper and garlic powder. Be careful to keep the heat medium to medium low, and do not boil or butter will separate and the mixture will not stay blended. (If that happens, whisk it real quick and carry on anyway).
  • Fry chicken in a single layer (9-10 drumettes at a time) in deep fryer at 375°F for 12 - 13 minutes (so they are nice and crispy). Drain briefly in fry basket.
  • Pour half of the sauce into a glass container with a tight fitting lid. Dump in the chicken, put on the lid and carefully shake, coating the entire wing with sauce. Remove from container and set on a plate. The breading will absorb the sauce within a minute or so. Serve with celery sticks and either Ranch or Blue Cheese dressing.
  • (Note: When tripling the recipe, only double the sauce and breading. There will be plenty).
