BAGEL WITH A VEGGIE SCHMEAR

I got this recipe from my favorite bagel shop in New York City. Now I make this every time I'm craving a quick and healthy breakfast. I like to add chopped pitted green olives to the schmear. - Julie Merriman, Seattle, Washington

Number Of Ingredients 13

4 ounces fat-free cream cheese
4 ounces fresh goat cheese
1/2 teaspoon grated lime zest
1 tablespoon lime juice
2/3 cup finely chopped cucumber
1/4 cup finely chopped celery
3 tablespoons finely chopped carrot
1 radish, finely chopped
2 tablespoons finely chopped red onion
2 tablespoons thinly sliced fresh basil
4 whole wheat bagels, split and toasted
8 slices tomato
Coarsely ground pepper, optional

Steps:

  • In a bowl, beat cheeses, lime zest and lime juice until blended. Fold in chopped vegetables and basil. Serve on bagels with tomato slices. If desired, sprinkle with pepper.

The crunch of the fresh chopped veggies is great with the creamy cottage cheese. Simple seasonings add tons of flavor. Keep a batch in the fridge for a quick & easy breakfast or snack. It's delicious!

1/4 cup(s) chopped radishes
2 tablespoon(s) chopped red bell pepper
1/2 cup(s) chopped celery
1/4 cup(s) chopped green bell pepper
2 tablespoon(s) chopped fresh parsley
1 clove(s) garlic; minced
1/2 cup(s) minced scallions
1/4 teaspoon(s) black pepper
1/4 teaspoon(s) Mrs. Dash original blend or add amount you want for taste
VARIATIONS BELOW ARE OPTIONAL TO ALTER RECIPE
1/4 cup(s) cooked salmon
1 teaspoon(s) fresh dill or 1/2 teaspoon dried dill
1 teaspoon(s) lemon juice

Steps:

  • Mash the cottage cheese and combine with radishes, red pepper, celery, green pepper, parsley, garlic, scallions, black pepper, and Mrs. Dash.
  • Spread vegetable cheese mixture on 100 calorie bagel thins and broil for 8 to 10 min. Or, you can serve uncooked, cold on a bagel thin.
  • For the bagel, I like to use Thomas multi-grain bagel thins, they are 110 calories including the top and bottom of the bagel. Calories are about 185 to 195 using the bagel thins.
