GREEK YOGURT BROWNIES

Greek Yogurt Brownies are a healthier take on brownies- lower in fat, calories, and carbs! Fudgy and made in one bowl, you won't even taste the yogurt!

Number Of Ingredients 8

1/2 cup chocolate (chopped)
1 cup vanilla yogurt (* See notes)
1/2 cup sugar of choice (white, brown, sugar free, etc. )
3/4 cup all purpose flour (gluten free, if needed)
1/2 cup cocoa powder
1/2 teaspoon baking soda
1/2 cup milk of choice (I used unsweetened almond milk)
1 cup chocolate chips of choice (optional)

Steps:

  • Preheat the oven to 180C/350F. Line an 8 x 8-inch pan with parchment paper, and set aside.
  • In a microwave-safe bowl, add your chopped chocolate. Melt your chocolate. Let sit for 1-2 minutes, before adding your yogurt and sugar. Whisk until smooth and transfer to a large mixing bowl.
  • Add the flour, cocoa powder, and baking soda, and mix until just combined. Add your milk and mix well, until fully incorporated. Fold through your chocolate chips, if using them.
  • Transfer to the lined pan and bake the brownies for 25-30 minutes, or until a skewer comes out just clean. Remove from the oven and let cool in the pan for 10 minutes, before carefully transferring to a wire rack to cool completely.

So rich, so gooey, and so good! These cocoa brownies are almost fat free (there's just a little from the walnuts). Cocoa powder has all of the great taste of chocolate but a lot less saturated fat. 1 3/4 cups sugar
3/4 cup unsweetened cocoa powder
1/2 cup all-purpose flour
1/2 cup whole wheat flour
1/2 teaspoon baking powder
7 egg whites
2 (4 ounce) jars prune baby food or 2/3 cup unsweetened applesauce
1/4 cup buttermilk
2 teaspoons vanilla
2/3 cup chopped walnuts
powdered sugar

Steps:

  • Preheat oven to 350 degrees. Lightly spray a 13" X 9" baking pan with no-stick spray. Set the pan aside.
  • In a large bowl, stir together the sugar, cocoa, all-purpose flour, whole-wheat flour and baking powder. Set the flour mixture aside.
  • In another large bowl, beat the egg whites until foamy. Slowly stir in the prunes or applesauce, buttermilk and vanilla. Add the egg mixture to the flour mixture and beat with an electric mixer until thoroughly combined. Fold in the walnuts.
  • Transfer the batter to the prepared pan. Bake 30 minutes or until the brownies just begin to pull away from the sides of the pan (do not overbake). Cool completely on a wire rack. Lightly sprinkle with the powdered sugar, then cut into bars.

2/3 cup unsweetened applesauce
1 teaspoon vanilla
3/4 cup sugar
1/2 cup flour
1/2 teaspoon baking soda
2 egg whites, lightly beaten
1/4 cup cocoa powder

Steps:

  • Preheat oven to 350°F.
  • Spray a square non-stick baking pan (8 inch x 8 inch) with non-stick cooking spray.
  • Combine the ingredients in a large mixing bowl, blend well. Pour batter into pan and bake 20-30 minutes until cooked. To test if batter is cooked, insert a toothpick. If it comes out clean, brownie is cooked.
  • Remove from oven and let cool for five minutes in pan.
  • Gently remove from pan; place on wire rack and when cool, sprinkle with icing sugar if desired. Cut into eight squares. Enjoy!
