1 1/2 cups whole wheat flour (or all purpose if you prefer)
1/2 teaspoon salt
1 teaspoon baking soda
1/2 cup brown sugar
1/2 cup sugar substitute, granulated (I used splenda granulated)
1 cup sweet potato puree (I over baked a sweet potato and processed it)
1/2 cup applesauce
1/2 cup egg substitute (or 2 eggs)
1/4 cup maple syrup (I used sugar free)
1 teaspoon vanilla
1/2-1 teaspoon cinnamon (optional)
1/2 teaspoon nutmeg (optional)
1/2 teaspoon maple extract (optional)

Steps:

  • Stir together flour, salt, baking soda and sugars.
  • Into a larger bowl wisk sweet potato, appleasuce, maple syrup, and extracts.
  • Combine flour mixture into sweet potato mixtue and mix.
  • Bake in sprayed loaf pan for 60 min at 350 or until toothpick comes out clean.

¾ cup chickpea flour
2 ¼ teaspoons active dry yeast
2 teaspoons xanthan gum
1 teaspoon salt
2 eggs, beaten
3 tablespoons soy nut butter
2 tablespoons honey
1 teaspoon apple cider vinegar
1 cup warm water
⅓ cup almond milk

Steps:

  • Stir brown rice flour, white rice and sweet sorghum flour, chickpea flour, yeast, xanthan gum, and salt together in a large bowl. Stir eggs, soy nut butter, honey, and apple cider vinegar into the flour mixture; add water and almond milk and stir. Transfer mixture to the pan of your bread machine.
  • Select Basic or White Bread setting, and press Start.

Avocado oil or cooking spray of choice
Nut butter
Dairy-free cream cheese (or regular if not dairy-free)
Sliced peaches
Sliced strawberries
Fresh blueberries (blackberries or raspberries)
Sliced figs
Avocado slices
Grape tomatoes (halved)
Sticky liquid sweetener use your favorite: maple syrup but you can sub with any sticky liquid sweetener such as date syrup
Chopped nuts
Chopped fresh herbs / microgreens

Steps:

  • Preheat the oven or 400 degrees Fahrenheit. Line a baking sheet with parchment paper and set aside.
  • Slice the ends off of a medium sweet potato. Place the sweet potato on one flat end. Carefully slice the potato into about ¼ inch - ½ inch even slices.
  • Arrange the sliced sweet potatoes in a single layer on the baking sheet. Lightly spray or brush each slice with oil.Bake in the preheated oven for 8 minutes. Flip the potatoes and bake for 5-8 minutes more, depending on desired doneness.
