I made this up the other night because I ran out of fat free yogurt for a raita. It was great on our grilled Thai chicken, and I'm sure it would be great with grilled fish or shrimp, on grilled veggies, etc. Very refreshing, but with a kick! Add an extra chipotle if you love spicy... If you have fresh tomatoes or cucumber, de-seed them and finely chop and add them in, for a great relish!

16 ounces fat free sour cream
3 garlic cloves
1 large chipotle chile in adobo
1 cup fresh cilantro, loosely packed
2 spring onions
2 teaspoons sea salt
2 teaspoons ground cumin
2 tablespoons lime juice

Steps:

  • Roughly chop all the veggies, from garlic to onions, and add to a mini-chopper (or blender, but my mini-chopper works soooo much better).
  • Add the sour cream, salt, cumin and lime juice.
  • Blend until well mixed, but with a little texture.
  • Cover and chill for at least an hour before serving. Check for seasoning and add ground pepper and salt if needed.

A creamy, tasty chicken salad--but with a bite!!! A simple, but delicious way to put a new spin on chicken salad! A must for Mexican food lovers, although it really wouldn't be classified as "Mexican food." My boyfriend is Mexican & he made this for me. I fell in love all over again!!!

4 -5 boneless skinless chicken breasts
1 vidalia onion, diced
1/2 cup mayonnaise
1/2 cup sour cream
chipotle chile in adobo (canned)
salt
pepper

Steps:

  • Cook chicken breasts in water with salt & pepper until very tender.
  • Shred chicken & put in medium sized bowl. Put the diced onion in with chicken. Set aside.
  • In a blender or food processor mix mayonnaise, sour cream, and between 3/4 to the whole can of chipotle peppers until well blended & smooth. The amount of peppers depend, of course, on taste.
  • Add mayonnaise mixture to shredded chicken & onion. Mix well. If you like more moisture in a "salad" type dish add more mayo and sour cream in equal parts to get the consistency you like.
  • Serve with Low-carb bread, pork rinds, or by itself. This will surely help you drink a healthier amount of water! But don't be afraid, not super hot.

1 1/2 ounces fresh cilantro, chopped
1/4 cup lime juice
salt, to taste
pepper, to taste
2 cups olive oil
3 ounces chipotle peppers
1/2 cup rice vinegar
1/2 garlic clove, chopped
1/2 tablespoon red onion, chopped
1/4 cup lemon juice
1/4 teaspoon ground cumin

Steps:

  • Mix all ingredients except oil in a quart container.
  • With a burr mixer, slowly add oil. Extra oil may be needed depending on consistency desired.
  • If a burr mixer is unavailable, you can use a blender or a robot-coup. Both have a hole on the lid, so you can still gradually add the oil.
  • Salt and pepper are added only to taste.
