FAT FREE COCONUT MILK (FOR RECIPES)

Fat Free Coconut Milk (For Recipes) image

I devised this little concoction several years ago because we love curries and things with coconut milk in them, but OH, the sat-fat in that lovely canned stuff. A no-no for us unless it's a very special occasion. It's worked for me in a lot of curries and even rice dishes, and we can enjoy these foods without the worry. This recipe is a starting point as a substitute for 1 cup canned coconut milk for adding to recipes. (1- 13.5 oz can is just shy of 2 cups, I make the difference up with fat free half&half.) You can adjust the cornstarch and sugar to your taste for thickness and sweetness. Double or change for however much liquid you need in your recipe.

  • Carefully open the refrigerated can, being careful not to disturb the contents and carefully spoon to solidified fat from the top into a clean bowl. Try not to get any of the coconut water/liquid from the bottom of the can into the bowl.
  • With an electric mixer, start beating for about 1 minute. Stop the beater and add in the vanilla and powdered sugar. Continue beating, scraping the sides if necessary until stiff peaks form. Depending on your mixer and the brand of coconut milk you used, this will take another 1 -3 minutes.
  • Either use right away or refrigerate. I've heard this will last a couple of week in the fridge. It has been my experience though that it will last no more than 5 days before it starts breaking down and becoming more liquidy.

  • Greek Yogurt. Greek yogurt makes an excellent 1:1 substitute for coconut milk in curries, soups, and savory dishes of all kinds says cookbook author Jules Clancy.
  • Heavy Cream. This swap obviously doesn’t have the subtle coconut flavor of the real stuff. However, heavy cream does mimic the rich and creamy mouthfeel of coconut milk and is equally versatile in the kitchen.
  • Soy or Almond Milk. Looking for a vegan substitute for coconut milk? No problem. According to chef extraordinaire Nigella Lawson, both soy and almond milk are adequate (albeit slightly thinner) stand-ins for the ingredient.
  • Evaporated Milk. This swap could not be any easier. Per the foodie pros from On the Gas, you can just use evaporated milk as a 1:1 substitute for coconut milk and you’re all set.

  • Pour the coconut milk in a medium saucepan over medium-low heat. Heat gently, stirring occasionally, for 5-7 minutes, until bubbles form around the edges. (Time can vary significantly depending on your pan material - mine was a cast iron saucepan like this.) Do not simmer or boil.
  • Pour the cream mixture into the sterilized jars. Let the jars sit at room temperature for about 20 minutes, until the mixture is below 110 degrees F (43 degrees C), but still above 100 degrees F (37 degrees C). This is critical - a temperature that is too high will kill the probiotic cultures, but one that’s too low won’t activate them.

  • Mix the coconut milk and agar. Pour a little bit of the coconut milk into a medium saucepan and mix in the agar powder. (If you add the agar into the entire amount of milk, the agar will kind of just float on top and won’t mix in properly). Once dissolved, add the rest of the almond milk and mix until well combined.
  • Boil the coconut milk. Heat the coconut milk over medium heat to 190°F/87°C and hold the temperature for 5 minutes. Heat will not only activate the agar, but it will also sterilize the milk and prevent bad bacteria from cultivating.
  • Cool the coconut milk. Remove the coconut milk from the heat and let it cool to 110°F/43°C. If the coconut milk is warmer than 110°F/43°C, it might kill the yogurt bacteria. I like to transfer the coconut milk into a sterilized glass jar, so it cools down faster.
  • Add the sweetener and live cultures. Once the milk reaches 110°F/43°C, you’re safe to add the live cultures. Using sterilized non-metal utensils, stir the sweetener and live cultures into the coconut milk. Metal self-sterilizes, i.e., it kills bacteria, including the good bacteria, so avoid metal bowls and utensils. Make sure the starter culture is well mixed in, so the good bacteria are spread throughout the coconut milk.
