SUGAR FREE CARAMEL POPCORN

Enjoy a nice low-cal and low-carb snack! This sugar free caramel popcorn is perfect for a late night crunch!

Number Of Ingredients 4

1/2 cup Swerve sweetener
3 tbsp butter (unsalted is best)
1/4 cup heavy cream
6 cups SKINNY popcorn or airpopped popcorn

Steps:

  • Let's first make the caramel.. You will need a deep pot for this!! Slowly heat up your Swerve sweetener on medium-low.. stirring so it doesn't burn. It will slowly melt and caramelize. It will also smoke a little, so dont be alarmed. Once you have a deep amber colour, time to add in the butter. When you toss in the butter, you'll notice that it will bubble up. That's normal and why we used a deep pot for it. Stir until the butter has melted. Pour in your cream., Again, the mixture will bubble up even more and then slowly go back down. All normal! Stir for an additional 2-3 minutes then take the mix off the heat. Let it cool down.. Stir occassionally to get rid any crystalization of the Swerve. Once gets near room temp, you'll notice it has gotten thicker and has the consistency of caramel sauce! Now is the time to pour the mix on top of the popcorn. Mix it thoroughly but don't worry if you still have parts that aren't caramel. Put the popcorn onto a cookie sheet lined with parchment paper and bake at 225 for roughly 45 minutes. Mix it often, so that the caramel transfers to more of the popcorn! Take it out and let it cool and you will have nice, crunchy caramel popcorn!

With just a few ingredients, you can make your own caramel popcorn at home! Learn how to make this sweet movie snack the easy way, no corn syrup required.

1 cup unsalted butter
1 cup packed light brown sugar
1/2 teaspoon fine sea salt
2 teaspoons vanilla extract
1/2 teaspoon baking soda
15 cups plain popped popcorn (about 1/2 cup unpopped kernels worth)

Steps:

  • Line two baking sheets with parchment paper or a silicone baking mat. Set aside.
  • In a medium saucepan over medium heat, combine the butter, brown sugar, and salt.
  • While stirring continuously, bring the butter mixture to a boil. Boil for 4 minutes, stirring occasionally to prevent scorching. Add in the vanilla extract, stirring well to combine. At this point, the caramel should be the hard crack stage (a candy thermometer should read 300°F, or see notes if you don't have a candy thermometer).
  • Add in the baking soda and the boil for 1 more minute. The mixture should get very fluffy and foamy. Remove from heat.
  • Place the popped popcorn in a very large bowl, and then drizzle the caramel sauce over top. Use a spoon to fold the popcorn until all kernels are covered.
  • Pour the caramel corn out onto the prepared baking sheets, and let cool completely.

Yummy caramel popcorn with no added fat! You can adjust the amounts of brown sugar and syrup to suit your taste- the more syrup, the thinner the sauce and vice versa. We prefer more brown sugar than syrup as this helps the popcorn stick together when cool.

Steps:

  • Spray 2 large popcorn bowls with Pam.
  • Pop popcorn in an air popper and split evenly into the greased bowls.
  • Heat brown sugar and maple syrup on high in a small pot, stirring constantly until boiling.
  • Pour sauce evenly over the two bowls of popcorn.
  • Stir well and salt to taste!

  • Bake in the oven at 350 degrees for 20 minutes. Let cool before eating! There’s a happy medium of serving temperature here, folks. If it’s too cold, it might be a bit harder than would be ideal. If it’s too hot and you exhibit no patience, you will have no wear a rather striking shade of lipstick for the rest of the week to hide the burns. Consider yourself warned. Best if eaten the day it’s made, but will keep in a covered container in the fridge for up to a week.
