BANANA CHOCOLATE CHIP GRANOLA BARS
These Banana Chocolate Chip Granola Bars are lightly sweetened with ripe bananas and honey. They are quick and easy to make and perfect for breakfast or snack time!

- Preheat oven to 350 degrees F. Spray a 9×13-inch baking dish with cooking spray, line with parchment, and spray the parchment.
- Stir the oats, white whole wheat flour, cinnamon, and salt together in a large bowl.
- Place the coconut oil in a microwave-safe liquid measuring cup or bowl. Heat in the microwave until melted. Whisk in the honey, mashed banana, and vanilla. Whisk in the egg.
- Pour the wet ingredients into the bowl with the dry and stir until well combined. Stir in the mini chocolate chips. Spread the mixture evenly into the prepared pan. Lay a piece of parchment on top (to prevent the mixture from sticking to your hands) and firmly press the mixture down into the pan; remove and discard the piece of parchment.
- Bake in the preheated oven for 32-35 minutes, until set and lightly golden. Let cool completely and then refrigerate for at least 2 hours before cutting into bars. (Use the parchment lining to help you gently transfer the bars from the baking dish to a cutting board before cutting.)
- Store granola bars in an airtight container in the refrigerator for up to 1 week or in the freezer for up to 2 months.

LOW FAT CHEWY GRANOLA BARS WITH PECANS, RAISINS AND CHOCOLATE CHIPS
Steps:
- Preheat oven to 350°.
- Line a 9 x 9 baking pan with 2 long pieces of parchment paper, long enough to go up over the sides for easy removal.
- Lightly spray with oil.
- In a medium bowl, whisk together oat flour, baking powder, baking soda, salt and cinnamon.
- In a large bowl, with a mixer cream together the butter and the sugar on medium speed.
- Add the egg followed by the honey, applesauce and vanilla extract.
- Working by hand, stir in the flour mixture and the oats until just combined and no streaks of flour remain; stir in the chocolate chips, raisins and nuts.
- Spoon oats onto prepared baking dish, flattening to make even.
- Bake for about 23-25 minutes, or until light brown at the edges. They will seem soft and undercooked, but once they cool they will set completely.
- Cool completely on a wire rack then refrigerate before cutting.
- This will help them hold together better.
- To cut use a long serrated bread knife and cut in a sawing motion.

- In a non-stick pan, place the oats and bake at 325 degrees for 10-15 minutes to toast to a golden brown. Transfer the oats to a large bowl, add the cereal and raisins, and toss well to combine.
- In a blender or food processor, place the dates and water; allow to sit 5 minutes, and then process for 2-3 minutes or until smooth. Transfer the pureed dates to a saucepan and add the apple juice concentrate, maple syrup, and cinnamon. Bring the mixture to a boil, reduce heat, and simmer for 2 minutes.
- Remove from heat and stir in the extracts. Pour the date mixture over the oat mixture and toss well to combine. Pour the mixture into the same pan used to toast the oats, and place a piece of waxed paper on top of the mixture.
- Use a can on top of the waxed paper to roll out the mixture evenly, and compress it firmly. Bake at 325 degrees for 30-40 minutes or until lightly browned. It will seem soft but will harden as it cools.
- Allow it to cool for 10 minutes, cut into 24 bars, and transfer to a rack to cool completely. Wrap them individually in aluminum foil, waxed paper, or plastic cling film, or store in an airtight container.
